Abstract
Description
- La présente invention est relative à une feuille d'emballage souple pour produits sensibles à l'humidité, notamment pour produits fromagers.
- L'emballage de certains produits alimentaires humides tels que les fromages à pâte molle et à croûte fleurie nécessitent, pour assurer une durée de conservation commercialement acceptable, de l'ordre de 42 à 45 jours à compter du jour de l'emballage, un contrôle des échanges d'humidité d'oxygène et d'anhydride carbonique entre le produit emballé et l'environnement, ainsi qu'une absence de condensation indésirable d'eau entre l'emballage et le produit, notamment lors du stockage dans un réfrigérateur ou en chambre froide.
- Un emballage traditionnel pour les fromages en question consiste en une structure bi-couche comprenant à l'intérieur du papier paraffiné ou enduit et à l'extérieur une matière hydrophile à base de cellulose. Cependant, les contraintes économiques et écologiques croissantes conduisent à réduire de plus en plus l'utilisation des matières cellulosiques, qui sont par ailleurs relativement coûteuses, et à les remplacer par des matières plastiques, notamment par du polypropylène. Mais du fait que les matières plastiques sont hydrophobes et imperméables, elles n'assurent pas d'elles-mêmes le contrôle des échanges précités.
- On a donc tenté d'utiliser des films de matière plastique perforée, mais les perforations accélèrent localement le passage de l'humidité et des gaz, et l'on observe rapidement l'apparition de points colorés sur la croûte du fromage.
- Si, au lieu de perforer la matière plastique, on la rend microporeuse, par exemple au moyen d'un rouleau à pointes de diamant ou d'un faisceau laser, on supprime cet inconvénient, mais on ne parvient pas à conserver le produit de façon satisfaisante plus de quatre semaines environ.
- Un problème analogue se pose si l'on veut, pour certaines applications, utiliser pour la couche extérieure de l'emballage, notamment pour des raisons esthétiques, un papier brillant que son traitement a rendu hydrophobe et relativement imperméable.
- L'invention a pour but de fournir une feuille d'emballage souple permettant d'obtenir, malgré la présence d'une membrane extérieure constituée d'une matière hydrophobe, un excellent contrôle des échanges d'humidité et d'autres gaz, ainsi qu'une absence de condensation indésirable d'eau sur le produit emballé.
- A cet effet, l'invention a pour objet une feuille d'emballage souple qui comprend :
- une membrane intérieure hydrophile; et
- une membrane extérieure constituée d'une matière hydrophobe modifiée par un produit hydrorétenteur, cette membrane extérieure étant microporeuse;
- les deux membranes étant collées l'une à l'autre suivant un ensemble de points et/ou de lignes de collage.
- L'emballage suivant l'invention peut comporter une ou plusieurs des caractéristiques suivantes :
- la membrane intérieure comprend du papier traité par exemple par une résine, notamment du papier paraffiné;
- ladite matière hydrophobe comprend un papier rendu hydrophobe, notamment un papier couché ou un papier résistant-humide;
- ladite matière hydrophobe comprend une matière plastique;
- la matière plastique est transparente, notamment du polypropylène, et est revêtue sur sa face intérieure d'un aplat hydrorétenteur;
- l'aplat hydrorétenteur est opaque;
- des impressions informatives et/ou décoratives sont interposées entre la matière plastique transparente et l'aplat;
- le produit hydrorétenteur est incorporé à la matière hydrophobe;
- la membrane extérieure a un taux de microporosité variable;
- le produit hydrorétenteur est déposé en aplat sur la sous-face de ladite matière hydrophobe;
- la membrane intérieure comporte au moins deux feuilles hydrophiles collées l'une à l'autre par des points et/ou des lignes de collage.
- Des exemples de réalisation de l'invention vont maintenant être décrits en regard du dessin annexé, sur lequel :
- la Figure 1 représente schématiquement, en coupe et de façon partiellement éclatée, un emballage souple conforme à l'invention; et
- la Figure 2 est une vue analogue d'un autre mode de réalisation de l'emballage souple suivant l'invention.
- L'emballage souple 1 dont une partie est représentée sur la Figure 1 comprend deux membranes, à savoir une membrane intérieure 2 et une membrane extérieure 3, réunies l'une à l'autre par des lignes et/ou des points de collage 4.
