Abstract

The invention relates to a process for making a soluble cocoa product, wherein cocoa powder is subjected to extraction with alcohol, in particular ethanol, and a water extract is obtained from the residue. This water extract is concentrated and has a variety of uses as a soluble cocoa product as a base for beverages, confectionery, ice cream, baked goods etc.
