Definitions
- the present invention relates to a cutting machine for baked goods, with a frame, a bread channel for receiving the baked goods to be cut, a conveyor for conveying the baked goods through the bread channel, a transverse to the bread channel and driven by a drive device driven knife, which on a is stored by a drive device rotationally driven rocker and clocked during operation of the cutting machine dives into the bread channel and leaves it again, and a control device for controlling the blade movement and / or the conveyor. It also relates to a conveyor carriage for conveying baked goods through a bread channel of a slicer.
- the object is achieved for a generic cutting machine by the conveyor of the cutting machine is connected to a selectively insertable into the bread channel and again removable conveyor carriage, receiving pockets are formed on the conveyor carriage, in which at least one insert is held in a cutting position, and the side walls and the Floor of the conveyor carriage have at least one transverse to the bread channel through the receiving pockets extending slot, which allows passage of the blade through the interior of the conveyor carriage during a working cycle.
- the object is achieved with a conveyor carriage whose dimensions are designed so that the conveyor carriage can be inserted into the bread channel of a cutting machine, on the conveyor carriage receiving pockets are formed, in which at least one insert is held in a cutting position, and the side walls and the bottom of the winningschlittens have at least one transverse to the bread channel through the receiving pockets extending slot, which allows passage of the blade through the interior of the conveyor carriage during a power stroke.
- a conventional cutting machine not only for automatically cutting loaves, but also for automatically cutting bread rolls, baguettes, flatbreads and similar baked goods as inserts. It is sufficient to put the baked goods to be cut in the conveyor slide and then use this in the bread channel to then start the cutting process of the cutting machine conventionally and then remove the finished cut baked goods from the cutting machine with the conveyor carriage. It can be plugged into a receiving bag only a single baked good, but it can also be equipped with several different or all receiving pockets, each with a baked good.
- the receiving pockets can also be formed so that a baked good can extend over a plurality of receiving pockets, such as a baguette
- a baked good can extend over a plurality of receiving pockets, such as a baguette
- the cutting process is thus accelerated, the risk of injury to the operator when manually cutting the rolls is reduced, and the operator can during the cutting process perform other useful work. Since the cutting machines often have devices for collecting crumbs, also reduces the cost of cleaning the work surfaces after the preparation of the rolls. It is not necessary to buy a separate machine for cutting the rolls and set up in the bar area, but it is sufficient to the To provide conveyor carriage, which can then be used as needed in an existing cutting machine.
- the conveyor slide is comparatively light and compact and can therefore be easily stored in a closet after use.
- a sponge-like element can be inserted into the conveyor carriage.
- the spongy element may be adapted with its shape to the shape of one or more receiving pockets.
- the sponge-like element may be impregnated with a cleaning liquid.
- the cleaning liquid contained in the sponge-like element comes into contact with the surface of the knife when it is moved through the cross section of the conveyor carriage during a working cycle.
- the knife cuts into the material of the sponge-like element.
- the cleaning liquid, with which the sponge-like element is impregnated, thereby softens the adhesion of residues of the cuttings on the surface of the knife.
- the cleaning liquid may for this purpose comprise suitable chemical equipment, such as alkalis and surfactants, and the like.
- the cleaning liquid may alternatively or additionally also have a disinfecting effect, for example with alcohol or vinegar.
- the sponge-like element may also have several separate departments, of which a first coming into contact with the knife department with a chemically enhanced to enhance the cleaning effect liquid and another, later coming into contact with the knife department with, for example, pure water or water with a rinse aid is added for rinsing in order to avoid the entry of cleaning liquids over the knife surface there on the next cut of a bread there.
- the material of the sponge-like element is porous in order to be able to absorb both the cleaning fluid and adhesions sheared off from the blade surface.
- the material may additionally have a certain elasticity.
- the cell walls of the porous material structure have an abrasive effect on dirt adherence as the knife passes through this material.
- the sponge-like element may have a shape such that the knife does not pass over the entire cross-section of the sponge-like element as it passes through.
- the spongy element can simply be washed out by rinsing it with clear water.
