Abstract

Process for the production of vanillin, characterised in that a culture of Basidiomycete fungus of the genus Pycnoporus or of its variants and mutants is produced in a culture medium to which a benzene-related precursor of vanillin has been added and the vanillin produced by bioconversion of the said precursor is recovered.
