Definitions

  • the invention relates to a device for cutting off food slices from at least one block of food, in particular from at least one block of sausage, ham and/or cheese, the device having a knife arranged on a knife holding device for cutting off the food slices along a cutting plane, with a feed to the Feeding of the at least one block of food along a feed direction to the knife is provided, with the device having a transport means for depositing and transporting away the cut food slices along a transport direction, onto which the food slices cut off by the knife fall in a falling direction, the device having a folding means for folding the cut off food slices falling along the direction of fall.
  • the generic devices are known as so-called high-performance slicing devices, as for example in EP 3 009 242 B1 to be discribed.
  • slicers bar-shaped or other shaped food blocks, for example sausage, cheese, ham, cured ham or the like, are cut into slices with a very high cutting capacity, for example up to 1,000 cuts per minute or more.
  • the block of food is transported by means of a controlled drive through a stationary cutting plane, in which the cut is made by a rapidly moving, generally rotating knife.
  • the slice thickness results from the feed distance of the food block between two cuts. Accordingly, at a constant Knife rotation speed, regulation of the slice thickness via the feed speed of the food block.
  • the cut slices fall from the cutting plane onto a means of transport, for example a conveyor belt, and are generally combined into portions with a constant number of slices and/or with an exact weight and packaged. It is not uncommon for the food slices to be folded into portions and packaged. This can either be for practical reasons, for example due to the size of the food slice, or for aesthetic reasons.
  • the cut-off food slices hit a folding means while they fall from the cutting plane onto the transport means, by which they are folded as they fall.
  • the accuracy of the folding depends to a large extent on the distance between the folding means and the cutting plane.
  • the folding means are usually attached to the transport means, which can lead to inaccuracies in the distance between the folding means and the cutting plane and thus also to inaccuracies when folding.
  • the object is achieved according to claim 1 with a device for cutting off food slices from at least one block of food, in particular from at least one block of sausage, ham and/or cheese, the device having a knife arranged on a knife holding device for cutting off the food slices along a cutting plane, a feed for feeding the at least one block of food along a feed direction to the knife being provided, the device having a transport means for depositing and transporting away the cut food slices along a transport direction, onto which the food slices cut off by the knife fall in a falling direction, wherein the device a folding means for folding the cut off falling along the direction of fall Has food slices, characterized in that the folding means is arranged on the knife holding device.
  • the present invention relates to a device for slicing at least one block of food into slices of food.
  • Such food bars for example sausage, cheese or ham bars, typically have a length of between 300 millimeters and 3,500 millimeters, the length of the food bars usually not being the same.
  • These blocks of food are placed in the device and transported continuously or intermittently by means of a feed in the direction of a blade rotating in a cutting plane.
  • the knife can be a circular or sickle knife, for example.
  • the knife separates food slices from the end of the food block facing the cutting plane.
  • the food slices separated in this way usually fall onto a means of transport, with which they are combined into portions and then transported away.
  • the means of transport can comprise a conveyor belt, for example.
  • the folding means is arranged between the blade and the transport means.
  • the folding means preferably folds food slices falling along the direction of fall by adding a movement direction component to the direction of fall for at least parts of the individual food slices. It is conceivable that this occurs through mechanical contact between the food slices falling in the direction of fall and the folding means, for example through the food slices hitting the folding means.
  • the folding means is arranged on the knife holding device. This advantageously requires a constant distance between the folding means and the cutting plane during operation, which leads to the food slices being folded with high repeat accuracy and very evenly.
  • the knife holding device designates a part of the device on which the knife is seconded, but which does not rotate with the knife when the knife is rotating.
  • the folding means has a driven transport device, the folding means preferably having a driven roller.
  • the slice of food can advantageously be given an impulse in the event of mechanical contact, which is designed in such a way that the slice of food is folded. It is conceivable, for example, that the food slice touches the driven transport device of the folding means with a first end. Due to the movement of the driven transport device, a corresponding mechanical impulse is transmitted to the first end of the food slice. A second end of the food slice remains unaffected by the folding means and experiences no momentum transfer. The food slice folds because an impulse was now transmitted from the folding means to the first end of the food slice but not to the second end of the food slice.
  • a falling slice of food can result from product properties such as a low Product height, are not covered by the folding means with their optimally accelerated first end, the driven roller, which initiates the process of folding the food slice, can be driven in the same direction as the transport direction, at a constant speed.
  • the suboptimally detected first end of the food slice is accelerated in the transport direction, while the second end of the food slice, which is not subjected to any impact, completes its falling movement largely unaffected.
  • a circular contour of the driven roller, the simultaneous acceleration of the first end of the food slice and the largely unaffected falling motion of the second end of the food slice mean that the first end is conveyed up to a certain point, so that there is a slippage between the food slice and the folding means can arise.
