Verfahren zur Herstellung einer chemisch definierten, emulgatorfreien, oral oder per Sonde zu verabreichenden langzeitstabllen flüssigen Diätnahrung, dadurch gekennzeichnet, daß ein Teil eines aus Eiklarprotein durch enzymatische Hydrolyse gewonnen, in 5 bis 30%iger, vorzugsweise 7,5%iger wäßriger Lösung vorliegenden Proteinhydrolysates, ein Stärkehydrolysenprodukt mit einem Dextroseäquivalent von 5% bis 8%, Trockenstärkesirup und ein essentielle Fettsäuren enthaltendes Speiseöl oder Lipldgemisch miteinander verrührt, einem Quellvorgang überlassen, danach langsam mit dem Rest der Hydrolysatlösung vermischt und unter Zusatz von Mineralsalzen; Spurenelementen sowie ggf. Flüssige Diätnahrungen für Patienten mit Maldigestion und/oder Malabsorption enthalten als Eiweißkomponente Aminosäuregemische oder Proteinhydrolysate. Hydrolysate werden zunehmend auf enzymatischem Wege gewonnen, weil dabei das Aminosäuremuster des Ausgangsmaterials erhalten bleibt und keine Nebenprodukte durch Zersetzung einzelner Aminosäuren gebildet werden. Die ernährungsphysiologischen und geschmacklichen Eigenschaften der Hydrolysate hängen vom Rohstoff, von den verwendeten Enzymen bzw. Mikroorganismen und den Verfahrensbedingungen wie pH-Wert, Temperatur und Dauer der Hydrolyse ab. Nachteilig wirkt sich bei Diätnahrungen, welche Proteinhydrolysate enthalten, der schlechte, vor allem bittere Geschmack verschiedener Oligopeptide und Aminosäuren aus. Gemäß DE-PS 2 226775 kann man die schlecht schmeckenden Stoffe in granulierter Form mit natürlichen odersynthethischen makromolekularen Stoffen überziehen. Diese Maßnahme stellt einen zusätzlichen Aufwand dar und ist im wesentlichen auf feste Mischungen beschränkt. Ein weiteres Problem besteht darin, daß sich Fette schwieriger in wäßrigen Lösungen von Oligopeptiden und Aminosäuren emulgieren lassen als in Lösungen von Proteinen und Polypeptiden. In der DD-PS 201377 wird die Herstellung einer Dispersion beschrieben, die mit Aminosäuren supplementiertes Kaseinhydrolysat, Stärkehydrolysate und als Fettkomponente Linolsäure enthält. Hierbei kommen jedoch auf 87,5g Peptid-Aminosäure-Gemisch nur 5ml = 4,5g Linolsäure zum Einsatz. Die Erfindung löst die Aufgabe, ein Verfahren zur Herstellung einer oral oder per Sonde applizierbaren Nährdispersion zu entwickeln. Diese Dispersion soll ein Proteinhydrolysat, Kohlenhydrate, Lipide, Mineralsalze und Vitamine im für die menschliche Ernährung optimalen Mengenverhältnis sowohl nach Wunsch Geschmacksstoffe umfassen, weder Emulgatoren noch Konservierungsmittel enthalten und keinen unangenehmen Geschmack aufweisen. Es wurde gefunden, daß ein Gemisch folgender Zusammensetzung die vorgenannten Forderungen erfüllt: 400g bis 666g en7vmatisches Eiklarproteinhydrolysat mit 7,5% Trockenmasse, hergestellt nach dem zum Patent angemeldeten Verfahren zur Herstellung eines Eiweißhydrolysales für diätische Zwecke (Anmelder-Reg.-Nr. 553), 70g bis 95g Stärkehydrolysenprodukt (mittels a-Amylase erhaltenes Partialhydrolysat mit einem Dextroseäquivalent von 5% bis 8%), 70g bis 95g Trockenstärkesirup, 25g bis 35g Gemisch aus mittelkettigen Triglyceriden und einem Speiseöl mit einem Gehalt an essentiellen Fettsäuren, Mineralsalzen; Vitamine, Geschmacksstoffe nach Bedarf, Wasser ad 11. Weiterhin wurde gefunden, daß man eine stabile Emulsion aus den genannten Inhaltsstoffen erhält, indem man zunächst einen Teil der Proteinhydrolysatlösung mit den Stärkehydrolysaten und den Lipiden verrührt, die Vormischung quellen läßt und danach den Rest des Proteinhydrolysates sowie die übrigen Substanzen zugibt und mit Wasser auffüllt, dann sterilisiert und abfüllt. Die so erhaltene langzeitstabile Nähremulsion enthält weder Emulgatoren noch Konservierungsmittel; ihr Eiweißanteil besitzt ein für die Ernährung günstiges Aminosäureprofil und weist keine Bitterstoffe auf.
