技术领域
本发明涉及功能性食品领域,具体涉及一种具有润肠通便功效的果味果冻及其制备方法。
背景技术
随着经济水平的发展和生活水平的提高,人们生活节奏的加快,生活水平的提高,人们在出行方面普遍选择乘坐汽车,以车为代步工具,在饮食方面一些快捷的高热量高脂肪的快餐摄入也越来越多,由于生活节奏的加快,运动的时间在不断的被压缩,所以给人们的身体代理很多负面影响,如便秘、消化不良等,久而久之会对人体造成伤害。
《2018国人肠道健康***》显示我国成人存在便秘问题的比例达到47.6%;我国肠道疾病的发病率仅次于感冒,其中75%为便秘,每年有超过10亿人次发生腹泻或便秘。便秘不止能导致皮肤暗黄、色斑、口臭等问题,更严重的将诱发心脑血管疾病,诱发癌症甚至可导致死亡。因此,缓解便秘、维持肠道正常,对人类健康至关重要。
现有技术中多采用药物来治疗便秘,而药物治疗会使身体会产生依赖性,一旦停用反而会加重,且是药三分毒,药物或多或少对人体健康具有一定的损害作用。因此,开发一款能够安全有效的缓解便秘、并能达到长期调理健康的功能性食品成为一项亟待解决的技术问题。
发明内容
针对现有技术中存在的问题,本发明的目的在于提供一种具有润肠通便功效的果味果冻及其制备方法,该润肠通便果味果冻在具有便秘情况的人群中有效率达85%以上,包括排便次数增加、排便量增加、排便更顺畅、腹胀感消失等体感,原料绿色天然,无副作用,适宜长期服用,口感酸甜适中,便于携带;其制备方法简单,易操作实施,适用于企业规模化生产。
为了达到上述目的,本发明采用以下技术方案予以实现。
(一)一种具有润肠通便功效的果味果冻,包括以下原料:山楂、乳糖醇、聚葡萄糖、荷叶粉、绿咖啡粉、银耳粉、金银花粉、低聚甘露糖、魔芋粉、复配果冻粉、水。
优选的,所述复配果冻粉包含氯化钾、乳酸钙和卡拉胶。
优选的,所述原料的用量为:山楂100-250份、乳糖醇50-200份、聚葡萄糖50-200份、荷叶粉100-250份、绿咖啡粉50-150份、银耳粉100-150份、金银花粉50-80份、低聚甘露糖25-50份、魔芋粉50-100份、复配果冻粉0.8-2.5份、水200-700份。
进一步优选的,所述复配果冻粉包含氯化钾0.2-1份、乳酸钙0.2-0.5份和卡拉胶0.4-1份。
进一步优选的,所述原料的用量为:山楂200份、乳糖醇100份、聚葡萄糖80份、荷叶粉100份、绿咖啡粉50份、银耳粉100份、金银花粉50份、低聚甘露糖25份、魔芋粉50份、复配果冻粉1份、水250份。
进一步优选的,所述复配果冻粉包含氯化钾0.2份、乳酸钙0.2份和卡拉胶0.6份。
(二)一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取山楂,洗净去除杂质,煎煮,过滤,减压浓缩,得清膏,备用;
步骤2,向所述清膏中加入乳糖醇、聚葡萄糖、荷叶粉、绿咖啡粉、银耳粉、金银花粉、低聚甘露糖和魔芋粉,混匀,再加入水、复配果冻粉,搅拌混匀,过滤,得滤液;
步骤3,对所述滤液进行密封,灭菌,包装,得具有润肠通便功效的果味果冻。
优选的,步骤1中,所述煎煮分为2次,第1次加水量为山楂干果质量的6~10倍,第1次的煎煮时间为1~3小时;第2次加水量为山楂干果质量的5~8倍,第2次的煎煮时间为0.5~1小时。
优选的,步骤1中,所述减压浓缩为减压浓缩至温度为60℃、相对密度为1.05~1.25。
优选的,步骤2中,所述搅拌的转速为800-1200r/min。
优选的,步骤3中,所述灭菌的温度为90-100℃,灭菌的时间为7-10min。
与现有技术相比,本发明的有益效果为:
(1)本发明所得的具有润肠通便功效的果味果冻在便秘人群有效率达85%以上,具有增加排便次数、增加排便量、排便更顺畅、腹胀感消失的作用,达到缓解便秘的目的。
(2)本发明所得的具有润肠通便功效的果味果冻,对作用人群无性别差异,总体起效时间2天内。本发明产品绿色天然,无副作用,适宜长期服用。本产品开袋即食,口感酸甜适中,方便快捷,便于携带。
具体实施方式
下面将结合实施例对本发明的实施方案进行详细描述,但是本领域的技术人员将会理解,下列实施例仅用于说明本发明,而不应视为限制本发明的范围。
实施例1
