Abstract

A method of preparing a fruit fibrous product, substantially free of crystalline components comprising heating a syrup including glycerol, adding a firm fibrous substance, selected from the class consisting of the skin of citrus fruits, pomes, pineapples, cranberry and coconut said syrup to form a mixture of syrup and fruit, reduce the water content of said mixture to 16% or less, subjecting said mixture to hydrodistillation under vacuum and separating said fruit product from said syrup.
