Charakteristik des bekannten Standes der TechnikCharacteristic of the known state of the art
Mikroorganismen und den Verfahrensbedingungen wie pH-Wert, Temperatur und Dauer der Hydrolyse ab.Liquid diet foods for patients with maldigestion and / or malabsorption contain amino acid mixtures or protein hydrolysates as protein components. Hydrolysates are increasingly obtained by enzymatic means, because the amino acid pattern of the starting material is retained and no by-products are formed by decomposition of individual amino acids. The nutritional and taste properties of the hydrolysates depend on the raw material, the enzymes or microorganisms used and the process conditions such as pH, temperature and duration of the hydrolysis.
Außerdem liefert Kasein besonders bitter schmeckende Hydrolysate.A disadvantage of diet foods containing protein hydrolyzates, the bad, especially bitter taste of various oligopeptides and amino acids. According to DE-PS 2 226775 you can coat the bad-tasting substances in granulated form with natural or synthetic macromolecular substances. This measure represents an additional expense and is essentially limited to solid mixtures. Another problem is that fats are more difficult to emulsify in aqueous solutions of oligopeptides and amino acids than in solutions of proteins and polypeptides. DD-PS 201377 describes the preparation of a dispersion containing casein hydrolyzate supplemented with amino acids, starch hydrolysates and linoleic acid as fat component. However, only 5 ml = 4.5 g of linoleic acid are used on 87.5 g of peptide-amino acid mixture. In addition, casein provides particularly bitter-tasting hydrolysates.
Ziel der ErfindungObject of the invention
The aim of the invention is to produce a usable in case of lacking or nonexistent digestive power full, sterile and long-term stable liquid Nutritans.
Darlegung des Wesens der ErfindungExplanation of the essence of the invention
The invention solves the problem of developing a method for producing a nutrient dispersion which can be administered orally or by means of a probe. This dispersion is intended to comprise a protein hydrolyzate, carbohydrates, lipids, mineral salts and vitamins in the optimal human nutritional ratio and, if desired, flavoring agents, neither emulsifiers nor preservatives, and having no unpleasant taste. It has been found that a mixture of the following composition satisfies the above requirements: 400 g to 666 g enzymatic whey protein hydrolyzate with 7.5% dry matter, prepared according to the patent-pending process for producing a protein hydrolyzate for dietary purposes (Appl. Reg. No. 552) , 70 g to 95 g of starch hydrolysis product (partial hydrolyzate obtained by a-amylase with a dextrose equivalent of 5% to 8%), 70 g to 95 g of dry syrup, 25 g to 35 g of medium-chain triglyceride mixture and edible oil containing essential fatty acids, mineral salts; In addition, it has been found that a stable emulsion is obtained from said ingredients by first mixing part of the protein hydrolyzate solution with the starch hydrolysates and the lipids, swelling the premix, and then the remainder of the protein hydrolyzate and the other substances added and filled up with water, then sterilized and filled. The long-term stable nutrient emulsion thus obtained contains neither emulsifiers nor preservatives; Their protein content has a favorable amino acid profile for the diet and has no bitter substances. The following example represents a preferred embodiment.
