Description
- Die Erfindung betrifft Einwickelpapier für insbesondere fetthaltige Lebensmittelprodukte.
- Als fettdichte Einwickel- oder Hüllpapiere zum Einschlagen fetthaltiger Nahrungsmittel, welche das Durchschlagen des Fettes verhüten sollen, sind sogenannte Pergamin- oder Pergamentersatzpapiere bekannt, die z.B. gemäß Winnacker-Weingaertner "Chemische Technologie", Bd. I, S. 606 (1952) aus Sulfitzellstoff nach kurzer H₂SO₄-Behandlung durch schmieriges Ausmahlen im Holländer und starkes feuchtes Glätten als sehr fest gewordenes, meist dünnes Papier erhalten werden. Aufgrund ihrer schlechten Falt- und Wickelfähigkeit und ihres Bestrebens ihre ursprüngliche, flächige Gestalt anzunehmen, sind derartige Pergamentersatzpapiere als leichtes Einwickelpapier ungeeignet.
- Ferner sind aus der DE-C-622 825 wasserdichte Papiere bekannt, die unter Verwendung einer Mischung von Zellulosederivaten mit Kautschuk, Öl, Fett oder Wachs unter Zusatz von organischen Lösungsmitteln hergestellt werden, wobei diese Mischung nach Abtreiben des Lösungsmittels dem Papierstoff zugesetzt und im fertigen Papier durch Druck und Wärme zum Zusammenfließen gebracht wird. Die Herstellung dieser Papiere ist aufwendig, auch sind sie schon wegen etwaiger Lösungsmittelreste nicht zum Verpacken von Lebensmitteln geeignet.
- Wegen der oben erwähnten Nachteile verwendet man allgemein als Einwickelpapier für insbesondere fetthaltige Nahrungsmittel ein- oder beidseitig mit Paraffin beschichtetes Papier, zu dessen Herstellung Flüssigwachs in konventionellen Beschichtungsmaschinen aufgetragen und mit einer Gummiwalze auf eine Beschichtung von etwa 15 g/m reduziert und anschließend gekühlt wird. Paraffinierte Papiere werden von J.P. Casey in "Pulp and Paper; Chemistry and Chemical Technology" 3. Anplage, Band IV 1983, J. Wiley & Sons, New York, Seiten 2533-2547, beschrieben. Abgesehen davon, daß die Auswahl der Paraffine Schwierigkeiten bereitet, weil hartparaffinierte Papiere bei der geringsten Biegung Sprünge erhalten, während weichparaffinierte Papiere nachfetten und namentlich in warmen Zonen oder zu warmen Jahreszeiten nicht zum Einwickeln fettempfindlicher Waren geeignet sind, ist der Einsatz paraffinierter Papiere nach den BGA-Empfehlungen XXV, 183. Mitt. BGesundhBl. 32, 212 (1989) für fetthaltige Lebensmittel, bei denen Fett die äußere Phase bildet, zu vermeiden und wird nach lebensmittelrechtlichen Bestimmungen auszuschließen sein.
- In US-A-2 784 891 wird ein kunststoffbeschichtetes Verpackungspapier für Lebensmittel beschrieben, bei dem die kunststoffbeschichtung durch Zusatz von hydriertem Fett und Gummi modifiziert ist.
- Der Erfindung liegt daher die Aufgabe zugrunde, ein Einwickelpapier vorzuschlagen, das insbesondere für fetthaltige Lebensmittelprodukte geeignet ist, sich auf herkömmlichen Beschichtungsvorrichtungen wirtschaftlich herstellen läßt und die gewünschten mechanischen bzw. physikalischen Eigenschaften aufweist.
- Zur Lösung dieser Aufgabe wird daher ein Einwickelpapier der eingangs erwähnten Art vorgeschlagen, welches gemäß Kennzeichen des Hauptanspruchs ausgebildet ist, wobei besonders bevorzugte Ausführungsformen in den Unteransprüchen aufgeführt sind.
- Überraschenderweise hat sich gezeigt, daß das erfindungsgemäße Einwickelpapier nicht nur in mechanischer und physikalischer Hinsicht, insbesondere hinsichtlich Plastizität und Oxydationsstabilisät den bekannten einseitig mit mikrokristallinem Paraffin beschichteten Einwickelpapieren gleich bzw. überlegen ist, sondern auch lebensmittelrechtlich einwandfrei einsetzbar und im Gegensatz zu paraffiniertem Papier leicht verrottbar und somit umweltfreundlicher ist.
- Das zu beschichtende Ausgangspapier entspricht auch dem Ausgangspapier, wie es bislang zur Herstellung paraffinierten Einwickelpapieres verwendet wurde. Im allgemein werden verhältnismäßig feste Papiersorten mit einem Papiergewicht von 20 bis 60 g/m eingesetzt.
