Abstract

Procedimiento de fabricación de una pasta hojaldrada, que consiste en mezclar en una pasta harina, agua, materia grasa, sal en formar un pedazo de pasta que comprende una pluralidad de hojas de pasta superpuestas con intercalación de capas de materia grasa, caracterizados porque se forma dicho pedazo de pasta incorporado a la pasta materia grasa en forma de parcelas sólidas repartidas, y después sometiendo la pasta a una alternancia de laminados en forma de hoja, para laminar progresivamente las parcelas de materia grasa, y de apilamientos de varios espesores de la mencionada hoja, para llevar progresivamente el pedazo de pasta a una estructura donde las parcelas de materia grasa laminadas alternan con capas de pasta.
