- The use according to any one of the preceding claims, characterized in that the furniture comprises at least two refrigerating compartments (10) that contain an exchangeable transport reservoir (20) containing stable yeast cream (21) and having a total internal volume between 1 and 100, preferably between 3 and 100 liters, more preferably between 5 and 50 liters, and still more preferably between 10 and 25 liters, and an outlet opening (24) for the yeast cream.
- The use according to any one of the preceding claims, characterized in that the furniture comprises a refrigerating compartment (10) that contains at least two exchangeable transport reservoirs (20) containing stable yeast cream (21) and having a total internal volume between 1 and 100 liters, preferably between 3 and 100 liters, more preferably between 5 and 50 liters, and still more preferably between 10 and 25 liters, and an outlet opening (24) for the yeast cream.
- The use according to any one of claims 11 and 12, characterized in that the device comprises, for each of the exchangeable transport reservoirs (10):- an outlet passage (26) for dosing the yeast cream, said passage (26) connecting the outlet opening (24) of the exchangeable transport reservoir (20) with a removal opening (27) outside the refrigerating chamber (10); and- an opening/closing mechanism (30) of said outlet passage (26) making it possible to open said outlet passage (26) to remove yeast cream and making it possible to close said outlet passage (26) to stop the removal of the yeast cream from said transport reservoir (20).
- The use according to any one of the preceding claims, characterized in that the stable yeast cream has a dry matter content of between 12 and 25% by mass, preferably between 15 and 22% by mass.
- The use according to any one of the preceding claims, characterized in that the stable yeast cream is a stabilized yeast cream.
- The use according to any one of the preceding claims, characterized in that the yeast cream comprises one or more ingredients, additives or technological additives serving to improve breadmaking and/or maintain homogeneity.
- The use according to any one of the preceding claims, characterized in that said device also comprises:- an indicator (13) of the temperature inside the refrigerating compartment (10);- an alarm (14a, 14b) signaling when the temperature inside the refrigerating compartment (10) does not correspond to a temperature range determined for storing the yeast cream.
- A stable baking yeast cream bakery dosing device (21), said device comprising:- a piece of furniture provided with a refrigerating compartment (10) having an internal temperature adjusted between -2°C and 12°C, preferably between 0 and 5°C;- an exchangeable transport reservoir (20) situated in the refrigerating compartment (10) containing the stable yeast cream (21), said reservoir (20) having a total internal volume between 1 and 100 liters, preferably between 3 and 100 liters, still more preferably between 5 and 50 liters, and even more preferably between 10 and 25 liters and an outlet opening (24) for the yeast cream;- an outlet passage (26) for dosing the yeast cream, said passage (26) connecting the outlet opening (24) of the exchangeable transport reservoir (20) with a removal opening (27) outside the refrigerating chamber (10); and- an opening/closing mechanism (30) of the outlet passage (26) making it possible to open the outlet passage (26) to remove yeast cream and making it possible to close the outlet passage (26) to stop the removal of the yeast cream,
said device making it possible to remove a dosed quantity of yeast cream from the exchangeable transport reservoir (20) via the removal opening (27),
characterized in that said device also comprises:- a manual lever (31) of the opening/closing mechanism (30) making it possible to open and close the outlet passage (26). - The use according to any one of claims 1 to 17 of a yeast cream dosing device belonging to a facility for stable yeast cream bakery dosing comprising at least two yeast cream dosing devices.
