Abstract

Método para producir hidrolizados de proteína y/o fracciones de la misma, que comprende las etapas de: a. proporcionar una mezcla de peptidasas obtenida de micelios de Basidiomicetos cultivados en un cultivo anegado, b. añadir la mezcla a un sustrato que contenga dicha proteína y/o fracciones de la misma y c. realizar la hidrólisis de dicha proteína y/o fracciones de la misma para obtener dichos hidrolizados; en el que la mezcla de peptidasas comprende al menos una peptidasa que comprende la secuencia proporcionada en las SEC ID Nos 1, 2, 3 o 4.
