本发明涉及一种容器装饮料,其含有(A)非聚合型儿茶素类0.05~0.5重量%;(B)钠0.008~0.033重量%;(C)钾,上述成分(B)和成分(C)的重量比和pH在一定范围内。
Description
技术领域
本发明涉及含有高浓度非聚合型儿茶素类的容器装饮料。
背景技术
据报道,作为儿茶素类的效果有抑制胆甾醇上升作用和阻碍α淀粉酶活性的作用等。为表现出这种生理效果,成人每天需饮用4~5杯茶,为了更简便地大量摄取儿茶素类,人们对在饮料中配合高浓度儿茶素类的技术有所期待。作为该方法之一,有利用绿茶提取物的浓缩物或精制物等将儿茶素类以溶解状态添加到饮料中的方法。
但是,饮用含高浓度非聚合型儿茶素类饮料时,会感到强烈的苦味和涩味,平常饮用很困难。作为减少苦味和涩味的方法,有文献(日本专利第2566801号公报)揭示了配合环状低聚糖等高分子物质的方法。但在含有高浓度非聚合型儿茶素类的饮料中,需要加入大量的环状低聚糖,而一旦加入量过多,反而因低聚糖本身的风味而有损于饮料原有风味。另外,配合了茶提取物的浓缩物或精制物等的饮料,在制造后长期保存时,会产生沉渣或沉淀等,大大损害了外观。现有的茶饮料,特别是绿茶饮料,在保存中产生沉渣或沉淀等,而在配合了绿茶提取物的浓缩物或精制物等的饮料中,外观显著恶化。绿茶饮料的沉渣或沉淀等产生的原因据说是多糖类、蛋白质、多酚类、金属离子等成分形成了复合体。沉渣或沉淀等的生成机理很复杂,迄今为止对此研究了各种对策。例如,据报道,作为着眼于绿茶中的高分子成分的对策有:将通过酶处理形成的高分子复合体的成分分解或使之低分子化来抑制沉淀产生的方法(日本特开平5-328901号,特开平11-308965号公报),和利用超滤膜分离绿茶成分,除去了大部分的分子量1万以上的高分子成分来抑制沉渣产生的方法(特开平4-45744号公报)等。而作为着眼于金属离子的方法,据报道,有通过阳离子交换树脂和随后的微小过滤来抑制水色和浊度的方法(日本特表平11-504224号),和通过预先结合钾离子的阳离子交换树脂实施阳离子交换树脂处理的方法(日本特开平10-165098号)。
发明内容
本发明涉及一种容器装饮料,它含有下述成分(A)、(B)、(C),其中,(A)为非聚合型儿茶素类0.05~0.5重量%;
(B)为钠0.008~0.033重量%;
(C)为钾,
成分(B)和成分(C)的重量比(B/C)为1~330,pH在2以上、小于6.5的范围。
本发明还涉及上述容器装饮料的制造法,该制造法通过将选自绿茶、半发酵茶或发酵茶的原料茶的提取液与绿茶提取物的浓缩物或精制物混合,制成容器装饮料,其特征在于,使该原料茶的提取液和该浓缩物中的任何一种或其混合液、或者该原料茶的提取液和该精制物中的任何一种或其混合液与钠型阳离子交换树脂接触。
具体实施方式
按照现有技术,利用超滤或微小过滤等几乎除去了大部分高分子成分的方法存在下述缺点:茶的滋味成分被大幅度除去;尽管抑制了沉渣或沉淀等,但茶特有的风味变淡了。一旦进行酶处理,因酶本身的味道,将改变茶固有的风味。
本法明涉及含高浓度非聚合型儿茶素类、风味良好、且即使长期保存也不会产生沉渣或沉淀等的容器装饮料。
本发明人等对可维持含有高浓度该非聚合型儿茶素类的容器装饮料的茶特有的风味,且能抑制长期保存时的沉渣、沉淀等进行了各种研究,结果发现,尽管如上述特开平10-165098号所述,儿茶素类浓度低到0.02重量%时,用钠型阳离子交换树脂处理过的绿茶提取液味道不佳,用钾型阳离子交换树脂处理的绿茶提取液的味道良好,但意外的是,在非聚合型儿茶素浓度高达0.05~0.5重量%的茶饮料的情况下,用钠型阳离子交换树脂处理,使钠浓度等于或高于钾浓度,风味和长期保存稳定性两方面都得到改善。
本发明的饮料含有高浓度非聚合型儿茶素类,风味好,并有清凉感,且长期保存下也不会产生沉渣或沉淀等,适合经常饮用。
本发明中的(A)非聚合型儿茶素类是包括儿茶素、棓儿茶素、儿茶素棓酸酯、棓儿茶素棓酸酯等非表体儿茶素类以及表儿茶素、表棓儿茶素、表儿茶素棓酸酯、表棓儿茶素棓酸酯等表体儿茶素类的总称。该非聚合型儿茶素类的浓度基于上述合计8种的合计量而定义。
