Abstract
RESUMEN Un nuevo endulzante funcional que reemplaza por completo los endulzantes tradicionales que comprende estevia –Glicósidos de esteviol o mogrósidos de frutos del monje entre un 0,1-2%, Isomaltitol o isomaltulosa hidrogenada entre un 20-35%, Isomaltulosa monohidratada entre un 34-43%, al menos un fructooligosacarido/oligofructosa/oligofructanos FOS entre 25% - 45% y Dióxido de silicio entre 0,05- 1% y su método de fabricación que comprende la mezcla de dichos ingredientes a una temperatura y humedad controlada entre un 50-60% RH en un mezclador en V para polvos, mezclador de tornillo vertical, un mezclador helicoidal, un mezclador de doble cono o un ribbon mixer.ABSTRACT A new functional sweetener that completely replaces traditional sweeteners that includes stevia – Steviol glycosides or monk fruit mogrosides between 0.1-2%, Isomaltitol or hydrogenated isomaltulose between 20-35%, Isomaltulose monohydrate between 34 -43%, at least one fructooligosaccharide/oligofructose/oligofructans FOS between 25% - 45% and Silicon dioxide between 0.05-1% and its manufacturing method that comprises the mixture of said ingredients at a controlled temperature and humidity between a 50-60% RH in a powder V blender, vertical screw blender, helical blender, double cone blender or ribbon blender.