- La membrane intérieure 2 est un papier paraffiné classique formé d'une structure bi-couche, à savoir d'une feuille de papier 5 revêtue sur sa surface intérieure d'une couche de paraffine (ou d'une autre résine appropriée) 6. Une telle membrane est poreuse et hydrophile, et anti-adhérente par rapport au produit avec laquelle elle est en contact. Le traitement du papier par la paraffine permet de contrôler la migration de l'humidité dans cette membrane, et également, avec certaines paraffines ou résines, de contrôler les échanges gazeux de part et d'autre de la membrane, notamment vis-à-vis de l'oxygène et de l'anhydride carbonique.
- La membrane extérieure 3 est monocouche. Elle est constituée d'une matière hydrophobe et imperméable, qui peut être une matière plastique, de préférence un polypropylène, dans laquelle a été incorporé avant ou pendant extrusion un produit hydrorétenteur puis qui a été rendue microporeuse.
- Un exemple de produit hydrorétenteur est une poudre insoluble hydrorétentrice de méthacrylate de soude. Lorsque le film de matière plastique ayant le produit hydrorétenteur incorporé a été extrudé, on le soumet à un traitement qui le rend microporeux. Ce traitement peut être celui décrit plus haut, qui consiste pour l'essentiel à faire passer le film entre deux rouleaux pinceurs dont l'un porte un revêtement à pointes de diamant.
- L'expérience a montré que l'emballage 1 décrit ci-dessus permet de conserver de façon satisfaisante un fromage à pâte molle et à croûte fleurie pendant au moins 42 à 45 jours à compter du jour de l'emballage. On pense que ce résultat est obtenu grâce à la présence combinée de la membrane hydrophile 2, des micropores de la membrane 3, du produit hydrorétenteur au sein de cette dernière et de l'espace libre 7 subsistant entre les deux membranes sur presque toute leur étendue, c'est-à-dire à l'exception des lignes et/ou points de collage 4. En effet, le produit hydorétenteur, étant incorporé à la membrane extérieure, a tendance à éloigner du fromage l'humidité accumulée dans la membrane hydrophile 2, et l'espace 7 constitue un espace-tampon qui protège le fromage des variations de température et d'humidité de l'environnement. Au total, les échanges gazeux entre le fromage et l'environnement sont bien contrôlés, et aucune condensation d'eau indésirable ne se produit entre l'emballage et le produit.
- En variante, la matière plastique de la membrane 3 peut être remplacée par une autre matière hydrophobe et relativement imperméable telle qu'un papier couché ou un papier résistant-humide (dit "papier REH"). Dans ce cas, on ajuste le traitement conférant la microporosité pour tenir compte du caractère déjà légèrement poreux du papier en question.
- Dans l'exemple de réalisation de la Figure 2, la membrane intérieure 2 est la même que précédemment, mais la membrane extérieure 3 est une structure à plusieurs couches comprenant, de l'extérieur vers l'intérieur : un film 8 en matière plastique transparente, notamment en polypropylène, des impressions 9 à 12 informatives et/ou décoratives, symbolisées sur le dessin comme une impression quadrichromie; et un aplat 13, généralement blanc, constitué d'un produit hydrorétenteur tel que la poudre décrite plus haut, mélangée à un agent de collage constitué par de l'éthylcellulose et à un solvant de cet agent constitué par un alcool, et additionnée d'une charge opaque classique.
- Lorsque le film 8 à 13 a été réalisé, il est soumis à un traitement conférant une microporosité comme décrit ci-dessus.
- L'emballage de la Figure 2 présente de nouveau d'excellentes propriétés de conservation des fromages à pâte molle et à croûte fleurie, comme expliqué plus haut.
- Si on le désire, on peut faire varier le degré de microporosité de la membrane 3 d'une zone à l'autre, par exemple pour tenir compte de la superposition de plusieurs épaisseurs d'emballage sur la surface latérale et/ou inférieure du fromage. La microporosité peut également n'être réalisée que dans certaines zones repérées de la membrane 3.
- En variante également, on peut laisser le produit visible, au moins dans certaines zones, en utilisant une membrane 2 transparente et, à titre de produit hydrorétenteur, un produit également transparent ou translucide, par exemple un vernis translucide hydrorétenteur déposé en aplat sur la membrane 3. Un exemple d'un tel vernis est un vernis cellulosique contenant une poudre hydrorétentrice.
- En variante, la membrane intérieure 2 peut être composite. En particulier, la feuille de papier 5 peut être contrecollée par sa face supérieure, par des lignes et/ou des points de collage, à une autre feuille hydrophile telle que du papier kraft.
