Abstract

The process uses 50kg. flour, 3/4kg. sugar, 30l. luke-warm water and 1/4kg. butter, with addn. of 1/2kg. yeast and 1kg. salt in summer, and 1kg. yeast and 1/2kg. salt in winter. The ingredients are (1) mixed in a kneader for 20-45 minutes (2) left to rest for 20-45 minutes in the kneader at ambient temp., covered with a cloth (3) sliced into portions of required size and weight (4) after rolling out, leaving for 5 minutes, placing on wood trays and covering for 10-20 minutes and (5) placing in a conventional oven at 450-500 deg.C for 5-7 minutes. ..ER ALL
