Abstract

The invention relates to a biotechnological method for recovering the oil retained in moist olive waste by means of a continuous, two-phase centrifugation system or ecological method which solubilizes the pulp, thus releasing the oil which can be recovered by centrifugation, based on the use of the moist olive waste as a culture medium for growing hydrolytic bacteria which, through the activity of their extracellular enzymes, convert the carbohydrates constituting the olive pulp into a low-molecular-weight compound which is soluble in the water in the olive, and the oil is thus released and can be separated out from the aqueous phase and the solid phase by simple centrifugation in a three- phase decanter.