在本发明的容器装饮料中,作为非聚合体,含有0.05~0.5重量%的处于溶于水中的状态下的非聚合型儿茶素类,优选为0.06~0.5重量%,更优选为0.07~0.5重量%,进一步优选为0.08~0.5%,更进一步优选为0.09~0.5%,再进一步优选为0.092~0.4重量%,又进一步优选为0.11~0.3重量%,特别优选为0.12~0.3重量%。当非聚合型儿茶素类含量在该范围内时,易于轻易地摄取大量的非聚合型儿茶素类,非聚合型儿茶素类易于有效地在体内吸收,且不会产生强烈的苦味、涩味、强收敛性。该非聚合型儿茶素类的浓度可通过绿茶提取物的浓缩物或精制物的配合量进行调整。
本发明的容器装饮料中的非聚合型儿茶素类优选为包括表棓儿茶素棓酸酯、棓儿茶素棓酸酯、表棓儿茶素和棓儿茶素的总称为棓体的物质,与包括表儿茶素棓酸酯、儿茶素棓酸酯、表儿茶素和儿茶素的总称为非棓体的物质的比率维持天然绿茶叶的组成。因此,优选上述4种棓体总量通常高于上述4种非棓体总量,这样,即使在饮料中,也能维持天然绿茶叶的组成。
另外,在非聚合型儿茶素类生理效果的有效性方面,本发明的容器装饮料中包括儿茶素棓酸酯、表儿茶素棓酸酯、棓儿茶素棓酸酯和表棓儿茶素棓酸酯的总称为棓酸酯的物质在全部非聚合型儿茶素类中的比例优选为45重量%以上。
本发明容器装饮料中的(B)钠浓度为0.008~0.033重量%,优选为0.010~0.030重量%,更优选为0.016~0.027重量%,进一步优选为0.018~0.025重量%。当钠少于0.008重量%时,达不到减少饮料苦味和涩味的效果,而当钠高于0.033重量%时,饮用后,钠本身的味道残留在口中,损失了爽快感。而成分(B)和成分(C)的重量比(B/C)为1~330,优选为1.5~300,更优选为1.8~200,进一步优选为2.0~50。当成分(B)和成分(C)的重量比在此范围内时,即使含大量非聚合型儿茶素类,也不会感觉到强烈的苦味和涩味,而形成保持了茶特有风味的饮料。另外,抑制了长期保存时沉渣、沉淀的产生。另一方面,成分(C)多于成分(B)时,饮用后会感到刺激性苦味和涩味,使风味变差。
考虑到非聚合型儿茶素类的化学稳定性,本发明容器装饮料的pH值优选在25℃时为2以上、低于6.5,更优选为3~6.4,进一步优选为5~6.4。
作为提高成分(B)钠的浓度,使成分(B)和成分(C)的重量比处于上述范围内的技术方案,有添加碳酸氢钠等钠盐的技术方案,如此添加钠盐后,pH达到6.5以上,非聚合型儿茶素类的化学稳定性不好,且风味也变差。
在本发明容器装饮料中,还可与来自茶的成分一起,单独或一起配合抗氧化剂、香料、各种酯类、有机酸类、有机酸盐类、无机酸类、无机酸盐类、无机盐类、色素类、乳化剂、防腐剂、调味料、甜味料、酸味料、果汁提取物类、蔬菜提取物类、花蜜提取物类、pH调节剂、品质稳定剂等添加剂。
例如,作为甜味料,可举出砂糖、葡萄糖、果糖、异构糖浆、甘草、蛇菊苷、二肽糖精、低聚果糖、低聚半乳糖等。作为酸味料,除从天然成分中提取的果汁类之外,还可举出柠檬酸、酒石酸、苹果酸、乳酸、富马酸、磷酸。这些酸味料在本发明容器装饮料中的含量为0.01~0.5重量%、优选为0.01~0.3重量%。作为无机酸类、无机酸盐类,可举出磷酸、磷酸二钠、偏磷酸钠、多磷酸钠等。这些无机酸类、无机酸盐类在本发明容器装饮料中的含量为0.01~0.5重量%,优选为0.01~0.3重量%。
本发明容器装饮料优选通过在选自绿茶、半发酵茶或发酵茶的原料茶的提取液中配合绿茶提取物的浓缩物或其精制物而制造。
作为绿茶提取物的浓缩物或精制物,可举出市售三井农林(株)制POLYPHENONTM、伊藤园(株)制TEAFURANTM、太阳化学(株)制SUNPHENONTM等。还可使用这些物质的再精制产物。作为再精制方法,有例如将茶提取物的浓缩物悬浮于水或水和有机溶剂的混合液,再向其中添加有机溶剂,由此可除去生成的沉淀,然后蒸馏除去溶剂的方法。或者,可使用将利用热水或水溶性有机溶剂从茶叶中提取的提取物浓缩后的产物进行再精制而得的精制产物,或者,也可使用直接精制提取后的提取物所得产物。作为该绿茶提取物的浓缩物、精制物等的形态可举出固体、水溶液、浆状等各种形态。
作为用于本发明容器装饮料的原料茶提取液,可举出选自绿茶、半发酵茶和发酵茶的茶提取液。作为半发酵茶,可举出乌龙茶,发酵茶可举出红茶。
