Abstract
本发明的有机豆基婴儿配方粉及制备方法属于豆基配方粉加工技术领域。该配方粉由有机大豆粉、大豆分离蛋白、OPO结构油脂等复合油脂、麦芽糊精、蔗糖、低聚果糖、复配维生素、复配矿物质、m‑肌醇、牛磺酸、左旋肉碱等混配而成。本发明采用有机大豆粉,其能保持大豆原有的营养价值,且含有优质蛋白、矿物质和微量元素,使营养更加全面,有利于实现人体营养价值的平衡。有机大豆粉中包含人体自身无法合成的赖氨酸和色氨酸等9种必需氨基酸,且更容易被婴儿吸收;本发明以有机豆基豆粉作为蛋白质主要来源之一,不含乳蛋白与乳糖,实现了低钾和低镁,对患牛奶过敏、半乳糖血症和乳糖不耐等症状的婴儿提供优质选择,具有较好的促进生长发育功效。

本发明涉及一种有机豆基婴儿配方粉及其制备方法,属于豆基配方粉加工技术领域。
背景技术:
婴儿为保证自身的正常生长发育和各项生命活动,出生后必须摄取与自身生长发育相适应的营养物质。母乳正是为满足新生儿的生长发育而量身定做的食物。当前影响母乳喂养能力的因素较多,其中包括生理、文化背景、经济、医疗以及环境等多种因素。在某些情况下,母乳喂养不足或不能进行母乳喂养,开发与母乳成分相近的婴儿配方粉至关重要。世界上约有0.3%-7.5%的婴儿会出现不同程度的牛奶蛋白过敏现象。同时母乳和乳基婴儿配方粉中乳糖含量高达40%-50%,以肠道乳糖酶缺乏所导致的乳糖不耐受症状是慢性腹泻病常见的病因,在我国患有不同程度乳糖不耐受的婴儿可达30%。因此研制不含乳糖的豆基婴儿配方粉对患有牛奶蛋白过敏和乳糖不耐受的婴儿具有重要意义。
2012年有学者提出“全食物研究”概念,即整个食物中的植物化学物共同对健康起作用。Nair和Migliozzi等人也研究证明豆类所含有的蛋白质、脂肪和矿物质等成分对人类健康有益。当前豆基婴儿配方粉是以大豆分离蛋白为主要蛋白源,添加满足婴儿所需的脂肪、碳水化合物、维生素、矿物质和其他营养成分生产加工制成的粉状婴儿食品,可作为母乳代替产品。通过干/湿法生产的有机大豆粉能保持大豆原有的营养价值,且含有优质植物蛋白、矿物质和微量元素,使营养更加全面,有利于实现人体营养价值的平衡。同时有机大豆粉包含人体自身无法合成的赖氨酸和色氨酸等9种必需氨基酸,属于全价蛋白,且更容易被婴儿吸收,是一类潜在的豆基婴儿配方粉主原料成分。
目前我国婴儿配方粉中通过添加脱盐乳清粉来实现母乳化。而由于我国干酪生产能力欠缺,乳清粉仍需大量进口,成本颇高。有机豆基婴儿配方粉中大豆蛋白即有效的解决这一问题,制作成本更加低廉。又同时对我国大豆产业实现促进。

