Abstract
本发明公开一种高膳食纤维植物蛋白棒,含有以下重量比的成分:植物蛋白35‑50份,膳食纤维5‑17份,功能性低聚糖粉3‑10份,糖醇液20‑30份,复合植物油为2‑5份,奇亚籽0‑3份,圆苞车前子壳粉0‑3份,维生素C 0‑1份;维生素B族0‑1份;矿物质盐0‑2份;本发明与现有技术相比,选用优质纯植物蛋白,规避乳糖不耐受人群不能食用牛羊乳制品的问题;降低成本、低碳环保。膳食纤维含量高,热量低,有效降低餐后血糖浓度,增加肠胃蠕动,适合糖尿病患者、便秘患者和减肥人群食用。

技术领域
本发明属于食品及其加工方法技术领域,具体是一种高膳食纤维的植物蛋白棒及其制备方法。
背景技术
蛋白质是组成人体一切细胞、组织的重要成分,机体所有重要的组成部分都需要有蛋白质的参与,蛋白质约占人体全部质量的18%。人体的生长、发育、运动、遗传、繁殖等一切生命活动都离不开蛋白质。蛋白棒现已广泛地应用于运动、健身和户外活动人群,并且经过不断地改进和发展,拥有了便携、口感好、营养丰富等优点,可以进一步发展上班族、学生党、体力劳动者等受众群体作为日常补充能量的零食。但是,目前市场上的蛋白棒只一味追求蛋白质的高含量,并且含有较多的脂肪和糖类,忽略了膳食纤维等成分,营养配比不均衡,不适合糖尿病患者、减肥人士的食用。另外,亚洲乳糖不耐受人群比例高,高比例的动物蛋白添加量更适合欧美国家,却给不能喝牛羊乳的蛋白棒依赖人群带来困扰。
膳食纤维能够辅助调节血糖血脂水平,改善胃肠道消化功能、预防肠道疾病,还具有预防肥胖、调节机体免疫等药理功能。随着生活条件变好,日常饮食愈加精致化,缺乏膳食纤维的摄入,大量人群常年处于亚健康状态。在蛋白棒中添加一定比例的膳食纤维,可以弥补饮食不均衡的不足,对糖尿病患者、便秘患者和减肥人士友好。
纯植物蛋白棒可以给人们提供更多的蛋白质获取渠道,且植物蛋白的吸收效用更好,在一定程度上可以增加人们的蛋白质摄取量,从而提高身体机能,维护机体健康,更重要的是可以规避乳糖不耐受人群不能食用牛羊乳制品的问题,适用人群广泛,降低成本、低碳环保。
发明内容
鉴于上述现有技术的不足之处,本发明的目的在于提供一种高膳食纤维植物蛋白棒及其制备方法。有助于解决现有蛋白棒营养成分配比不平衡,膳食纤维含量不足,动物蛋白不能满足乳糖不耐受人群的需求等问题。
为了达到上述目的,本发明采取了以下技术方案:
本发明提供一种高膳食纤维植物蛋白棒,含有以下重量百分比的成分:植物蛋白35-50份,膳食纤维5-17份,功能性低聚糖粉3-10份,糖醇液20-30份,复合植物油为2-5份,奇亚籽0-3份,圆苞车前子壳粉0-3份,维生素C 0-1份;维生素B族0-1份;矿物质盐0-2份。
所述植物蛋白包括大豆蛋白、玉米蛋白、椰子蛋白、杏仁蛋白、藜麦蛋白中的任意一种或两种以上的组合。
所述膳食纤维包括菊粉膳食纤维、小麦糊粉层、柑橘纤维中的任意一种或两种以上的组合。
所述功能性低聚糖粉包括低聚半乳糖、低聚异麦芽糖、低聚木糖中的任意一种或两种以上的组合。
所述糖醇液包括山梨糖醇,麦芽糖醇,赤藓糖醇或木糖醇中的任意一种或两种以上的组合。
所述复合植物油包括椰子油和奇亚籽油。
所述植物蛋白为粉末状固体,目数为80-120目。
所述高膳食纤维植物蛋白棒的制备方法,包括如下步骤:
1)粉碎。用超微粉碎机将植物蛋白、奇亚籽和圆苞车前子壳进行粉碎,粉碎时间2-3min;
2)过筛。用80~120目的筛子将粉碎后的植物蛋白粉、奇亚籽粉和圆苞车前子壳粉过筛,再将膳食纤维、低聚糖粉、维生素C、维生素B族、矿物质盐过筛,收集筛下物;
3)预混。将过筛后的低聚糖粉、维生素C、维生素B族、矿物质盐与粉碎过筛后的植物蛋白粉、奇亚籽粉、圆苞车前子壳粉按配料比例预混;
4)混液加热。将复合植物油与糖醇液按比例混合置于80-100℃条件下加热并搅拌均匀,将搅拌均匀后的液体倒入搅拌机中,高速搅拌使其乳化;
5)混料。将步骤3)所得预混物倒入上述搅拌机,搅拌均匀,得到料团;
6)挤出成型。将料团挤压并切割成条,每条的体积长×宽×高为8.0cm×1.5cm×0.8cm。
