Abstract

L'invention concerne un procédé de pressage pour un produit animal ou végétal, par exemple du raisin ou une matière broyée, après son chargement à l'intérieur du tambour (12) d'un pressoir pneumatique (10), le tambour étant équipé d'une membrane de pressage interne gonflable (20) et de deux ou plusieurs sorties d'évacuation (24, 25, 26) de jus ou liquide du produit. Le procédé comporte les phases consistant à (i) laisser ouvert uniquement un sous-ensemble (25) desdites sorties ; (ii) presser le produit en gonflant la membrane ; (iii) ouvrir un nombre supérieur (24, 26) desdites sorties, éventuellement toutes ; (iv) presser à nouveau le produit en gonflant la membrane. Le procédé permet de résoudre le problème d'obtention d'une meilleure qualité du jus ou liquide pressé en le filtrant au mieux.
