Description

  • Die vorliegende Erfindung betrifft eine Aufschneidevorrichtung, die Lebensmittelscheiben von einem Lebensmittelriegel abschneidet und sich dabei um seine Drehachse dreht. Derartige Slicermesser sind aus dem Stand der Technik hinlänglich bekannt und werden an Aufschneidevorrichtungen montiert, die das Slicermesser drehend antreiben, damit es von dem vorderen Ende eines Lebensmittelriegels Lebensmittelscheiben abschneiden kann. Der Lebensmittelriegel wird dabei in Richtung des sich drehenden Messers transportiert. Diese Aufschneidevorrichtungen können heutzutage mehrspurig ausgeführt sein, um Lebensmittelscheiben von mehreren Lebensmittelriegeln gleichzeitig abzuschneiden. Da dabei in der Regel nur ein Slicermesser zum Einsatz kommt, müssen diese Slicermesser immer größer ausgeführt werden, wodurch ihr Gewicht steigt. Dies macht die Handhabung dieser Silcermesser sowohl bei deren Montage als auch während deren Betrieb zunehmend schwierig.
  • Die Gattungsgebende DE 6940978U offenbart ein Aufschnittschneidmaschinenmesser mit einem Körper aus Kunststoff, welcher mit einem Schneidring aus Metall versehen ist. Es war deshalb die Aufgabe der vorliegenden Erfindung ein Slicermesser zur Verfügung zu stellen, das die Nachteile des Standes der Technik nicht aufweist. Gelöst wird die Aufgabe mit einer Aufschneidevorrichtung gemäss Anspruch 1.
  • Die vorliegende Erfindung betrifft eine Aufschneidevorrichtung, die Lebensmittelscheiben von einem Lebensmittelriegel abschneidet. Aufzuschneidende Lebensmittel sind beispielsweise Wurst, Käse oder Schinken. Dafür wird das Slicermesser beispielsweise mit 200 - 2000, vorzugsweise 500 - 1200 Umdrehungen pro Minute drehend antreibt. Mit jeder Umdrehung kann eine Lebensmittelscheibe abgeschnitten werden. Dafür wird der Lebensmittelriegel in Richtung des Slicermessers transportiert, wobei sich die Dicke der Lebensmittelscheibe aus dem Vorschub des Lebensmittelriegels zwischen zwei Schnitten ergibt. Nach dem Abschneiden fallen die Scheiben in der Regel auf einen sogenannten Ablagetisch, auf dem sie zu Portionen von beispielsweise 10 Lebensmittelscheiben konfiguriert werden. Um den Abtransport einer derartigen Portion zu ermöglichen, führt das Schneidmesser nach deren Aufschneiden vorzugsweise einen oder mehrere Leerschnitte durch, bei dem sich das Messer zwar, vorzugsweise mit unveränderter Drehzahl dreht aber keine Lebensmittelscheiben von dem Lebensmittelriegel abtrennt. Dafür wird der Lebensmittelriegel von der Schneidebene zurückgezogen und/oder das Schneidmesser aus der Schneidebene herausbewegt, beispielsweise indem das Schneidmesser parallel zu seiner Drehachse wegbewegt wird. Sobald hinreichend viele Leerschnitte durchgeführt worden sind, wird dann der Lebensmittelriegel wieder in Richtung der Schneidebene vorgerückt und/oder das Schneidmesser in die Schneidebene zurückbewegt. Vorzugsweise weisen Aufschneidevorrichtungen heutzutage mehrere Spuren auf, die jeweils einen Lebensmittelriegel aufnehmen können. Dadurch ist es möglich mit einer Umdrehung des Slicermessers mehrere Lebensmittelscheiben von mehreren Lebensmittelriegeln im Wesentlichen gleichzeitig abzuschneiden.
  • Die Aufschneidevorrichtung weist in der Regel eine sich drehende Welle auf, an der das Slicermesser direkt oder indirekt angebracht ist. Dafür weist das Slicermesser vorzugsweise eine Ausnehmung auf, die die Welle aufnehmen kann und/oder das Slicermesser an der Welle zentrieren kann. Außerdem sind vorzugsweise weitere Ausnehmungen vorgesehen, durch die Befestigungsmittel, beispielsweise Schrauben gesteckt werden können, um das Slicermesser an der Aufschneidevorrichtung zu befestigen.
  • Erfindungsgemäß weist das Slicermesser einen Grundkörper auf, der aus einem Vollmaterial oder zumindest partiell als Hohlkörper vorgesehen sein kann. Dieser Grundköper ist nun erfindungsgemäß vollständig aus einem Kunststoffmaterial gefertigt.
  • Es war für den Fachmann überaus erstaunlich und nicht zu erwarten, dass es möglich ist ein Slicermesser aus einem Kunststoffmaterial zu fertigen, obwohl durch die Rotation, beim Eintritt in den Lebensmittelriegel und beim Durchschneiden des Lebensmittelriegels und/oder bei der Bewegung des Slicermessers für einen Leerschnitt erhebliche Kräfte und Drehmomente auf das Slicermesser einwirken. Vorzugsweise ist der Grundköper zumindest abschnittsweise mit einer Beschichtung versehen. Dabei kann es sich beispielsweise um eine Metall- und/oder um eine Keramikbeschichtung handeln. Die Beschichtung ist im Bereich der Messerschneide vorgesehen. Die Beschichtung kann auf jede dem Fachmann geläufigen Art und Weise auf den Grundkörper aufgetragen werden. Vorzugsweise wird die Beschichtung durch Abscheidung aus der Gasphase, beispielsweise Sputtern, auf den Grundkörper aufgetragen.
  • Vorzugsweise ist das Kunststoffmaterial durch eine Struktur verstärkt, insbesondere mit Fasern, besonders bevorzugt Glas-, Kohlenstoff (Carbon)- und/oder Metallfasern verstärkt. Beispielsweise handelt es sich bei dem Kunststoff um einen glasfaserverstärkten Kunststoff. Die Inhaltsstoffe des Kunststoffkörper bzw. der Harzmatrix entsprechen vorzugsweise den gängigen Vorschriften für Food Kontakt, und/oder können vorzugsweise mit einer konformen Beschichtung versehen werden.
  • Die Fasern können geordnet oder ungeordnet sein. Die Fasern können homogen über den gesamten Grundkörper verteilt sein. Vorzugsweise sind die Fasern jedoch ungleichmäßig in dem Kunststoffmaterial angeordnet, wobei in mechanisch stärker beanspruchten Abschnitten mehr Fasern vorgesehen sind als in mechanisch weniger beanspruchten Abschnitten.
  • Die Fasern können jeweils eine im Wesentlichen gleiche Länge aufweisen oder unterschiedlich lang sein. Die Fasern können gewoben oder ungewoben sein. Alternativ oder zusätzlich können die Fasern durch andere Verfahren, beispielsweise Filzen und/oder Nähwirken miteinander verbunden werden.
  • Das Slicermesser kann ein Kreis-, Spiral- oder Sichelmesser sein.
  • Vorzugsweise weist das Kunststoffmaterial und/oder die Beschichtung ein Mittel, insbesondere einen Zusatzstoff, auf, das mittels eines Analyseverfahrens so detektierbar ist, dass eine entsprechende Vorrichtung feststellen kann, ob Partikel, die sich während des Schneidens von dem Slicermesser ablösen in dem Lebensmittelprodukt gelandet sind. Ein derartiges Produkt kann dann ausgeschleust werden. Beispielsweise handelt es sich bei dem Mittel um ein Metallpulver, das besonders bevorzugt als Nanopulver zur Verfügung gestellt wird. Gängige Analyseverfahren sind ein Durchstrahlungsscanner, insbesondere ein Röntgenscanner und/oder ein Metalldetektor.
  • Im Folgenden wird die Erfindung anhand der einzigen Figur 1 erläutert. Diese Erläuterungen sind lediglich beispielhaft und schränken den allgemeinen Erfindungsgedanken nicht ein.
  • Figur 1 zeigt das erfindungsgemäße Slicermesser 1, das einen Grundköper aufweist, der vollständig, aus einem Kunststoffmaterial gefertigt ist. Das Slicermesser weist eine Drehachse 4 auf, um die sich das Slicermesser beim Aufschneiden dreht. Im Bereich der Drehachse ist eine Ausnehmung 5 vorgesehen, die als Aufnahme für die Messerwelle und/oder einer daran vorgesehenen Messeraufnahme dient. In dem vorliegenden Fall ist der Kunststoff aus dem der Grundkörper gefertigt ist ein glasfaserverstärkter Kunststoff. Der Grundkörper ist teilweise, hier im Bereich der Messerschneide 5 mit einer Beschichtung 3 versehen, die in dem vorliegenden Fall aus Metall oder einer Metalllegierung besteht. Der Grundkörper kann teilweise hohl sein oder aus Vollmaterial gefertigt sein. Die Fasern der Verstärkung können gleichmäßig oder ungleichmäßig verteilt sein. Die Fasern können eine im Wesentlichen identische Länge oder eine unterschiedliche Länge aufweisen. Außerdem können die Fasern, beispielsweise durch Weben oder Filzen, miteinander verbunden sein.

