Abstract
Un proceso para elaborar un producto de almidón físicamentemodificado, introduciendo en un extruidor, provisto de una placa de molde, materiales iniciales consistentes en un material inicial de almidón y, opcionalmente, una goma y/o un surfactante, y suficiente agua añadida como para elevar el total de humedad a un contenido de humedad de alrededor del 18% a alrededor del 45% por peso, y extruyendo los materiales iniciales y el agua a una temperatura de la placa del molde de 60°C a 140,6°C y una presión de la placa del molde de 1.378,9 a 17.236,8 Kpa. Un proceso para elaborar un producto de almidón físicamente modificado, introduciendo en un extruidor, provisto de una placa de molde, agua añadida seguida de materiales iniciales consistentes en un material inicial de almidón y/o un surfactante, reduciendo gradualmente la cantidad de agua añadida hasta lograr un proceso extrusión continuo de estado permanente, con un contenido total de humedad del 18% al 45%, basándose en el peso del material inicial de almidón, a una temperatura de la placa del molde de 60°C a 140,6°C y una presión de la placa del molde de 1378,9 a 17236,8 Kpa. Una composición de almidón físicamente modificado que consiste en una mezcla heterogénea de partículas de almidón totalmente gelatinizada, parcialmente gelatinizadas y crudas, que poseen una capacidad de hidratación mayor que 5, preferiblemente mayor que 7 y un porcentaje de solubles menor de 1.5%. Una composición de almidón físicamente modificado consistente en una mezcla heterogénea de partículas de almidón totalmente gelatinizadas y crudas, con una capacidad de hidratación mayor que 5, utilizables en una composición hecha de mezcla seca que consiste en ingredientes de una salsa, salsa hecha con el jugo de la carne, aliño ensaladas, mezcla para budín, sopas, acondicionador de masas o bebida.