  • the first end experiences a kind of catapult effect, as a result of which the first end is moved above the second end.
  • the folding means has a conveyor belt.
  • the unaffected second end of the food slice is caught by the conveyor belt, which moves at a constant speed in the direction of a transport away, so that the second end is accelerated in the transport away direction. As a result, the two ends of the food slice are folded in.
  • the speed at which the transport device of the folding means is driven can be adjusted.
  • the driven roller is a roller that is driven to rotate about a folding axis of rotation, the folding axis of rotation being arranged parallel to the cutting plane.
  • the driven transport device of the folding means is driven electrically and/or hydraulically and/or pneumatically. Provision is preferably made for the driven roller to have a diameter that varies along the folding axis of rotation. It is thus advantageously possible to realize different web speeds along the folding axis of rotation at one angular speed of the driven roller. The web speed, or rotational speed, is therefore dependent on a track position.
  • the folding means has a sleeve which is arranged around the roll to increase the diameter of the roll, for example pushed on. This makes it possible to reduce the distance to the food slice and to shift the place of impact of the food slice for folding. It is conceivable that several sleeves are arranged one behind the other around the roll along the folding axis of rotation.
  • the multiple sleeves have different outer diameters. Due to the varying diameter along the folding axis, different web speeds are realized along the folding axis of rotation at an angular speed of the driven roller.
  • the folding means has a plurality of rollers arranged essentially parallel to one another, with at least one roller being driven and with a conveyor belt and/or a plurality of conveyor belts being spanned by the plurality of rollers.
  • the spanned conveyor belt or the plurality of spanned conveyor belts offers the possibility of providing the falling food slice with a large area for mechanical contact with the folding means.
  • the folding means has O-rings stretched out by the rollers as stretched-out conveyor belts of the plurality of conveyor belts, with the O-rings preferably being made of a rubber material.
  • the speed at which the at least one driven roller of the folding means is driven can be adjusted. It is conceivable that the at least one driven roller is a roller that is driven to rotate about a folding axis of rotation, the folding axis of rotation being arranged parallel to the cutting plane. It is conceivable that the at least one driven roller of the folding means is driven electrically and/or hydraulically and/or pneumatically. Provision is preferably made for the driven roller to have a diameter that varies along the folding axis of rotation. It is thus possible in an advantageous manner to realize different conveying speeds of the conveyor belts along the folding axis of rotation at an angular speed of the driven roller. The conveying speeds are therefore dependent on a track position.
  • the folding means has a sleeve which is arranged around the driven roller to increase the diameter of the driven roller, for example pushed on. This makes it possible to reduce the distance to the food slice and to shift the place of impact of the food slice for folding. It is conceivable that several sleeves are arranged one behind the other around the roll along the folding axis of rotation. It is also conceivable that the several sleeves are different have outer diameter. Due to the varying diameter along the folding axis, different conveying speeds of the conveyor belts are realized along the folding axis of rotation at an angular speed of the driven roller.
  • the driven roller is driven on its side facing away from the transport means, counter to the transport direction. This advantageously enables very precise folding with high cutting performance. Furthermore, due to the roller being driven counter to the removal direction on its side facing away from the transport means, hardly any abrasion is produced by the food slice. The cleaning effort can thus be reduced and deterioration in the folds of the food slices due to increasing deposits of abrasion on the folding means can be reduced.
  • the driven roller is driven in the removal direction on its side facing away from the transport means. This causes the part of the food slice that is acted upon by the folding means to turn over against the direction of fall. This is particularly advantageous when, for example due to the nature of the block of food, it cannot be ensured that the food slices each meet the folding means at the same point or the food slices are each of a significantly different nature.
  • the folding means is arranged at an attachment point of the knife holding device, which is at a fixed distance from the cutting plane in a normal operating position of the device, the attachment point preferably being arranged on a housing of the knife holding device.
  • a stable mechanical attachment of the folding means to the knife holding device requires a reliably constant distance between the folding means and the cutting plane.
  • the arrangement of the folding means on the housing of the knife holder simplifies the construction and increases the Ease of maintenance of the folding means. It is conceivable that the folding means is screwed to the attachment point.
  • the knife holding device can be pivoted from a normal operating position of the device into a pivoting position of the device, wherein in the pivoting position the knife holding device is spaced at least far enough from the feed and the transport means that the knife Food bars not touched.
  • the distance between the folding means and the cutting plane can be adjusted, the position of the folding means preferably being adjustable along the feed direction. This makes it possible in an advantageous manner to adapt the distance between the folding means and the cutting plane to the food slices to be sliced. Depending on the weight, thickness or flexibility of the food slices, the distance between the folding device and the cutting plane must be adjusted in order to achieve a good folding result.
  • the distance between the folding means and the cutting plane can preferably be fixed after adjustment.
