Abstract
Die Erfindung beinhaltet ein Verfahren zur Herstellung eines granulierten Proteaseproduktes. Sie ist insbesondere anwendbar zur Herstellung von Milchgerinnungsproteaseprodukten. Das Ziel der Erfindung besteht darin, mit geringem technisch-technologischem Aufwand Proteaseprodukte herzustellen, die nicht nur eine gute Enzymstabilitaet, Rieselfaehigkeit und Lagerstabilitaet aufweisen, sondern auch bei Einsatz in der Milchindustrie unkompliziert anwendbar sind. In einem WSG werden 20kg Magermilchpulver (sprühgetrocknet) in einem Luftstrom bewegt und dabei gemischt. Auf den Trägerstoff werden 75I einer Enzymlösung mit einem Trockensubstanzgehalt von 3% aufgesprüht. Die Enzymlösung hat eine Proteaseaktivität von 2000 Milchgerinnungseinheiten/ml. Die Verfahrensparameter im WSG werden so gewählt, daß die Produkttemperatur 40°C beträgt. Dazu wird die Temperatur der Zuluft auf 70...8O0C eingestellt. Die entstehenden Granulate weraen mit 221 einer 40%igen Kalziumchloridlösung besprüht. Anschließend wird das granulierte Proteaseprodukt mit 201 Magermilch, die 250g Natriumbenzoat enthalten, ummantelt und bis auf einen Feuchtegehalt von 2% getrocknet. Auf die wirbelnden Trägerstoffe werden 381 einer Enzymkulturlösung mit einem Trockensubstanzgehnlt von 4% zusammen mit 221 einer 40%igen Kalziumchloridlösung die zusätzlich noch Phosphat- und Zitratsalze enthält, besprüht. Die Enzymkulturlösung hat eine Proteaseaktivität von 4000 Milchgerinnungseinheiten/ml. Die Verfahrensparameter werden so eingestellt, daß die P.odukttemperatur 450C beträgt. Das entstehende granulierte Proteaseprodukt wird mit einer Lösung, die 2 kg Maltodextrin und 200g Natriumsorbat enthält, ummantelt und auf einen Feuchtegehalt von 2% getrocknet. Das granulierte Proteaseprodukt hat eine Enzymaktivität von etwa 10000 Milchgerinnungseinheiten/g.In a WSG 10kg skimmed milk powder (spray dried) and 10kg maltodextrin are agitated in a stream of air and mixed.