- the conveyor carriage or the sponge-like element itself may have a compression spring, with which the material of the sponge-like element is held compressed in the conveyor carriage. The pressure forces the material of the sponge-like element more strongly toward the blade surface as it passes through the sponge-like element. This increases the cleaning effect.
- the conveyor carriage serves the purpose of positioning the inserts so in relation to the knife in the bread channel, that a section through an insert along a desired cutting line is possible. Another purpose of the conveyor carriage is to use the present in the cutting machine conveyor for the cut of the inserted into the conveyor carriage inserts.
- the conveyor carriage has a width which corresponds to the width of the bread channel or is narrower than the width of the bread channel of a cutting machine.
- the conveyor carriage can be easily inserted into the bread channel and transported by the conveyor through it.
- the dimensions should be chosen so that even the cut to be cut baked goods such as a bun or the sponge-like element fits.
- the height should be selected so that there is sufficient support for an inserted baked good.
- the slot for a receiving pocket should be arranged and dimensioned so that the knife can be moved through the slot during a sweeping motion through the slot without colliding with the shuttle.
- the slot should cover at least the tolerances needed by the conveyor control to stop the conveyor carriage with the slot in the area of the knife.
- the slot in the conveyor carriage must at least pass through the bottom area of the conveyor slide and at least part of its side surfaces.
- At least two receiving pockets are formed side by side on the conveyor carriage transverse to the bread channel, which have a common slot, and / or on the conveyor slide several receiving pockets in the longitudinal direction of the bread channel arranged one behind the other, each receiving pocket has at least one slot.
- the areas separated by the slots of the conveyor carriage are connected to each other by a slot-free bridge.
- the slot-free bridge brings stability to the conveyor carriages.
- the slit-free bridge can simultaneously form the carrying handle on which the conveyor carriage can be grasped and inserted and removed again into the bread channel.
- the slit-free bridge as part of the cross-sectional area of the conveyance carriage inserted into the bread channel can in some areas project beyond the movement path of the knife through the bread channel. As a result, the slot-free bridge is easy to handle.
- the receiving pockets are bounded at least to one side by limiting elements which can be fixed in different positions in the conveyor carriage.
- the receiving pockets can be adapted to different sizes of baked goods or spongy elements to be cut up. For a clean cut, it is important that the baked good or the spongy element to be cut is well held in the receiving bag. This is promoted by displaceable limiting elements.
- the limiting elements are formed as plates which are inserted into the slot provided for fastening these plates in the conveyor carriage. Slots are well suited to secure panels in a position by simply pushing them.
- the plates may be made of a plastic material that can be deformed with a limited force, so that a bending stress builds up in the material by which the baked good or the sponge-like element is held in the receiving pocket with a bending force resulting from the clamping force. For the positive provision of a baked good or the sponge-like element in the receiving pocket is then still a non-positive holding force added by a bakery product located in the receiving bag is held in the cutting position.
- the control device switches to a switching signal, the cutting machine in an operating mode in which the conveyor moves the conveyor carriage so timed through the bread channel, that the conveyor moves the conveyor carriage forward when the knife is outside the bread channel, and the conveyor carriage at least stopped while the knife passes through the cross-section of the conveyor carriage in the region of a slot, the feed of the conveyor carriage with the conveyor between two stops corresponds to the distance that two successive slots in the conveyor slide to each other, and the conveyor carriage at a stop with a slot each stopped at a position at which this slot is in the orbit of the knife.
- the feed of the conveyor carriage takes place in this control so then when the knife is not in the bread channel, and the conveyor carriage is stopped when the knife passes through the bread channel, so that the knife at least not due to the feed movement with the Conveyor sled can collide.
- the conveyor carriage is always stopped by the conveyor so that the slot, which the knife is to pass through next, is in the region of the bread channel in which the knife moves through the bread channel.
- the slot is in this position, ie in a plane that is flat or at least almost flat to the plane of movement of the knife.
- the controller may be configured so that the conveyor stops the conveyor carriage at each slot of the conveyor carriage, or the controller is selectively adjustable to a conveyor in which the conveyor carriage is stopped for cutting only every other or third slot when the cuts in The inserted baked goods or the sponge-like element should only be carried out in such large sections.