  • the position of the folding means can be adjusted orthogonally to the feed direction. It is thus possible in an advantageous manner to set the area of the food slices which is in mechanical contact with the folding means and to which an impulse is thus transmitted by the folding means.
  • the degree of folding ie partially overlapping or completely overlapping, is thus possible, for example.
  • the position of the folding means can preferably be fixed orthogonally to the feed direction after adjustment.
  • the folding means can be rotated about a first axis of rotation, the first axis of rotation being arranged parallel to the cutting plane and orthogonally to the main direction of extent of the roller and/or the folding means being able to be rotated about a second axis of rotation, wherein the second axis of rotation is arranged parallel to the cutting plane and in the direction of the main extension direction of the roller.
  • This also enables the folding means to be adapted to the food slices to be folded and thus improves folding. It is conceivable that the folding means can be fixed for rotational movements about the first axis of rotation and/or about the second axis of rotation.
  • the folding means can be pivoted from an operating position of the folding means into a passage position of the folding means, the folding means being pivoted in the passage position to such an extent that the folding means does not touch the cut-off food slices falling along the direction of fall .
  • the folding means can be pivoted about a further axis of rotation for swiveling from the operating position into the passage position, with the further axis of rotation being arranged orthogonally to the cutting plane and/or with the folding means for swiveling from the operating position in the passage position is displaceable essentially parallel to the cutting plane.
  • a further object of the present invention for solving the task set out in the beginning is, according to claim 13, a method for cutting off slices of food of at least one block of food with a device according to one of the preceding claims, wherein the at least one block of food is fed to the knife via the feed along the feed direction, wherein slices of food are cut off from the at least one block of food by the knife, wherein the cut off and in the direction of fall onto the Transport falling food slices are folded by the folding means, wherein the folded food slices are transported away along the transport direction. It is conceivable that the food slices are compressed in the folding direction before, after and/or during folding. It is thus advantageously possible to fold the food slices into a so-called "shaved meat" shape.
  • FIG 1 1 is a schematic representation of an apparatus according to an exemplary embodiment of the present invention.
  • the device comprises the feed 5 via which the block of food 2 is guided to the knife 4 in the feed direction 5 ⁇ .
  • the blade 4 cuts food slices 1 from the food block 2 in the cutting plane, which slices fall onto the transport means 6 in the direction of fall 4'.
  • the means of transport 6 is a conveyor belt. While the food slices 1 fall away from the knife 4 in the direction of the transport means 6, they hit the folding means 7 with a first end.
  • the folding means 7 is a driven roller in the illustrated embodiment. The folding means 7 rotates, which results in the food slices 1 being folded.
  • the folded food slices 1 are then transported by the transport means 6 in the transport direction 6 ⁇ to a next processing station, for example to a packaging station.
  • the folding means 7 is attached to the housing 30 of the knife holding device 3 .
  • the folding means 7 is shown in its operating position. From this operating position, the folding means 7 can be pivoted into a passage position (not shown), so that food slices 1 falling from the cutting plane do not touch the folding means 7 and are not folded.
  • FIG 12 shows schematically the folding means of a device according to an exemplary embodiment of the present invention.
  • the two rollers 8 of the folding means 7 are driven by the drive 10 .
  • the folding means 7 is rotatably mounted about the first axis of rotation 11 and about the second axis of rotation 12 .
  • the distance between the folding means 7 and the cutting plane (not shown here) is adjustable. The position of the folding means can thus be adjusted conveniently and precisely.
  • FIGS 3 (a) and (b) 12 schematically show the method according to exemplary embodiments of the present invention. The folding of the food slices 1 with the folding means 7 is shown in each case.
  • FIG 3 (a) It can be seen how food slices 1 are folded with the folding means 7, the folding means 7 being driven in such a way that the end of the folding means 7 facing away from the transport means 6 (not shown here) moves counter to the transport direction 6'.
  • the folding means 7 is a roller which rotates clockwise. Food slices 1 are shown from right to left at different times of folding. The cut-off food slice 1 falls from the right along the direction of fall 4 ⁇ . With its upper end, it hits the rotating folding means 7, as a result of which the food slice 1 collapses, ie is folded. Shown on the far left is the cut-off food slice 1 folded on the means of transport.
  • FIG 3 (b) It can be seen how food slices 1 are folded with the folding means 7, the folding means 7 being driven in such a way that the end of the folding means 7 facing away from the transport means moves in the direction of the transport away direction 6'.
  • the folding means 7 is also a roller, which, however, rotates counterclockwise.
  • Food slices 1 are shown from right to left at different times of folding.
  • the cut-off food slice 1 falls from the right along the direction of fall 4 ⁇ . With its upper end it falls onto the rotating folding means 7, as a result of which the upper end turns over against the direction of fall 4'. This is indicated in the drawing with an arrow. Quite shown on the left is the cut-off food slice 1 folded on the means of transport.