- Zur Beschichtung werden hydrierte Fette, also tierische oder pflanzliche Triglyceride verwendet, die einen Schmelzpunkt bzw. Erstarrungspunkt zwischen 45 bis 62°C haben. Die Beschichtung erfolgt in einer Menge von 10 bis 25 g/m. Besonders geeignete Triglyceride sind solche, die bis auf eine Iodzahl von 0 bis 20 und vorzugsweise 5 bis 10 hydriert worden sind. Besonders bevorzugt sind hydrierte Triglyceride, sowohl pflanzlicher wie tierischer Herkunft oder solche von Gemischen aus tierischen und pflanzlichen Rohölen, bei denen das Gewichtsverhältnis von Stearinsäure zu länger- und kürzerkettigen Fettsäuren im Endprodukt 50:50 bis 80:20 und vorzugsweise 60:40 bis 75:25 beträgt; derartige hydrierte Triglyceride zeigen eine hinreichende Plastizität und führen beim Biegen nicht zu Brüchen.
- Eine zum ein- oder beidseitigen Beschichten des erfindungsgemäßen Einwickelpapieres besonders geeignetes hydriertes Fett wurde nach dem folgenden Beispiel erhalten:
- Es wurden als tierisches Fett 100 kg Schweineschmalz auf bekannte Weise wie bei der Speiseölraffination mit Natronlauge bis auf einen Gehalt an freien Fettsäuren von 0,08 Gew.-% entsäuert. Anschließend wurde das entsäuerte Schweineschmalz in einem Rührautoklaven unter Zusatz von 0,25 Gew.-% eines Nickelkatalysators mit 20 Gew.-% Nickel bei 200°C und einem Druck von 2 bar hydriert, bis das hydrierte Endprodukt eine Jodzahl von 10 aufwies. Anschließend wurde das hydrierte Triglycerid filtriert und mit 0,75 Gew.-% aktiver Bleicherde behandelt und erneut abfiltriert und anschließend bei einer Temperatur von 245°C und einem Druck von 3 mbar im Verlaufe von vier Stunden desodorisiert.
- Das nach Raffination und Härtung erhaltene Fertigprodukt hatte folgende Eigenschaften:
Gehalt an freien Fettsäuren 0,04% Jodzahl etwa 10 Schmelz- bzw. Erstarrungspunkt etwa 52°C/53°C Fettsäurezusammensetzung in Gew.-%: C₁₂ 0,3 C₁₄ 1,7 C₁₆ 28,4 C₁₇ 0,4 C₁₈ 55,2 C18:1 11,9 C₂₀ 1,8 C₂₂ 0,3. - Das nach Beispiel 1 erhaltene hydrierte Fett wurde zur einseitigen Beschichtung eines Ausgangspapieres üblicher Art wie folgt eingesetzt:
- Das hydrierte Fett wurde von einem mit Thermoöl beheizten Vorratsbehälter bei einer Temperatur von etwa 90°C in die Wanne einer Beschichtungsvorrichtung gegeben, wobei das Rohpapier als Rotationsrolle in die Abwicklung dieser Beschichtungsmaschine eingehängt wurde. Die Führung der Papierbahn erfolgte um eine in der Wanne angeordnete Stahlwalze derart, daß lediglich die Außenseite der Papierbahn mit dem flüssigen hydrierten Fett beschichtet wurde. Die aufgetragene Menge an hydriertem Fett wurde mittels einer einstellbaren Gummiwalze auf die gewünschte Menge von etwa 15 bis 18g/m reduziert und anschließend über einen Kühlzylinder geführt. Die erkaltete Papierbahn wurde als Rotationsrolle wieder aufgewickelt und anschließend auf einem Querschneider zu den gewünschten Formaten verarbeitet.
- Die gemäß Beispiel 2 hergestellten Einwickelpapiere zeigten auf der unbeschichteten Seite ihre etwas rauhe Papierstruktur und hatten auf der beschichteten Seite ein glattes Aussehen; die entsprechenden Zuschnitte ließen sich leicht um verschieden geformte Lebensmittelprodukte einschlagen, ohne daß sich Risse in der Beschichtung zeigten; es ergaben sich auch keine erheblichen Rückstellkräfte beim üblichen Einwickeln quaderförmiger Gegenstände.
- Grundsätzlich können die erfindungsgemäßen Einwickelpapiere je nach Anforderung sowohl einseitig wie auch beidseitig beschichtet sein. Selbst nach längerer Lagerung bei Zimmertemperatur zeigten die erfindungsgemäßen Einwickelpapiere eine hervorragende Oxydationsstabilität; sie waren geruchsfrei und führten auch nicht zu einer Beeinträchtigung der mit diesen umhüllten Lebensmittel.
Claims (4)
- Einwickelpapier für insbesondere fetthaltige Lebensmittelprodukte, dadurch gekennzeichnet, daß es auf mindestens einer Oberfläche mit einem hydrierten Fett pflanzlicher und/oder tierischer Herkunft mit einem Schmelzpunkt oder Erstarrungspunkt zwischen 45 bis 62°C in einer Menge von 10 bis 25 g/m beschichtet ist.
- Einwickelpapier nach Anspruch 1, bei dem das hydrierte Fett einen Schmelzpunkt im Bereich von 51 bis 54°C hat.
- Einwickelpapier nach Anspruch 1 oder 2, bei dem in dem hydrierten Fett das Gewichtsverhältnis von Stearinsäure zu länger- und kürzerkettigen Fettsäuren 50:50 bis 80:20 und vorzugsweise von 60:40 bis 75:25 beträgt.
- Einwickelpapier nach einem der Ansprüche 1 bis 3, bei dem das hydrierte Fett eine Jodzahl unter 20 und vorzugsweise im Bereich von 5 bis 10 hat.
