Abstract
Description
The invention relates to a composition and a method for packaging moisture-containing foods. In particular The invention relates to a method for packaging such foods in a way that the shelf life of the food contained therein is extended by a Lactic acid based compound used as a lactic acid source becomes.
Many food products containing moisture, such as meat were against an oxidative taste deterioration and microbial growth during storage vulnerable, especially when the food is not frozen is. Additives are often incorporated into the food tet or applied to the surface of the food to to prevent the microbial growth and thus the hold improve availability.
Lactic acid is too additive due to its safety Food is a substance that is often used as a means of inhibiting the microbial growth has been proposed. To this Lactic acid was used to inhibit microbial growth on meat, including ready-made meat products and Meat products with low fat, poultry and Seafood products, found to be effective. Especially it was found that lactic acid and the salts thereof are one considerable effect on the inhibition of the growth of E. coli, Listeria monocytogenes, penicillin expansum, Saccharomyces cerevisiae, Pseudomonas fluorescens and Have Staphylococcus aureus.
Thus, lactic acid and its derivatives became intense antibacterial agents tested, their use has been to date not widely used. This is partly due to the lack a reliable and economical delivery system that the lactic acid, without substantial costs for the included products can be applied.

As discussed above, such oligomers are described in generally made by dehydrating lactic acid, and the lactide is generally made by thermal cracking of the oligomers to form the corresponding cyclic Diesters (lactide) manufactured. Because of this, it will preferred to use oligomers in which n is even higher than 2 because it contains less water.
It is preferred to use lactide as the hydrolyzable component of the Use packaging material because the material is lighter hydrolyzable and therefore at a given concentration level is more effective. Still, low molecular weight Lactic acid oligomers and mixtures thereof with lactic acid appropriate changes in composition used become.
Solche Materialien umfassen Weichmacher, die von der Federal Food and Drug Administration in 37CFR21, Abschnitte 175.300 und 181.27 aufgelistet sind und folgendes einschließen:Suitable plasticizers for use in the invention are those that are liquid at normal temperatures, one have an atmospheric boiling point of at least 170 ° C and for use as direct food additives moisture-containing foods are permitted. Such Materials include plasticizers made by the Federal Food and Drug Administration in 37CFR21, sections 175.300 and 181.27 are listed and include:
Acetyltributylcitrat, Acetyltriethylctirat, p-tert-Butyl phenylsalicylat, Butylstearat, Butylphthalylbutylglycolat, Butylstearat, Dibutylsebacat, Di-(2-ethylhexyl)-phthalat, Diethylphthalat, Diisobutyladipat, Diisooctylphthalat, Diphenyl-2-ethylhexylphosphat, epoxidiertes Sojaöl, Ethylphthalylethylglycolat, Glycerin, Glycerylmonooleat, Glyceryltriacetatmonoisopropylcitrat, Mono-, Di- und Tristearylcitrat, Propylenglycol, Sorbit, Triacetin- (glycerintriacetat), Triethylcitrat und Triethylenglycol.Acetyltributyl citrate, acetyltriethylctirate, p-tert-butyl phenyl salicylate, butyl stearate, butyl phthalyl butyl glycolate, Butyl stearate, dibutyl sebacate, di (2-ethylhexyl) phthalate, Diethyl phthalate, diisobutyl adipate, diisooctyl phthalate, Diphenyl-2-ethylhexyl phosphate, epoxidized soybean oil, Ethyl phthalyl ethyl glycolate, glycerin, glyceryl monooleate, Glyceryl triacetate monoisopropyl citrate, mono-, di- and Tristearyl citrate, propylene glycol, sorbitol, triacetin (glycerol triacetate), triethyl citrate and triethylene glycol.
At least 5% by weight plasticizers are in the composition needed to adequately diffuse the lactic acid or Lactic acid precursor to the food surface in one sufficient amount to get an antibacterial To achieve effectiveness. On the other hand, shouldn't be more than about 20 wt .-% plasticizer are used so that the physical properties of the film are not disturbed. It is preferred that the plasticizer be used in an amount of 8 up to 15% by weight is available for optimal results. It will however recognized that the optimal amount depending on the physika properties of the lactide polymer, the compound vary greatly based on lactic acid and the plasticizer can.
Because the plasticizer will be intimately dispersed in the polymer must, it should be in the presence of the polymer at room temperature do not crystallize. However, it is preferred that the atmospheric boiling point of the plasticizer about 170 ° C exceeds, however, may be higher to excessive losses by evaporation during polymer processing other. Therefore, it is also preferred that the boiling point of the plasticizer is at least 200 ° C or more. The The decomposition temperature of the plasticizer must of course be higher than the highest processing temperature of the polymer.
