Abstract
Proceso para la fabricación de un producto de pasta, el cual comprende preparar una mezcla de harina de cereal o semolina y agua, la cual tiene un contenido de agua desde 10 hasta 35%, batir la mezcla para obtener una masa y moldear por inyección la masa. Proceso de la reivindicación 1, en el que el cereal es Durum o trigo duro, arroz y/o maíz . Proceso de la reivindicación 1, que comprende además agregar a la mezcla proteína de trigo, harina de trigo suave, materia de huevo, cloruro de sodio y/o especia.Proceso de la reivindicación 1, en el que la masa es calentada hasta una temperatura de inyección desde 30 hasta 150°C. Proceso de la reivindicación 1, en el que la masa es inyectada dentro de medios de moldeo bajo una presión desde 20 hasta 500 MPa. Proceso de la reivindicación 5, en el que la masa es calentada hasta una temperatura de moldeo desde 30 hasta 150°C en los medios de moldeo. Proceso de la reivindicación 5, en el que después de haber sido liberado desde los medios de moldeo, el producto de pasta moldeado es secado hasta un contenido de agua residual desde 4 hasta 13,5% y enfriado.