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取200g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的10倍,煎煮1小时;第2次加水量为山楂干果质量的5倍,煎煮0.5小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.25,得清膏,备用。
步骤2,向清膏中加入100g乳糖醇、80g聚葡萄糖、100g荷叶粉、50g绿咖啡粉、100g银耳粉、50g金银花粉、25g低聚甘露糖、50g魔芋粉,混匀,加纯化水450g,再加入1g复配果冻粉(复配果冻粉包含氯化钾0.2g、乳酸钙0.2g和卡拉胶0.6g),在转速为1000r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为95℃条件下灭菌8.5min,包装,得具有润肠通便功效的果味果冻。
实施例2
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取180g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的10倍,煎煮1小时;第2次加水量为山楂干果质量的5倍,煎煮0.5小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.15,得清膏,备用。
步骤2,向清膏中加入150g乳糖醇、100g聚葡萄糖、150g荷叶粉、100g绿咖啡粉、150g银耳粉、50g金银花粉、30g低聚甘露糖、60g魔芋粉,混匀,加纯化水220g,再加入1g复配果冻粉(复配果冻粉包含氯化钾0.2g、乳酸钙0.2g和卡拉胶0.6g),在转速为800r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为100℃条件下灭菌7min,包装,得具有润肠通便功效的果味果冻。
实施例3
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取150g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的6倍,煎煮3小时;第2次加水量为山楂干果质量的8倍,煎煮0.5小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.20,得清膏,备用。
步骤2,向清膏中加入200g乳糖醇、150g聚葡萄糖、100g荷叶粉、50g绿咖啡粉、100g银耳粉、60g金银花粉、40g低聚甘露糖、50g魔芋粉,混匀,加纯化水250g,再加入1g复配果冻粉(复配果冻粉包含氯化钾0.2g、乳酸钙0.3g和卡拉胶0.5g),在转速为1200r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为90℃条件下灭菌10min,包装,得具有润肠通便功效的果味果冻。
实施例4
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取120g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的8倍,煎煮2小时;第2次加水量为山楂干果质量的6.5倍,煎煮0.75小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.10,得清膏,备用。
步骤2,向清膏中加入50g乳糖醇、100g聚葡萄糖、100g荷叶粉、80g绿咖啡粉、120g银耳粉、70g金银花粉、45g低聚甘露糖、80g魔芋粉,混匀,加纯化水360g,再加入0.9g复配果冻粉(复配果冻粉包含氯化钾0.2g、乳酸钙0.2g、卡拉胶0.5g),在转速为800r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为90℃条件下灭菌10min,包装,得具有润肠通便功效的果味果冻。
实施例5