本发明所要解决的技术问题是克服上述现有技术的不足,提供一种有机豆基婴儿配方粉及其制备方法。
本发明所要解决的技术问题是通过以下技术方案来实现:
一种有机豆基婴儿配方粉,其特征在于,按照其质量分数为:大豆分离蛋白500~1500、有机大豆粉500~1500、碳水化合物4000~6000、混合食用植物油(含1,3-二油酸2-棕榈酸甘油三酯)2250~2700、维生素45~75、矿物质预混料150~350、氯化胆碱2~8、m-肌醇1.5~5、左旋肉碱0.5~2、牛磺酸3~8、低聚果糖20~60。
优选制备原料的组分按照质量分数由如下原料组成:大豆分离蛋白粉800~1200、有机大豆粉550~800、碳水化合物5000~5600、混合食用植物油(含1,3-二油酸2-棕榈酸甘油三酯)2300~2500、维生素预混料55~70、矿物质预混料200~300、氯化胆碱4.18~6.22、m-肌醇2.47~3.70、左旋肉碱0.96~1.44、牛磺酸4.68~7.02、低聚果糖45~55。
有机大豆粉的基本化学成分为:蛋白质41.00g/100g;脂肪25.00g/100g;碳水化合物24.5g/100g;水4g/100g;维生素E 26.38μg/100g;维生素K 134.50mcg/100g;硫胺素(维生素B1)261.00mcg/100g;核黄素(维生素B2)365.00mcg/100g;生物素3.67mcg/100g;钙76.80mg/100g;磷838.00mg/100g;镁301.00mg/100g;铁5.85mg/100g;锌4.40mg/100g;锰3837.00mcg/100g;铜1525.00mcg/100g;碘18.00mcg/100g;钠191.00mg/100g;钾3170.00mg/100g;氯270.00mg/100g。
大豆分离蛋白的基本化学成分为:蛋白质85g/100g;碳水化合物3.4g/100g;锰1536.00mcg/100g;钠0.64mg/100g。
制备每100g有机豆基婴儿配方粉维生素组分及添加量:醋酸维生素A270.8~406.16μgRE、β-胡萝卜素1402~2103.24μg、dl-α-醋酸生育酚3.99~6.00mg-α-TE、植物甲萘醌46.18~69.03μg、盐酸硫胺素0.28~0.42mg、核黄素0.41~0.61mg、盐酸吡哆醇0.34~0.51mg、氰钴胺2.48~3.72mg、L-抗坏血酸钠128.06~192.08mg、烟酰胺2.08~3.36mg、叶酸120.05~180.07μg、D-泛酸钙3.70~5.55mg、D-生物素22.89~34.33μg、胆钙化醇9.0~13.51μg。
制备每100g有机豆基婴儿配方粉矿物质组分及添加量:硫酸亚铁5.87~7.95mg、硫酸锌4.25~5.75mg、硫酸铜0.39~0.54mg、碘化钾85.07~115.09μg、***钠9.61~14.42μg、磷酸氢钙428.97~580.37mg、碳酸钙179.29~242.56mg、柠檬酸钠17~23mg、氯化钠290.1~551mg、柠檬酸钾89.23~128.3mg。
一种有机豆基婴儿配方的制备方法,其特征在于,包括以下步骤:
配料:首先将有机大豆粉、大豆分离蛋白粉溶于50℃左右水中充分搅拌,升温至72~75℃并加入混合食用植物油有机结构油脂1,3-二油酸,2-棕榈酸甘油三酯、碳水化合物,用预留水将复合维生素、矿物盐分别溶解后,加入到溶液中,充分搅拌均匀。
均质:使用均质机前应做好均质机的清洗杀菌工作,均质温度40-50℃,均质压力15-20Mpa。
杀菌:杀菌温度90~95℃、杀菌时间10~15s
喷雾干燥:将进风口温度控制在185℃,出风口温度控制在90℃。
包装:排气彻底,确保封口严密。

本发明采用有机大豆粉含有人体必需氨基酸,属全价蛋白易被人体吸收,有机大豆粉脂肪胆固醇含量少卵磷脂较多,富含亚麻油酸及亚麻油稀酸,具有降低胆固醇提高神经***的发育的作用;采用营养复配技术实现功能性成分强化的高度母乳化稳定型的有机豆基婴儿配方奶粉;基于有机豆基婴儿配方奶粉基础营养成分的酸碱缓释能力,强化结构油脂;采用纯豆基不含乳蛋白与乳糖,使制作成本更加低廉,对患牛奶过敏、半乳糖血症和乳糖不耐等症状的婴儿提供优质选择。

本实施例生产100g有机豆基婴儿配方粉由以下组分及重量百分比混配制成:大豆分离蛋白10g、有机大豆粉6.42g、碳水化合物54.91g、混合食用植物油18.17g、有机结构油脂1,3-二油酸2-棕榈酸甘油三酯6.44g、维生素0.6g、矿物质1.7g、氯化胆碱52.15mg、m-肌醇30.8mg、左旋肉碱12mg、牛磺酸58.51mg、低聚果糖500mg。
混合植物油中各组分及重量百分配比为:大豆油、葵花料油、椰子油混配而成,且满足亚油酸与亚麻酸的比例为9~10:1。
碳水化合物中各组分及重量百分配比为:蔗糖15%,麦芽糊精85%。
制备每100g有机豆基婴儿配方粉维生素组分及添加量:醋酸维生素A338.33μgRE、β-胡萝卜素1752μg、dl-α-醋酸生育酚5mg-α-TE、植物甲萘醌57.5μg、盐酸硫胺素0.35mg、核黄素0.51mg、盐酸吡哆醇0.43mg、氰钴胺3.1mg、L-抗坏血酸钠160mg、烟酰胺2.8mg、叶酸150μg、D-泛酸钙4.62mg、D-生物素28.6μg、胆钙化醇11.25μg。
制备每100g有机豆基婴儿配方粉矿物质组分及添加量:硫酸亚铁6.91mg、硫酸锌5mg、硫酸铜0.47mg、碘化钾100.08μg、***钠12.02μg、磷酸氢钙586.47mg、碳酸钙128mg、柠檬酸钠19.97mg、氯化钠430mg、柠檬酸钾115.2mg。
制备方法步骤为:

