Description
Claims (18)
- Anordnung zum Warmhalten eines Substrats (16), mit einem Luftraum (22) und einem Heizelement (24), wobei das Substrat (16) zumindest im erwärmten Zustand Wasser oder Wasserdampf (20) abgibt und gemeinsam mit dem Heizelement (24) in dem Luftraum (22) angeordnet ist, wobei das Heizelement (24) ein unter Wasseraufnahme wärmeabgebendes Material (30) enthält und wobei der Luftraum (22) gegenüber der Umgebung wärmeisoliert und durch den Innenraum (22) eines Isolierbehälters (10, 12) zur Aufnahme des Substrats (16) und des Heizelements (24) gebildet ist, dadurch gekennzeichnet, daß das warmzuhaltende Substrat (16) als zumindest im erwärmten Zustand wasserabgebende Speise ausgebildet ist.
- Anordnung nach Anspruch 1, dadurch gekennzeichnet, daß das Substrat (16) über das Heizelement (24) durch Konvektion oder Wärmeleitung über den Luftraum (22) aufheizbar ist
- Anordnung nach Anspruch 1 oder 2, dadurch gekennzeichnet, daß das Heizelement (24) einen das wärmeabgebende Material (30) enthaltenden, für Luft und Wasserdampf (20) durchlässigen Beutel (28) aufweist.
- Anordnung nach Anspruch 3, dadurch gekennzeichnet, daß der Beutel (28) als Textilbeutel ausgebildet ist.
- Anordnung nach Anspruch 3 oder 4, dadurch gekennzeichnet, daß der Beutel (28) aus einem mindestens bis 200 °C, vorzugsweise bis 400 °C temperaturbeständigen Material besteht.
- Anordnung zum Warmhalten einer Speise, mit einem Luftraum (22) und einem Heizelement (24), wobei die Speise (16) zumindest im erwärmten Zustand Wasser oder Wasserdampf (20) abgibt und gemeinsam mit dem Heizelement (24) in dem Luftraum (22) angeordnet ist, wobei das Heizelement (24) ein unter Wasseraufnahme wärmeabgebendes Material (30) enthält, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) in einen formstabilen, aus einem faserigen, wasserdampfdurchlässigen Werkstoff bestehenden Tragkörper für die Speise (16) eingebettet ist.
- Anordnung nach einem der Ansprüche 1 bis 6, dadurch gekennzeichnet, daß das Substrat (16) über eine Kontaktfläche in wärmeleitender Verbindung mit dem Heizelement (24) steht.
- Anordnung nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) eine freiwerdende Adsorptionswärme von mindestens 2000 kJ je kg aufgenommenen Wassers aufweist.
- Anordnung nach einem der Ansprüche 1 bis 8, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) eine spezifische Wärme von weniger als 50 kJ/kg, vorzugsweise von weniger als 10 kJ/kg aufweist.
- Anordnung nach einem der Ansprüche 1 bis 9, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) porös ist und eine mittlere Porengröße von 0,2 bis 4 nm aufweist.
- Anordnung nach einem der Ansprüche 1 bis 10, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) ein Granulat oder Pulver mit einem mittleren Komdurchmesser von 0,1 bis 4 mm ist.
- Anordnung nach einem der Ansprüche 1 bis 11, dadurch gekennzeichnet, daß das wärmeabgebende Material (30) ein Zeolith ist.
- Anordnung nach einem der Ansprüche 6 bis 12, dadurch gekennzeichnet, daß der Tragkörper plattenförmig ausgebildet ist und als Unterlegplatte für das warmzuhaltende Substrat dient.
- Anordnung nach einem der Ansprüche 6 bis 13, dadurch gekennzeichnet, daß der Tragkörper in einen Isolierbehälter (10, 12) integriert ist.
- Anordnung nach einem der Ansprüche 1 bis 14, dadurch gekennzeichnet, daß der Isolierbehälter (10, 12) eine Faltschachtel aus Pappe enthält.
- Anordnung nach einem der Ansprüche 1 bis 15, dadurch gekennzeichnet, daß der Isolierbehälter (10, 12) dampfdicht verschließbar ist.
- Verwendung der Warmhalteanordnung nach einem der Ansprüche 1 bis 16 zum Warm- und Trockenhalten von wasserdampfabgebenden Speisen (16) beim Transport in einem Isolierbehälter (10, 12).
- Verwendung der Warmhalteanordnung nach einem der Ansprüche 1 bis 16 zum Warm- und Trockenhalten von Pizzen (16) beim Transport in einem luftundurchlässigen Isolierbehälter (10, 12).