作为本发明所使用的绿茶,可举出Camellia属绿茶,例如C.sinensis、C.assamica、薮北种,或由其杂交种得到的茶叶制成的茶叶。该制成的茶叶有煎茶、番茶、玉露、碾烹茶、锅炒茶等绿茶类。
为将本发明容器装饮料的成分(B)和成分(C)的浓度调整到上述范围内,优选使上述原料茶的提取液及上述浓缩物或精制物中任一种或其混合液与钠型阳离子交换树脂接触。本发明中使用的阳离子交换树脂可使用具有磺酸基、羧基、磷酸基等的树脂。具体可举出以甲醛系树脂(diaion)SK1B为代表的SK系列,以甲醛系树脂PK208为代表的PK系列(三菱化学公司制造),以苯酚甲醛离子交换树脂IR116为代表的100号系列(Rohm and Haas公司制造),以DOWEX 50W·X1为代表的W系列(道化学公司制造),以及甲醛系树脂CR10(三菱化学公司制造)等螯合物树脂等,但不仅限于此。这些阳离子交换树脂为钠型时,只要可结合钠离子即可,更具体而言,只要将适当的氯化钠、氢氧化钠等水溶液接触阳离子交换树脂即可。
上述原料或上述混合液与钠型阳离子交换树脂的接触方法可采用间歇式、半间歇式、半连续式或连续式进行,优选将树脂填充到柱内连续地通过。
本发明容器装饮料使用的容器可采用与通常饮料相同的以聚对苯二甲酸乙二醇酯为主要成分的成型容器(即PET瓶)、金属罐、与金属箔或塑料膜复合的纸容器、瓶等通常形态。在本发明中,容器装饮料是指不经稀释就能饮用的饮料。
而本发明的容器装饮料是在例如填充到金属罐之类的容器中后,在能加热杀菌的情况下按食品卫生法规定的杀菌条件制造。而对PET瓶、纸容器等不能蒸馏杀菌的容器,采用的是预先在与上述条件同等的杀菌条件下,用例如板式热交换器等高温短时间杀菌后,冷却到一定温度,再填充到容器中的方法等。另外,也可在无菌条件下配合其它成分,填充到填充容器中。
实施例
非聚合型儿茶素类的测定
用过滤器(0.45μm)过滤,然后将用蒸馏水稀释过的容器装饮料,使用岛津制作所制造的高速液相色谱仪(型号:SCL-10Avp),安装十八烷基导入液相色谱用填充柱L-Column TM ODS(4.6mmΦ×250mm:财团法人化学物质评价研究机构制),在柱温35℃下,使用梯度法测定。移动相A液采用含0.1mol/L乙酸的蒸馏水溶液,B液采用含0.1mol/L乙酸的乙腈溶液,以1.0mL/分的流量输送液体。另外,梯度条件如下所示。

在试料注入量为10μL,UV检测器波长为280nm的条件下进行。钠浓度的测定:采用ICP发光分析法。

保存时的沉渣、沉淀的评价
通过加速保存试验进行了评价。将容器装饮料保存在55℃的培养器中,5天后目测评价了外观。

制造例1
将宫崎产绿茶叶144g加入加热到65℃的离子交换水4.3kg中提取5分钟,然后从提取液中除去茶叶,用热交换器冷却到25℃以下。然后,通过法兰绒过滤除去提取液中的沉淀物和浮游物(法兰绒滤液),在常温下向填充有钠型阳离子交换树脂(甲醛系树脂SK1B)的柱中通入液体。树脂量相对于最终饮料制品为0.25重量%。然后,用圆盘型深层过滤器(ZETA Plus 10C)过滤该提取液。另外,将市售绿茶提取物的浓缩物(三井农林(株)“POLYPHENONTMHG”)100g分散到99.5重量%的乙醇630g中,用10分钟滴加270g水,然后熟化30分钟,用2号滤纸和孔径0.2μm的滤纸过滤,加水200mL,减压浓缩后冻结干燥,得到再精制物。将该再精制物加入此前的提取液中,所得液体稀释后添加维生素C,用碳酸氢钠调节pH为6.2后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
制造例2
将静冈产绿茶叶135g加入加热到65℃的离子交换水4kg中提取5分钟,然后从提取液中除去茶叶,用热交换器冷却到25℃以下。然后在常温下向填充有钠型阳离子交换树脂(甲醛系树脂SK1B)的柱中通入该提取液。树脂量相对于最终饮料制品为0.5重量%。然后向所得液体中加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物,用圆盘型深层过滤器(ZETA Plus 10C)过滤,稀释后加入维生素C,用碳酸氢钠调节pH为6.3后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