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取100g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的10倍,煎煮1小时;第2次加水量为山楂干果质量的5倍,煎煮1小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.15,得清膏,备用。
步骤2,向清膏中加入90g乳糖醇、200g聚葡萄糖、200g荷叶粉、100g绿咖啡粉、100g银耳粉、70g金银花粉、50g低聚甘露糖、90g魔芋粉,混匀,加纯化水110g,再加入1.3g复配果冻粉(复配果冻粉包含氯化钾0.3g、乳酸钙0.4g、卡拉胶0.6g),在转速为1000r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为95℃条件下灭菌8.5min,包装,得具有润肠通便功效的果味果冻。
实施例6
一种具有润肠通便功效的果味果冻的制备方法,包括以下步骤:
步骤1,取250g山楂,洗净去除杂质,加水煎煮2次,其中,第1次加水量为山楂干果质量的8倍,煎煮2小时;第2次加水量为山楂干果质量的6倍,煎煮0.6小时;合并两次煎煮液,过滤,减压浓缩至60℃相对密度为1.15,得清膏,备用。
步骤2,向清膏中加入90g乳糖醇、50g聚葡萄糖、175g荷叶粉、50g绿咖啡粉、125g银耳粉、80g金银花粉、25g低聚甘露糖、50g魔芋粉,混匀,加纯化水360g,再加入1.1g复配果冻粉(复配果冻粉包含氯化钾0.3g、乳酸钙0.3g和卡拉胶0.5g),在转速为1000r/min条件下搅拌混匀,过滤,得滤液。
步骤3,对滤液进行密封,在温度为95℃条件下灭菌8.5min,包装,得具有润肠通便功效的果味果冻。
本发明通过将多种具有特殊功效药食同源原料进行配伍,配方合理。其中,山楂起到健脾和胃、加速胃排空作用;荷叶、绿咖啡粉起到提高肠动力的作用;聚葡萄糖、乳糖醇、魔芋起到增加肠道水分、扩容积的作用;低聚甘露糖长效增殖肠道益生菌;同时加入银耳、金银花提高肠道免疫力,促进肠道蠕动,清除肠道垃圾。9种主要原料相互配合,相互促进,防止便秘,改善肠胃功能且口感兼备的功能性果味果冻。本发明中具有润肠通便功效的果味果冻的各原料作用如下:
魔芋粉:服用后在肠道内分解产生脂肪酸,能刺激肠黏膜,使分泌增加,蠕动加快,减少大肠的水分吸收而致泻。
聚葡萄糖:可促进肠道双歧杆菌、乳酸杆菌等有益菌的生长繁殖,同时产生大量短链脂肪酸,如乙酸、醋酸、叶酸和乳酸,改变肠道pH值,改善有益菌群的繁殖环境,从而加快肠道蠕动,使粪便顺利排出。
荷叶粉:其水煎剂具有明显的通便作用,可改善肠蠕动,抑制大肠的水分吸收,缩短排便时间。对老年人习惯性便秘,体虚便秘和产妇产后便秘疗效显著。
金银花:挥发油、有机酸、黄酮等多种类型化学成分,具有清热解毒、疏散风热的作用;还可以提高肠道免疫力。
银耳:营养丰富,含有多种氨基酸、维生素,能够排除肠部毒素积累,增强肠的免疫功能。
绿咖啡粉:具有健脾养胃、行气消食等作用。可以治疗脘腹胀痛、食积不消、脾虚食少等病症。与山楂配伍,可治高脂血症、高血压、冠心病引起的胸闷隐痛。
山楂:具有消食健胃,行气散瘀,化浊降脂的功效;用于肉食积滞,胃脘胀满,泻痢腹痛,瘀血经闭,产后瘀阻,心腹刺痛,胸痹心痛,疝气疼痛,高脂血症。
低聚甘露糖:是由D-甘露糖通过β-1,4糖苷键连接形成主链,在主链或支链上连接葡萄糖而成,聚合度在2~10之间的寡糖,是一种新型益生元,能大量激活生物体内以双歧杆菌为代表的肠道益生菌群的特异性增殖并抑制有害菌的生长,减少有毒代谢产物的生成,维持机体健康。
乳糖醇:抑制产气产酸梭状芽孢杆菌等腐败菌的生产,另外产生大量生理活性物质,调节肠道pH值、灭杀致病菌,阻遏腐败产物生成,抑制内源致癌物的产生和吸收,并且分解衍生出多重免疫功能因子,提高机体健康。
本发明还提供了具有润肠通便功效的果味果冻的饮用方法为:每袋润肠通便果味果冻为30g,每天午餐前30min饮用1袋果冻。
将实施例1-6所得具有润肠通便功效的果味果冻用于220个存在便秘问题的人群进行临床观察。其中,女性人数占55%,男性人数占45%;25-35岁人数的占35%,35-45岁人数占55%,45-55岁人数占10%。
结果表明,本发明所得的具有润肠通便功效的果味果冻对便秘人群的有效率达85%以上;其中排便次数增加人数占86%,排便更顺畅的人数占92%,排便量增加的的人数占90%,腹胀感消失的人数占81%。