- the cutting machine on a sensor which is connected to the control device the sensor is designed to check whether the conveyor carriage is inserted into the bread channel, on the conveyor carriage a recognizable by the sensor characteristic element is mounted, the sensor upon detection of the presence of the conveyor carriage in the bread channel, a signal to the control device, and the controller switches automatically when transmitting the sensor signal as a switching signal in the operating mode for conveying the conveyor carriage.
- a sensor for example, a light barrier into consideration, the light of which is reflected by a conveyor disposed on the carriage reflector when a conveyor slide is inserted into the bread channel.
- a passive transponder can be mounted on the conveyor carriage whose magnetic field is read out by a corresponding active sensor.
- the transponder signal may provide additional information, for example about the size of the transport carriage, its suitability for certain types of cutting machines and the required increment between the slots, which are read by the active sensor and transmitted to the controller.
- a cutting machine 2 is shown in a frontal view from the front.
- the cutting machine 2 consists of a housing in which a bread channel 6 extending transversely across the housing width is formed.
- a bread loaded in the bread channel 6 is advanced by a conveyor 8 in small increments, the step length of which corresponds to the thickness which the slices of the bread to be cut are to have.
- a conveyor slide 10 is inserted into the bread channel 6, which is also conveyed by the conveyor 8 in successive steps by the conveyor 8 through the bread channel 6.
- this is in a position in which the first slot 28 is shown stopped in the conveyor carriage 10 at the point at which this slot 28 in the orbit of the in Fig. 1 not shown knife is located.
- the conveyor carriage 10 is placed in this inserted baked goods or a spongy element in the bread channel 6, the safety cover is closed, and then the cutting machine is turned on.
- the conveyor 8 conveys the conveyor carriage 10 in successive steps from right to left through the bread channel 6.
- the conveyor carriage 10 is thereby stopped in a position in which a slot 28 is in a plane to the knife level.
- the knife then does not collide with the conveyor carriage 10, but dives into the slot 28 and through this through the conveyor carriage 10 therethrough.
- the baked goods or a sponge-like element are inserted into the conveyor carriage 10, that the baked goods or the sponge-like element with their respective cutting plane to be cut exactly in the slot 28 of a receiving pocket and thus in the plane of movement of the knife in the conveyor carriage 10.
- the knife enters the bread channel 6, it moves through the slot 28 and thereby cuts in the knife level located at this point baked goods along the slot 28 or strikes with its blade surface by the material of the sponge-like element.
- the conveyor carriage 10 for cutting the next baked good or for the next passage through the sponge-like element can be forwarded by a caravann beauty that corresponds to the distance of the first slot 28 to the second slot 28. If baked goods or the sponge-like element are in the region of the second slot 28, they are then cut through the next reentry of the knife in the bread channel 6 and in the interior of the conveyor carriage 10. This sequence of steps is repeated until the knife has passed through the last slot 28 of the conveyor carriage 10 and cut all the baked goods at least once along the knife plane.
- the pitches of the conveyor 8 may be sensor-controlled, or the distances of the slots 28 to each other are programmed in the controller or encoded in an identifier which may be located on the conveyor carriage 10.
- the conveyor carriage 10 can be taken out with the baked goods or the sponge-like element from the bread channel 6 to remove them and the conveyor carriage 10 when needed with new uncut bakery products or a sponge-like element to fill, for which the conveyor basket 10 then again is set in the bread channel 6 in the start position.
- the conveyor carriage 10 may also remain in the bread channel 6, and it will only cut bakery products or the sponge-like element from the receiving pockets removed and inserted other baked goods or the sponge-like element back into the receiving pockets before a cutting cycle is restarted.
- Fig. 2 shows a sectional view through the cutting machine 2 along the line AA in Fig. 1 ,
- the receiving pockets 12 formed in the conveyor carriage 10 are easily recognizable.
- the conveyor carriage 10 has at least two receiving pockets 12, which are formed side by side in the bread channel.
