Abstract

The machine is of the type which cuts open the ventral surface of a carcass which is suspended from an overhead conveyor chain. The conveyor draws the ventral surface longitudinally over a circular blade which cuts along the median plane of the carcass. The blade cutting edge extends radially beyond annular flats on both sides of cutting edge, which limit the depth of cut of the blade. A disgorging tool follows the blade into the cut to lift out intestines, stomach etc. The disgorging tool is equipped with a saw blade for cutting the sternum and other cartilages. Pref. the circular cutting blade is centred between two side guide rollers which position the carcass as it is dragged over the blade. The leading end of the disgorging tool is pref. spheroidal and furnished with a roller. The circular blade can cut to only a limited depth so that the intestines and stomach are not cut only the outer skin and fat layer. The disgorging tool pulls out the viscera ahead of the saw blade which divides the sternum etc.