以下为本发明所得的具有润肠通便功效的果味果冻的部分典型病例的临床效果:
病例1:
张女士,26岁,便秘1年,平均3到4天才上1次厕所,经服用实施例1所得具有润肠通便功效的果味果冻后,当天6h内增加排便1次,经服用两周后,便秘情况改善,平均1天上1次厕所。
病例2:
周先生,35岁,便秘3年,平均4天才上1次厕所,经服用实施例3所得具有润肠通便功效的果味果冻后,当天5h内增加排便1次,经服用三周后,便秘情况改善,平均1天上1次厕所。
病例3:
刘女士,45岁,便秘10年,平均4天才上1次厕所,经服用实施例4所得具有润肠通便功效的果味果冻后,当天10h内增加排便1次,经服用四周后,便秘情况改善,平均2天上1次厕所。
病例4:
黄先生,50岁,便秘6年,平均2天才上1次厕所,经服用实施例3所得具有润肠通便功效的果味果冻后,当天7h内增加排便1次,经服用三周后,便秘情况改善,平均2天上1次厕所。
病例5:
李女士,35岁,便秘3年,平均3天才上1次厕所,经服用实施例5所得具有润肠通便功效的果味果冻后,当天12h内增加排便1次,经服用五周后,便秘情况改善,平均1天上1次厕所。
本发明所得的所得具有润肠通便功效的果味果冻中,利用“药食同源”中能够润肠通便的原料搭配益生元,是缓解便秘的最佳选择,中医历来强调“药疗不如食疗”,药食同源的原料无毒副作用,功效显著的特点,且加入益生元能够调节肠道菌群,维持肠道内微生物平衡,达到短期缓解便秘,长期调理健康的目的。
虽然,本说明书中已经用一般性说明及具体实施方案对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (10)
1.一种具有润肠通便功效的果味果冻,其特征在于,包括以下原料:山楂、乳糖醇、聚葡萄糖、荷叶粉、绿咖啡粉、银耳粉、金银花粉、低聚甘露糖、魔芋粉、复配果冻粉、水。
2.根据权利要求1所述的具有润肠通便功效的果味果冻,其特征在于,所述复配果冻粉包含氯化钾、乳酸钙和卡拉胶。
3.根据权利要求2所述的具有润肠通便功效的果味果冻,其特征在于,所述原料的用量为:山楂100-250份、乳糖醇50-200份、聚葡萄糖50-200份、荷叶粉100-250份、绿咖啡粉50-150份、银耳粉100-150份、金银花粉50-80份、低聚甘露糖25-50份、魔芋粉50-100份、复配果冻粉0.8-2.5份、水200-700份。
4.根据权利要求2所述的具有润肠通便功效的果味果冻,其特征在于,所述复配果冻粉包含氯化钾0.2-1份、乳酸钙0.2-0.5份和卡拉胶0.4-1份。
5.根据权利要求3所述的具有润肠通便功效的果味果冻,其特征在于,所述原料的用量为:山楂200份、乳糖醇100份、聚葡萄糖80份、荷叶粉100份、绿咖啡粉50份、银耳粉100份、金银花粉50份、低聚甘露糖25份、魔芋粉50份、复配果冻粉1份、水250份;其中,所述复配果冻粉包含氯化钾0.2份、乳酸钙0.2份和卡拉胶0.6份。
6.一种具有润肠通便功效的果味果冻的制备方法,其特征在于,包括以下步骤:
步骤1,取山楂,洗净去除杂质,煎煮,过滤,减压浓缩,得清膏,备用;
步骤2,向所述清膏中加入乳糖醇、聚葡萄糖、荷叶粉、绿咖啡粉、银耳粉、金银花粉、低聚甘露糖和魔芋粉,混匀,再加入水、复配果冻粉,搅拌混匀,过滤,得滤液;
步骤3,对所述滤液进行密封,灭菌,包装,得具有润肠通便功效的果味果冻。
7.根据权利要求6所述的具有润肠通便功效的果味果冻的制备方法,其特征在于,步骤1中,所述煎煮分为2次,第1次加水量为山楂干果质量的6~10倍,第1次的煎煮时间为1~3小时;第2次加水量为山楂干果质量的5~8倍,第2次的煎煮时间为0.5~1小时。
8.根据权利要求6所述的具有润肠通便功效的果味果冻的制备方法,其特征在于,步骤1中,所述减压浓缩为减压浓缩至温度为60℃、相对密度为1.05~1.25。
9.根据权利要求6所述的具有润肠通便功效的果味果冻的制备方法,其特征在于,步骤2中,所述搅拌的转速为800-1200r/min。
10.根据权利要求6所述的具有润肠通便功效的果味果冻的制备方法,其特征在于,步骤3中,所述灭菌的温度为90-100℃,灭菌的时间为7-10min。