本发明的有益之处在于:
1)本发明的蛋白棒蛋白质成分为纯植物蛋白,来源广泛,成本低,低碳环保,但在营养价值上可与动物蛋白等同,氨基酸组成配比合理,蛋白的利用率高,低过敏性(较乳清蛋白),不含任何抗营养因子,适用人群范围广。
2)本发明的蛋白棒膳食纤维含量较高,营养配比更均衡,为居民补充日常饮食中缺乏的膳食纤维,增加饱腹感,对糖尿病、便秘、减肥人士友好。
3)本发明的蛋白棒添加的功能性低聚糖是一类益生元,能促进肠道内益生菌增殖,改善肠道微生态,调节免疫力,并且丰富蛋白棒口感和风味。
4)本发明的蛋白棒所用糖醇液具有低热量、非龋齿性、难消化性,不使血糖升高,不增加胆固醇,为疗效食品的理想甜味剂,也是本发明技术方案中理想的蛋白颗粒粘合剂。
5)本发明的蛋白棒所用复合植物油富含中链脂肪酸,相对于普通油脂长链脂肪酸分子量小,可被人体快速消化吸收,避免脂肪在体内囤积,同时减少身体对碳水化合物的需求,从而预防肥胖。
6)本发明的蛋白棒添加奇亚籽、圆苞车前子壳、维生素C、维生素B族、矿物质盐等富含必须脂肪酸、必须维生素、矿物质和膳食纤维,为运动人群和亚健康人群补充功能性营养物质。
具体实施方式
以下描述中的优选实施例只作为举例,本领域技术人员可以想到其他显而易见的变型。在以下描述中界定的本发明的基本原理可以应用于其他实施方案、变形方案、改进方案、等同方案以及没有背离本发明的精神和范围的其他技术方案。
实施例1
(1)粉碎。用超微粉碎机将大豆蛋白15份、玉米蛋白5份、椰子蛋白10份、奇亚籽3份和圆苞车前子壳3份进行粉碎,粉碎时间2min;
(2)过筛。用80目的筛子将粉碎后的大豆蛋白粉、玉米蛋白粉、椰子蛋白粉、奇亚籽粉和圆苞车前子壳粉过筛,再将10份菊粉膳食纤维、7份小麦糊粉层、2份低聚半乳糖、1份低聚异麦芽糖、1份维生素C、1份维生素B族、2份矿物质盐过筛,收集筛下物;
(3)预混。将过筛后的低聚半乳糖、低聚异麦芽糖、维生素C、维生素B族、矿物质盐与粉碎过筛后的大豆蛋白粉、玉米蛋白粉、椰子蛋白粉、奇亚籽粉、圆苞车前子壳粉按配料比例预混;
(4)混液加热。将2份椰子油、2份奇亚籽油与10份山梨糖醇液、15份麦芽糖醇液混合,置于80℃条件下加热并搅拌均匀,将搅拌均匀后的液体倒入搅拌机中,高速搅拌使其乳化;;
(5)混料。将步骤3)所得预混物倒入上述搅拌机,搅拌均匀,得到料团;
(6)挤出成型。将料团挤压并切割成条,每条的体积长×宽×高为8.0cm×1.5cm×0.8cm。
实施例2
(1)粉碎。用超微粉碎机将大豆蛋白20份、玉米蛋白15份、杏仁蛋白10份、奇亚籽2份进行粉碎,粉碎时间3min;
(2)过筛。用100目的筛子将粉碎后的大豆蛋白粉、玉米蛋白粉、杏仁蛋白粉、奇亚籽粉过筛,再将8份菊粉膳食纤维、5份柑橘膳食纤维、5份低聚半乳糖、5份低聚木糖、1份维生素B族、2份矿物质盐过筛,收集筛下物;
(3)预混。将过筛后的低聚半乳糖、低聚异麦芽糖、维生素C、维生素B族、矿物质盐与粉碎过筛后的大豆蛋白粉、玉米蛋白粉、椰子蛋白粉、奇亚籽粉、圆苞车前子壳粉按配料比例预混;
(4)混液加热。将3份椰子油、2份奇亚籽油与10份赤藓糖醇液、10份木糖醇液混合,置于90℃条件下加热并搅拌均匀,将搅拌均匀后的液体倒入搅拌机中,高速搅拌使其乳化;;
(5)混料。将步骤3)所得预混物倒入上述搅拌机,搅拌均匀,得到料团;
(6)挤出成型。将料团挤压并切割成条,每条的体积长×宽×高为8.0cm×1.5cm×0.8cm。
实施例3
(1)粉碎。用超微粉碎机将大豆蛋白25份、玉米蛋白15份、藜麦蛋白5份、圆苞车前子壳2份进行粉碎,粉碎时间3min;
(2)过筛。用100目的筛子将粉碎后的大豆蛋白粉、玉米蛋白粉、椰子蛋白粉、圆苞车前子壳粉过筛,再将1份柑橘膳食纤维、4份小麦糊粉层、5份低聚木糖、3份低聚异麦芽糖、1份维生素C过筛,收集筛下物;
(3)预混。将过筛后的低聚半乳糖、低聚异麦芽糖、维生素C、维生素B族、矿物质盐与粉碎过筛后的大豆蛋白粉、玉米蛋白粉、椰子蛋白粉、奇亚籽粉、圆苞车前子壳粉按配料比例预混;
