Claims (12)
1. Förfarande för att minska kolesterolmängden i äggula genom att behandla den med en ätbar olja sä, ett en finfördelad dispersion uppstär, sora därefter centrifugeras för att ätskilja äggulsfasen frhn oljefasen, kännetecknat därav, att äggulan behandlas i form av en destabi1iserad emulsion, som erhällits genom att sänka en färsk fuktig äggulas pH tili ett värde 3.
2. Förfarande enligt patentkrav 1, kännetecknat därav, att äggulans pH sänkes tili pH-värden 4-6.
3. Förfarande enligt patentkrav 1, kännetecknat därav, att äggulans pH sänkes genom att tillsätta mineralsyra, vars styrka är 10 - 20 %.
4. Förfarande enligt patentkrav 1, kännetecknat därav, att den destabi1iserade emulsionen behandlas med ätbar olja i en mängd av 3-5 gSnger sin vikt.
5. Förfarande enligt patentkrav 1, kännetecknat därav, att den ätbara oljan innehäller minst 75 % fleromättade komponenter.
6. Förfarande enligt patentkrav 1, kännetecknat därav, att den destabiliserade äggulans och den ätbara oljans finfördelade dispersion bildas genom homogenisering.
7. Förfarande enligt patentkrav 1, kännetecknat därav, att äggulans och den ätbara oljans finfördelade dispersion centrifugeras med en omloppshastighet av 2000 - 4000 varv/min. Il
