Claims (5)

1. Un cultivo microbiológicamente puro de Sphingomonas elodea que es deficiente en arilsulfatasa y que comprende una deleción de todo parte de su gen de arilsulfatasa, una inserción en su gen de arilsulfatasa o una mutación inactivante en su gen de arilsulfatasa.
2. Un cultivo microbiológicamente puro de Sphingomonas elodea que es deficiente en \beta-glucoronidasa y que comprende una deleción de todo parte de su gen de \beta-glucoronidasa, una inserción en su gen de \beta-glucoronidasa o una mutación inactivante en su gen de \beta-glucoronidasa.
3. Una composición que comprende un caldo de cultivo de Sphingomonas elodea, que ha sido producido por el cultivo de Sphingomonas elodea de las reivindicaciones 1 o 2.
4. Un método de producción de una composición de goma gelán, que comprende:
obtener el cultivo microbiológicamente puro de Sphingomonas elodea de las reivindicaciones 1 o 2;
recoger el medio de cultivo; y
precipitar goma gelán de la mezcla.
5. El método de la reivindicación 4, que comprende además:
añadir la goma gelán a un producto lácteo.
