Abstract

The invention concerns an apparatus for cutting longitudinally animal carcasses after they have been slaughtered. It consists of a circular rotary cleaver (2) provided with teeth or not, driven by a motor (7) and mounted at the end of an oscillating support arm (3) driven, by a cam (5) arranged under the end of the support arm opposite the cleaver, with a fast up-and-down movement so as to communicate to the cleaver a very quick stroke with slight amplitude on the spine (10) of the animal (11) to be cut up.