(4)混液加热。将1份椰子油、1份奇亚籽油与15份赤藓糖醇液、15份麦芽糖醇液混合,置于120℃条件下加热并搅拌均匀,将搅拌均匀后的液体倒入搅拌机中,高速搅拌使其乳化;;
(5)混料。将步骤3)所得预混物倒入上述搅拌机,搅拌均匀,得到料团;
(6)挤出成型。将料团挤压并切割成条,每条的体积长×宽×高为8.0cm×1.5cm×0.8cm。
通过以下实验,考察和分析了所述高膳食纤维植物蛋白棒的餐后血糖波动和饱腹感状态。
每组挑选20位30岁男性,体重80±2KG,早上7点半进食早餐,蛋白棒食用时间9点半,中午12点半进食,下午2点半食用蛋白棒,每次食用2支,蛋白棒单支25±2g。以葡萄糖作为对照例,食用蛋白棒和葡萄糖后每隔15min测一次血糖浓度。
图1为实施例1和对照例蛋白棒和葡萄糖餐后两小时的血糖应答。对照例所食用葡萄糖为典型高GI食物,出现血糖浓度的快速上升与快速下降,且最高浓度远大于实施例。在前60min所述高膳食纤维植物蛋白棒的血糖曲线浓度明显低于葡萄糖,后60min的血糖浓度则较高于葡萄糖,且呈现出缓慢上升又缓慢下降的趋势;其中60min时间点成为高膳食纤维植物蛋白棒餐后2小时血糖波动的最低点。
本领域的技术人员应理解,上述描述及附图中所示的本发明的实施例只作为举例而并不限制本发明。本发明的目的已经完整并有效地实现。本发明的功能及结构原理已在实施例中展示和说明,在没有背离所述原理下,本发明的实施方式可以有任何变形或修改。
Claims (8)
1.一种高膳食纤维植物蛋白棒,其特征在于含有以下重量比的成分:植物蛋白35-50份,膳食纤维5-17份,功能性低聚糖粉3-10份,糖醇液20-30份,复合植物油为2-5份,奇亚籽0-3份,圆苞车前子壳粉0-3份,维生素C 0-1份;维生素B族0-1份;矿物质盐0-2份。
2.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述植物蛋白包括大豆蛋白、玉米蛋白、椰子蛋白、杏仁蛋白、藜麦蛋白中的任意一种或两种以上的组合。
3.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述膳食纤维包括菊粉膳食纤维、小麦糊粉层、柑橘纤维中的任意一种或两种以上的组合。
4.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述功能性低聚糖粉包括低聚半乳糖、低聚异麦芽糖、低聚木糖中的任意一种或两种以上的组合。
5.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述糖醇液包括山梨糖醇,麦芽糖醇,赤藓糖醇或木糖醇中的任意一种或两种以上的组合。
6.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述复合植物油包括椰子油和奇亚籽油。
7.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:所述植物蛋白为粉末状固体,目数为80-120目。
8.根据权要求1所述的高膳食纤维植物蛋白棒,其特征在于:制备方法包括如下步骤:
1)粉碎:用超微粉碎机将植物蛋白、奇亚籽和圆苞车前子壳进行粉碎,粉碎时间2-3min;
2)过筛:用80~120目的筛子将粉碎后的植物蛋白粉、奇亚籽粉和圆苞车前子壳粉过筛,再将膳食纤维、低聚糖粉、维生素C、维生素B族、矿物质盐过筛,收集筛下物;
3)预混:将过筛后的低聚糖粉、维生素C、维生素B族、矿物质盐与粉碎过筛后的植物蛋白粉、奇亚籽粉、圆苞车前子壳粉按配料比例预混;
4)混液加热:将复合植物油与糖醇液按比例混合置于80-100℃条件下加热并搅拌均匀,将搅拌均匀后的液体倒入搅拌机中,高速搅拌使其乳化;
5)混料:将步骤3)所得预混物倒入上述搅拌机,搅拌均匀,得到料团;
6)挤出成型:将料团挤压并切割成条,每条的体积长×宽×高为8.0cm×1.5cm×0.8cm。