- the conveyor carriage 10 has two side walls 14 and a bottom 16, which at intervals have a transverse to the bread channel 6 extending slot through which the knife 18 can pass during a rotational movement.
- the knife 18 is mounted on a rotation axis 20 on which it is driven driven in operation.
- the knife 18 is additionally mounted on a rocker 22, which is formed in the embodiment as a disc with an eccentric mounting of the axis of rotation 20 for the knife and also rotates in the arrow direction.
- the blade 18 When the rocker 22 rotates in the direction indicated by the arrow, the blade 18 enters a position shown in FIG Fig. 2 shown in a counterclockwise direction from below into the bread channel 6 and the cross section of the conveyor carriage 10 a. With continued rotation of the rocker 22, the blade 18 moves through the cross section of the conveyor carriage 10, thereby cutting the bakery products located in the receiving pockets 12 in the knife level. In order to be able to cut through a plurality of baked goods arranged in succession in the conveyor carriage 10, the conveyor carriage 10 must be advanced after each cut by the distance that adjacent slots 28 have to one another. In order not to be blocked by the knife 18, this can Feed movement take place only if not the knife 18 is outside the bread channel 6.
- a sensor 24 which may be formed for example as a kind of light barrier. If adjacent to the sensor 24 of the light barrier is a reflector surface 26 which is formed on the side wall 14 of the conveyor carriage 10, the sensor can detect whether a conveyor slide 10 has been inserted into the bread channel. In the reflector surface additional information about the conveyor carriage may be included, such as the length, height, width, the spacing of the slots 28 from each other, the number of slots and the like.
- the two adjacent in the sectional view receiving pockets 12 of the conveyor carriage 10 are connected to each other in the embodiment by a bridge 30 which is formed in a region in which the blade 18 does not pass through the cross section of the conveyor carriage 10.
- the bridge 30 can therefore connect over its length those areas of the conveyor carriage 10, which are separated from each other by a slot 28 below.
- limiting elements 32 can be seen in the conveying carriage 10.
- the limiting elements 32 may be plugged into a conveyor carriage 10 to separate individual receiving pockets 12 from each other.
- special plug-in slots 34 may be formed in the conveyor carriage 10, in which the limiting elements 32 are held positively and optionally additionally non-positively.
- the Fig. 3 shows a view from the top of the in Fig. 1 From the top view is well the bread channel 6 can be seen, which extends across the width of the machine.
- the conveyor carriage 10 is moved by the conveyor 8 through the bread channel 6 therethrough.
- the side walls 14 and the bottom 16 of the conveyor carriage 10 define the area in which bakery products to be cut or a sponge-like element can be inserted.
- the entire space held by the conveyor carriage 10 may be subdivided by separate limiting elements 32 into individual receiving pockets 12.
- the slots 28 between the individual receiving pockets 12 are made open in the region of the bottom 16 and the side walls 14 where the slots 28 are formed to allow the passage of the blade 18 through the conveyor carriage 10 therethrough.

Another problem is the cleaning of the knife. This is difficult to access and an operator may injure himself on the knife blade. For this reason, the blades of the slicer are often not kept as clean as would be desirable from the point of view of food hygiene.
It is the object of the present invention to provide a device with which it is possible to mechanize the roll cutting and / or the cleaning of the knife, without requiring a considerable machine effort is driven.
The object is achieved for a generic cutting machine by the conveyor of the cutting machine is connected to a selectively insertable into the bread channel and again removable conveyor carriage, receiving pockets are formed on the conveyor carriage, in which at least one insert is held in a cutting position, and the side walls and the Floor of the conveyor carriage have at least one transverse to the bread channel through the receiving pockets extending slot, which allows passage of the blade through the interior of the conveyor carriage during a working cycle.
The object is achieved with a conveyor carriage whose dimensions are designed so that the conveyor carriage can be inserted into the bread channel of a cutting machine, on the conveyor carriage receiving pockets are formed, in which at least one insert is held in a cutting position, and the side walls and the bottom of the Förderschlittens have at least one transverse to the bread channel through the receiving pockets extending slot, which allows passage of the blade through the interior of the conveyor carriage during a power stroke.