制造例3
将静冈产绿茶叶135g加入加热到80℃的离子交换水4kg中提取5分钟,然后从提取液中除去茶叶,用热交换器冷却到25℃以下。向其中加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物,在常温下,向填充有钠型阳离子交换树脂(甲醛系树脂SK1B)的柱中通入该液体。树脂量相对于最终饮料制品为0.5重量%。用圆盘型深层过滤器(ZETA Plus 10C)过滤所得液体,稀释后加入维生素C,用碳酸氢钠调节pH为6.3后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
制造例4
用与制造例1相同的条件得到绿茶提取液的法兰绒滤液。在常温下,向填充有钠型阳离子交换树脂(甲醛系树脂SK1B)柱通入该滤液。树脂量相对于最终饮料制品为0.1重量%。向所得液体中加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物,使儿茶素浓度达到700mg/L,用圆盘型深层过滤器(ZETA Plus 10C)过滤,加入稀释后维生素C,用碳酸氢钠调节pH为6.3后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
参比例1
按照与制造例1相同的条件得到绿茶提取液的法兰绒滤液。将该滤液用圆盘型深层过滤器(ZETA plus 10C)过滤,加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物,稀释后,向所得液体中加入维生素C,用碳酸氢钠调节pH为6.2后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
参比例2
按照与制造例1相同的条件得到绿茶提取液的法兰绒滤液。向该滤液中加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物。向填充了阳离子交换树脂(甲醛系树脂SK1B)的柱中通入5%氯化钾溶液,水洗后,在常温下,通入茶提取液。树脂量相对于最终饮料制品为0.5重量%。所得液体用圆盘型深层过滤器(ZETA Plus10C)过滤,稀释后加入维生素C,用碳酸氢钠调节pH为6.3后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。
参比例3
按照与制造例1相同的条件得到绿茶提取液的法兰绒滤液。将该液体用圆盘型深层过滤器(ZETA Plus 10C)过滤,加入在与制造例1相同条件下再精制市售绿茶提取物的浓缩物后的产物,所得液体稀释后加入维生素C,用碳酸氢钠调节pH为6.7后,UHT杀菌并填充到PET瓶中。该饮料的分析结果及沉渣、沉淀、味道评价结果如表1所示。

在制造例1~4中,加速保存后也未发现沉渣、沉淀,风味也良好。反之,参比例1中能感到刺激性苦味,保存时产生粗大沉渣。参比例2中也能感到强烈的苦味,损害了茶特有的味道。另外,在参比例3中,能感到强烈的碳酸氢钠味,难以饮用。

1.一种容器装饮料,其特征在于,含有下述成分(A)、(B)和(C),其中
(A)为非聚合型儿茶素类0.05~0.5重量%;
(B)为钠0.008~0.033重量%;
(C)为钾,
成分(B)和成分(C)的重量比(B/C)为1~330,pH在2以上、小于6.5的范围。
2.如权利要求1所述的容器装饮料,其特征在于,所述容器装饮料是在选自绿茶、半发酵茶及发酵茶的茶提取液中配合了绿茶提取物的浓缩物或精制物的容器装饮料。
3.如权利要求1或2所述的容器装饮料,其特征在于,所述容器装饮料为绿茶饮料。
4.如权利要求1~3任一项所述的容器装饮料,其特征在于,非聚合型儿茶素类中的棓酸酯的比例为45重量%以上。
5.如权利要求1~4任一项所述的容器装饮料,其特征在于,(B/C)为1.5~300。
6.如权利要求1~5任一项所述的容器装饮料的制造方法,其特征在于,通过将选自绿茶、半发酵茶或发酵茶的原料茶的提取液与绿茶提取物的浓缩物或精制物混合,使所述原料茶的提取液和所述浓缩物中的任何一种或其混合液、或者所述原料茶的提取液和所述精制物中的任何一种或其混合液与钠型阳离子交换树脂接触。
