Dieser Positioniervorgang des Messers ist abgeschlossen, wenn durch die Drehbewegung des Messers die Schneide mit dem durchzutrennenden Darm oder der Haut in Berührung kommt. Hierdurch ist gewährleistet, daß das Abtrennen der Wurst an der gewünschten Stelle erfolgt. Bei der weiteren Drehbewegung des Messers gerät nach dem Durchtrennen des Darmes der Steg auf der Rückseite des Messerflügels mit dem Clip in Berührung und schlägt diesen vom Wurstende ab. Mit dem erfindungsgemäßen Messer kann also das Abtrennen der Würste und die Entfernung der Clips in einem einzigen Arbeitsgang erfolgen. Vorteilhafterweise kann sich der Steg bis in den Bereich der Rückseite der abgerundeten Kante erstrecken, damit der Clip sicher erfaßt wird. Der Steg kann aus Blech gefertigt oder aber auch durch eine Verdickung des Flügels gebildet sein. zwischen den beiden Würsten 10 und 11 unter gleichzeitiger
Entfernung des Clips 12 möglich. Hierzu ist das Messer 13 mit
drei Flügeln 14, 15, 16 versehen und in Pfeilrichtung 17 durch
eine nicht näher dargestellte Welle einer Wurstschneidemaschine
rotierbar. Die Ausgestaltung der drei Flügel 14, 15, 16 ist
insbesondere Fig. 3 zu entnehmen. Jeder der Flügel 14 - 16
weist eine abgerundete Vorderkante 18 auf, die in eine scharfe
Schneide 19 an der Spitze des Flügels 15 übergeht. An der
Rückseite der Flügel 14 - 16 sind jeweils aus Blech gefertigte
Stege 20 angeordnet, die seitlich über die Schneide 19 sowie
die abgerundete Kante 18 überstehen. Die abgerundete Kante 18
dient dazu, das Messer 13 exakt zwischen den Würsten 10 und 11
zu positionieren, ohne während dieses Positioniervorganges
eine der Würste 10, 11 zu verletzen. Bei der weiteren Drehbewegung
des Messer 13 erfaßt die Schneide 19 das Darmstück
zwischen den beiden Würsten 10, 11 und schneidet dieses durch.
Nach dem Durchtrennen gelangt der Steg 20 in Berührung mit dem
Clip 12 und schlägt diesen vom Wurstende ab. Die dargestellte
Ausführungsform des Messers 13 ist dabei lediglich beispielhaft.
Das Messer 13 könnte auch nur einen Flügel oder aber
auch mehr als drei Flügel aufweisen. Auch die Gestalt der
