Abstract
Carne precocinada para almacenamiento refrigerado a largo plazo. Se prevé el control del desarrollo de sabor a recalentado (SAR) para productos cárnicos con forma precocinados e incluso sin curar tales como hamburguesas de carne. La carne se combina con una combinación de antioxidantes que incluye una mezcla de fosfato/concentrado cítrico y un extracto de romero. También se incluye preferiblemente una composición antimicrobiana. El suministro de carne se configura según se desee. Se puede realizar un tratamiento superficial con un colorante de caramelo para un efecto antirranciedad. El componente cárnico con forma es cocinado después para que alcance una temperatura interna relativamente alta. El producto cárnico precocinado final se envasa al vacío. Este producto cárnico precocinado se puede incorporar a un kit que tiene una bandeja lavada con gas dentro de la que está sellado el producto cárnico precocinado con forma, junto con al menos otro componente alimenticio para uso en combinacióncon el producto cárnico precocinado con forma.