Claims (8)

  1. Aufschneidevorrichtung mit einem Slicermesser (1) mit einer Messerschneide (6), das Lebensmittelscheiben von einem Lebensmittelriegel abschneidet und sich dabei um seine Drehachse (4) mit 200 - 2000 UPM dreht, dadurch gekennzeichnet, dass sein Grundkörper (2) vollständig aus einem Kunststoffmaterial gefertigt ist, wobei der Grundköper (2) im Bereich der Messerschneide (6) mit einer Metall- und/oder Keramikbeschichtung (3) versehen ist.
  2. Aufschneidevorrichtung nach Anspruch 1, dadurch gekennzeichnet, dass die Beschichtung durch Abscheidung aus der Gasphase erfolgt.
  3. Aufschneidevorrichtung nach einem der voranstehenden Ansprüche, dadurch gekennzeichnet, dass das Kunststoffmaterial verstärkt ist.
  4. Aufschneidevorrichtung nach Anspruch 3, dadurch gekennzeichnet, dass das Kunststoffmaterial mit Fasern verstärkt ist.
  5. Aufschneidevorrichtung nach Anspruch 4, dadurch gekennzeichnet, die Fasern geordnet oder ungeordnet sind.
  6. Aufschneidevorrichtung nach Anspruch 4 oder 5, dadurch gekennzeichnet, dass die Fasern gewoben oder ungewoben sind.
  7. Aufschneidevorrichtung nach einem der voranstehenden Ansprüche, dadurch gekennzeichnet, dass das Slicermesser ein Kreis-, Spiral- oder Sichelmesser ist.
  8. Aufschneidevorrichtung nach einem der voranstehenden Ansprüchen, dadurch dass das Slicermesser eine Ausnehmung (5) im Bereich der Drehachse aufweist.
