COMPRENDE OBTENER UN HOMOGENEIZADO CON UNA RELACION AGUA: MATERIA GRASA SUPERIOR A 2:1, AL QUE SE AÑADE UNA CICLODEXTRINA A UNA CONCENTRACION FINAL SUPERIOR AL 0,5% (P/V) Y SE SOMETE A UNA PRIMERA INCUBACION CON AGITACION ENERGICA DURANTE MAS DE 1 MINUTO A UNA TEMPERATURA DE ENTRE 20C Y 40C, A UNA SEGUNDA INCUBACION ESTATICA DURANTE MAS DE 15 MINUTOS, A UNA TEMPERATURA ENTRE 0C Y 10C, Y A UNA SEPARACION DEL HOMOGENEIZADO, POR CENTRIFUGACION, A UN TEMPERATURA SUPERIOR A 25C PARA OBTENER LA NATA DE BAJO CONTENIDO EN COLESTEROL. EL QUESO SE OBTIENE MEZCLANDO LA NATA CON LECHE DESNATADA DE CONTENIDO EN MATERIA GRASA INFERIOR AL 0,1%. APLICACION EN LA INDUSTRIA ALIMENTARIA.