About the conveyor carriage, it is possible to use a conventional cutting machine not only for automatically cutting loaves, but also for automatically cutting bread rolls, baguettes, flatbreads and similar baked goods as inserts. The receiving pockets can also be formed so that a baked good can extend over a plurality of receiving pockets, such as a baguette The cutting process is thus accelerated, the risk of injury to the operator when manually cutting the rolls is reduced, and the operator can during the cutting process perform other useful work. The conveyor slide is comparatively light and compact and can therefore be easily stored in a closet after use.
As another insert also a sponge-like element can be inserted into the conveyor carriage. The spongy element may be adapted with its shape to the shape of one or more receiving pockets. The sponge-like element may be impregnated with a cleaning liquid. The cleaning liquid contained in the sponge-like element comes into contact with the surface of the knife when it is moved through the cross section of the conveyor carriage during a working cycle. The knife cuts into the material of the sponge-like element. The cleaning liquid, with which the sponge-like element is impregnated, thereby softens the adhesion of residues of the cuttings on the surface of the knife. The cleaning liquid may for this purpose comprise suitable chemical equipment, such as alkalis and surfactants, and the like. The cleaning liquid may alternatively or additionally also have a disinfecting effect, for example with alcohol or vinegar.
The sponge-like element may also have several separate departments, of which a first coming into contact with the knife department with a chemically enhanced to enhance the cleaning effect liquid and another, later coming into contact with the knife department with, for example, pure water or water with a rinse aid is added for rinsing in order to avoid the entry of cleaning liquids over the knife surface there on the next cut of a bread there.
The material of the sponge-like element is porous in order to be able to absorb both the cleaning fluid and adhesions sheared off from the blade surface. The material may additionally have a certain elasticity. The cell walls of the porous material structure have an abrasive effect on dirt adherence as the knife passes through this material.
Despite the incisions of the knife in the material of the spongy element this can be used multiple times. If the sponge-like element is held in the conveyor carriage, it can be cut into several slices without it falling apart. It is also possible to carry out several cleaning cycles in succession with a sponge-like element; only the respective slices become thinner after multiple use. The sponge-like element may have a shape such that the knife does not pass over the entire cross-section of the sponge-like element as it passes through.
After a cleaning cycle, the spongy element can simply be washed out by rinsing it with clear water.
The conveyor carriage or the sponge-like element itself may have a compression spring, with which the material of the sponge-like element is held compressed in the conveyor carriage. The pressure forces the material of the sponge-like element more strongly toward the blade surface as it passes through the sponge-like element. This increases the cleaning effect.
The conveyor carriage serves the purpose of positioning the inserts so in relation to the knife in the bread channel, that a section through an insert along a desired cutting line is possible. Another purpose of the conveyor carriage is to use the present in the cutting machine conveyor for the cut of the inserted into the conveyor carriage inserts.
The conveyor carriage has a width which corresponds to the width of the bread channel or is narrower than the width of the bread channel of a cutting machine. Thus, the conveyor carriage can be easily inserted into the bread channel and transported by the conveyor through it. However, the dimensions should be chosen so that even the cut to be cut baked goods such as a bun or the sponge-like element fits. The height should be selected so that there is sufficient support for an inserted baked good.
The slot for a receiving pocket should be arranged and dimensioned so that the knife can be moved through the slot during a sweeping motion through the slot without colliding with the shuttle. This means that the slot of its outer peripheral shape must at least keep free the enveloping circle, which passes through the knife when moving through the bread channel. From its width, the slot should cover at least the tolerances needed by the conveyor control to stop the conveyor carriage with the slot in the area of the knife. When the knife passes through the bread channel from bottom to top, the slot in the conveyor carriage must at least pass through the bottom area of the conveyor slide and at least part of its side surfaces.
