Abstract

Un procedimiento mejorado para separar antocianinas a partir de materiales macromoleculares tales como proteínas, taninos, pectinas y complejos de los mismos, en el que la mejora comprende ultrafiltrar una mezcla de antocianinas monoméricas discretas y dichos materiales macromoleculares, a través de una membrana que deja pasar dichas antocianinas y que retiene los citados materiales macromoleculares.