The compositions of the invention are easy to use Melt the polymer and mix in the liquid soft machers and the hydrolyzable compound on lactic acid base manufactured under anhydrous conditions. It is important that the composition and components in the are essentially dry since any water present premature hydrolysis of the lactic acid precursor (lactide) leads and also hydrolysis of the lactic acid polymer can cause. The compositions are essentially soluble, and therefore they become easily homogeneous at less Energy supply mixed.
It is recognized that poly (lactic acid) when standing in reverse air can absorb water from the air, which in turn hydrolysis of the lactide or the polymer under Lactic acid formation can result. That's why it's preferred prevent premature hydrolysis of the lactide. Out for this reason the composition should not exceed Contain 1% by weight of either water or lactic acid. It is also preferred that the composition not more than 0.01% water and not more than 0.1% Contains lactic acid.
The antibacterial composition described above is at Room temperature is fixed, but can depend on what is to be protected Food product through a variety of techniques be applied. It can be used as a self-supporting film Enveloping the food. Furthermore, it can can be applied to a suitable polymer substrate, such as on cardboard, polyester or polyolefin, which is then used as a sleeve can be used or it can become a container for the food is molded.
Regardless of which application technology is used it is preferred that the layer be composed of the composite put in contact with the food at least 5 µm (0.2 mil) and preferably 10 µm (0.4 mil) or more in Thickness is. The coating thickness is usually turned on provides the physical properties of the Components and the diffusibility of the connection Lactic acid base from the formulated coating to the life reproduces middle surface. Though thicker layers little advantage is achieved if the Film thickness exceeds approximately 50 µm (2 mil).
To increase the diffusion effect of the lactide or the oligomer facilitate, it is preferred that the moisture-containing Food is covered with a thin layer of water, before applying a coating film or that the Food in a container from the invention Composition is given. Alternatively, the same goal can be achieved by applying a thin layer of water to the film is applied before it is applied to the food or before the food is put into a container is given composition according to the invention.
A series of four tests were carried out to determine the effectiveness of the compositions of the present invention in providing a source of lactic acid by exposing various polylactide compositions to leaching by exposure to an aqueous solution of monobasic potassium phosphate. In particular, 0.6 g of each sample series was cut into small pieces and placed in 6 ml of 0.2 M monobase potassium phosphate solution contained in small glass tubes sealed with lids. The pH of each solution was adjusted with 2N NaOH. Liquid samples containing the leached fraction of each sample were taken at weekly intervals over a period of 7 weeks, and the amount of lactic acid therein was measured by reversed phase HPLC. The data were plotted as a function of time and are shown below in Figures 1-7.
The composition and test conditions of the tested Materials are in Tables 1 and 2 below specified:
Fig. 1 shows that the plasticizer-free PLA / lactide composition (X) provided almost no lactic acid under the conditions of Example 1. On the other hand, the plasticizer-containing compositions (Y and Z) showed lactic acid leaching during the seven-week test period.
Likewise, Fig. 2 shows that the plasticizer-free composition (X) gave almost no lactic acid under the high pH conditions of Example 2. Again, the plasticizer-containing compositions (Y and Z) showed substantial leaching during the seven week test period.
However, at the higher temperature conditions of Examples 3 and 4, FIGS. 3 and 4 show that some lactic acid is leached out of the unplasticized material (X). However, the amount is significantly less than that from the materials containing plasticizers (Y and Z).
FIG. 5 graphically shows the negligible extraction of lactic acid from the plasticizer-free composition X under the conditions of both Example 1 and Example 2. On the other hand, an essential extraction takes place under the conditions of the higher temperature of Examples 3 and 4.
FIGS. 6 and 7 show that the plasticizer-containing compositions of the lactic acid release under all test conditions (Examples 1 to 4) were effective in terms.
In summary, these data show that a very small Formation and migration of lactic acid is obtained when the Polymer / lactide composition no additional softness maker contains. On the other hand, it becomes a very essential one Formation and migration of lactic acid into the surrounding area Preserve liquid if plasticizer is present. In all cases resulted in higher temperature and a higher one pH higher levels of lactic acid in the surrounding Liquid. It was also shown that at all pH values and temperature levels the use of a higher molecular weight Polymers (40,000 v. 20,000) higher yield of lactic acid in of the surrounding fluid.