混合植物油中各组分及重量百分配比为:大豆油、葵花料油、椰子油混配而成,且满足亚油酸与亚麻酸的比例为9~10:1。
碳水化合物中各组分及重量百分配比为:蔗糖15%,麦芽糊精85%。

制备每100g有机豆基婴儿配方粉矿物质组分及添加量:硫酸亚铁6.91mg、硫酸锌5mg、硫酸铜0.47mg、碘化钾100.08μg、***钠12.02μg、磷酸氢钙586.47mg、碳酸钙128mg、柠檬酸钠19.97mg、氯化钠430mg、柠檬酸钾115.2mg。
制备方法步骤为:
配料:首先将有机大豆粉、大豆分离蛋白粉溶于50℃左右水中充分搅拌,升温至72~75℃并加入混合食用植物油有机结构油脂1,3-二油酸2-棕榈酸甘油三酯、碳水化合物,用预留水将复合维生素、矿物盐分别溶解后,加入到溶液中,充分搅拌均匀。
均质:使用均质机前应做好均质机的清洗杀菌工作,均质温度40-50℃,均质压力15-20Mpa。
杀菌:杀菌温度90~95℃、杀菌时间10~15s
喷雾干燥:将进风口温度控制在185℃,出风口温度控制在90℃。
包装:排气彻底,确保封口严密。

Claims (6)
1.一种有机豆基婴儿配方粉,其特征在于,按照其质量分数为:大豆分离蛋白500~1500、有机大豆粉500~1500、碳水化合物4000~6000、混合食用植物油(含1,3-二油酸2-棕榈酸甘油三酯)2250~2700、维生素45~75、矿物质预混料150~350、氯化胆碱2~8、m-肌醇1.5~5、左旋肉碱0.5~2、牛磺酸3~8、低聚果糖20~60。
2.根据权利要求1所述的一种有机豆基婴儿配方粉,其特征在于,按照质量分数由如下原料组成:大豆分离蛋白粉800~1200、有机大豆粉550~800、碳水化合物5000~5600、混合食用植物油(含1,3-二油酸2-棕榈酸甘油三酯)2300~2500、维生素预混料55~70、矿物质预混料200~300、氯化胆碱4.18~6.22、m-肌醇2.47~3.70、左旋肉碱0.96~1.44、牛磺酸4.68~7.02、低聚果糖45~55。
3.根据权利要求1或2所述的有机豆基婴儿配方粉,其特征在于,有机大豆粉的基本化学成分为:蛋白质41.00g/100g;脂肪25.00g/100g;碳水化合物24.5g/100g;水4g/100g;复合维生素764.20mcg/100g;矿物质:1386.00mg/100g;镁301.00mg/100g;钾3170.00mg/100g。
4.根据权利要求1或2所述的有机豆基婴儿配方粉,其特征在于,大豆分离蛋白的基本化学成分为:蛋白质85g/100g;碳水化合物3.4g/100g;锰1536.00mcg/100g;钠0.64mg/100g。
5.根据权利要求1或2所述的有机豆基婴儿配方粉,其特征在于,每100g有机豆基婴儿配方粉维生素组分及添加量:醋酸维生素A270.8~406.16μgRE、β-胡萝卜素1402~2103.24μg、dl-α-醋酸生育酚3.99~6.00mg-α-TE、植物甲萘醌46.18~69.03μg、盐酸硫胺素0.28~0.42mg、核黄素0.41~0.61mg、盐酸吡哆醇0.34~0.51mg、氰钴胺2.48~3.72mg、L-抗坏血酸钠128.06~192.08mg、烟酰胺2.08~3.36mg、叶酸120.05~180.07μg、D-泛酸钙3.70~5.55mg、D-生物素22.89~34.33μg、胆钙化醇9.0~13.51μg。
6.根据权利要求1或2所述的有机豆基婴儿配方粉,其特征在于,每100g有机豆基婴儿配方粉矿物质组分及添加量:硫酸亚铁5.87~7.95mg、硫酸锌4.25~5.75mg、硫酸0.39~0.54mg、碘化钾85.07~115.09μg、***钠9.61~14.42μg、磷酸氢钙428.97~580.37mg、碳酸钙179.29~242.56mg、柠檬酸钠17~23mg、氯化钠290.1~551mg、柠檬酸钾89.23~128.3mg。