According to one embodiment of the invention, at least two receiving pockets are formed side by side on the conveyor carriage transverse to the bread channel, which have a common slot, and / or on the conveyor slide several receiving pockets in the longitudinal direction of the bread channel arranged one behind the other, each receiving pocket has at least one slot. By forming a plurality of receiving pockets in a conveyor slide can be cut in a single pass of the conveyor slide through the bread channel several baked goods, or it is several passes of the knife through the sponge-like element during a cleaning pass possible.
According to one embodiment of the invention, the areas separated by the slots of the conveyor carriage are connected to each other by a slot-free bridge. The slot-free bridge brings stability to the conveyor carriages. The slit-free bridge can simultaneously form the carrying handle on which the conveyor carriage can be grasped and inserted and removed again into the bread channel. The slit-free bridge as part of the cross-sectional area of the conveyance carriage inserted into the bread channel can in some areas project beyond the movement path of the knife through the bread channel. As a result, the slot-free bridge is easy to handle.
According to one embodiment of the invention, the receiving pockets are bounded at least to one side by limiting elements which can be fixed in different positions in the conveyor carriage. By limiting elements which can be fixed in various positions, the receiving pockets can be adapted to different sizes of baked goods or spongy elements to be cut up. For a clean cut, it is important that the baked good or the spongy element to be cut is well held in the receiving bag. This is promoted by displaceable limiting elements.
According to one embodiment of the invention, the limiting elements are formed as plates which are inserted into the slot provided for fastening these plates in the conveyor carriage. Slots are well suited to secure panels in a position by simply pushing them. The plates may be made of a plastic material that can be deformed with a limited force, so that a bending stress builds up in the material by which the baked good or the sponge-like element is held in the receiving pocket with a bending force resulting from the clamping force. For the positive provision of a baked good or the sponge-like element in the receiving pocket is then still a non-positive holding force added by a bakery product located in the receiving bag is held in the cutting position.
According to one embodiment of the invention, the control device switches to a switching signal, the cutting machine in an operating mode in which the conveyor moves the conveyor carriage so timed through the bread channel, that the conveyor moves the conveyor carriage forward when the knife is outside the bread channel, and the conveyor carriage at least stopped while the knife passes through the cross-section of the conveyor carriage in the region of a slot, the feed of the conveyor carriage with the conveyor between two stops corresponds to the distance that two successive slots in the conveyor slide to each other, and the conveyor carriage at a stop with a slot each stopped at a position at which this slot is in the orbit of the knife. The feed of the conveyor carriage takes place in this control so then when the knife is not in the bread channel, and the conveyor carriage is stopped when the knife passes through the bread channel, so that the knife at least not due to the feed movement with the Conveyor sled can collide. In this case, the conveyor carriage is always stopped by the conveyor so that the slot, which the knife is to pass through next, is in the region of the bread channel in which the knife moves through the bread channel. The slot is in this position, ie in a plane that is flat or at least almost flat to the plane of movement of the knife. The controller may be configured so that the conveyor stops the conveyor carriage at each slot of the conveyor carriage, or the controller is selectively adjustable to a conveyor in which the conveyor carriage is stopped for cutting only every other or third slot when the cuts in The inserted baked goods or the sponge-like element should only be carried out in such large sections.
According to one embodiment of the invention, the cutting machine on a sensor which is connected to the control device, the sensor is designed to check whether the conveyor carriage is inserted into the bread channel, on the conveyor carriage a recognizable by the sensor characteristic element is mounted, the sensor upon detection of the presence of the conveyor carriage in the bread channel, a signal to the control device, and the controller switches automatically when transmitting the sensor signal as a switching signal in the operating mode for conveying the conveyor carriage. As a sensor, for example, a light barrier into consideration, the light of which is reflected by a conveyor disposed on the carriage reflector when a conveyor slide is inserted into the bread channel. In the same way, a passive transponder can be mounted on the conveyor carriage whose magnetic field is read out by a corresponding active sensor. The transponder signal may provide additional information, for example about the size of the transport carriage, its suitability for certain types of cutting machines and the required increment between the slots, which are read by the active sensor and transmitted to the controller.

The
When the knife has emerged from the space body of the
Thereafter, the
Alternatively, the
Above the
The two adjacent in the sectional
