The quick-frozen cold-food dumplings comprise dumpling wrappers and dumpling stuffing, wherein the weight of each dumpling is 12g, the weight of each dumpling wrapper is 6g, and the dumpling wrappers are composed of the following raw materials: 120g of superfine high gluten flour, 12g of cassava starch, 8g of salt and 47g of water; the dumpling stuffing is of a pot chicken taste, and is composed of the following raw materials: 225g of minced chicken, 80g of minced chicken, 40g of minced walleye pollack, 45g of a mixture of wire-drawing protein granules and water, 90g of shredded bamboo shoots, 80g of cucumbers, 110g of vegetarian tripe, 75g of mushrooms, 90g of broccoli, 75g of potatoes, 20g of seasonings and 13g of vegetable oil;
the making method of the quick-frozen cold food dumplings comprises the following steps:

1. The quick-frozen cold food boiled dumplings are characterized by comprising dumpling wrappers and dumpling stuffing, wherein the dumpling wrappers are composed of the following raw materials: 120g of special high gluten powder, 10-12g of cassava starch, 5-8g of salt and 45-47g of water; the lemon mint chicken dumpling stuffing comprises two flavors of lemon mint chicken and bowl chicken, and the lemon mint chicken dumpling stuffing comprises the following raw materials: 550g of ground chicken, 50-80g of twisted chicken breast, 130g of a mixture of ground wire-drawing albumen powder and frozen lemon juice, 10-15g of caraway, 10-15g of mint leaf, 20-25g of olive, 70-80g of mushroom, 15-30g of seasoning and 10-15g of vegetable oil; the dumpling stuffing with the bowl chicken taste is prepared from the following raw materials: 250g of 200 broken chicken, 70-90g of twisted chicken breast, 30-50g of walleye pollack, 40-50g of a mixture of wire-drawing broken protein and water, 80-100g of shredded bamboo shoot, 70-90g of cucumber, 120g of vegetarian tripe, 70-80g of mushroom, 80-100g of broccoli, 60-90g of potato, 15-25g of seasoning and 10-15g of vegetable oil.
2. The quick-frozen cold-food dumplings as claimed in claim 1, wherein the single weight of the quick-frozen cold-food dumplings is 10-12 g; the weight of the dumpling wrapper is 4.5-6 g.
3. The quick-frozen cold-eaten dumplings as claimed in claim 1, wherein the minced chicken in the dumpling fillings with the two flavors of lemon-mint chicken and bowl-shaped chicken is prepared by dicing chicken legs, pickling, frying and smashing into shreds.
4. The quick-frozen cold-eaten dumplings as claimed in claim 1, wherein the minced chicken breast meat in the dumpling fillings with the two flavors of lemon, mint and bowl chicken is chicken breast meat blocks with the size of 4-6 mm.
5. Quick-frozen cold-eaten dumplings according to claim 1, wherein the mass ratio of frozen lemon juice to the ground stringy albumen is 1: 5.
6. The quick-frozen cold-eaten dumplings as claimed in claim 1, wherein the mass ratio of the spun-textured albumen powder to water is 1: 1.
7. a method for making quick-frozen cold-eaten dumplings as claimed in claim 1, which comprises the following steps:
(1) making dumpling wrappers: stirring and mixing special high gluten flour and tapioca starch uniformly, adding edible salt and water to knead dough, kneading into uniform dough, standing for 20-30min, and rolling the dough into dumpling wrappers for later use;
(2) the preparation method of the lemon mint chicken taste dumpling stuffing comprises the following steps: a. cutting chicken leg meat into 5-10g diced meat, and pickling with pickling material for 2-3 hr; parching after pickling, and frying to give oil, and cooking for about 7-8 min; after cooling the chicken, crushing the chicken by using a material processor, and crushing the crushed chicken into threads for later use; b. mincing chicken breast with 4-6mm meat mincer; c. after the chicken meat pieces and the minced chicken breast meat and the seasonings are uniformly stirred and mixed, pouring the pre-soaked frozen lemon juice and the minced wire-drawing albumen mixture, continuously stirring, adding coriander, mint leaves, olive and mushroom which are all cut into 4-6mm in size, and uniformly stirring and mixing to obtain the lemon-mint chicken taste dumpling stuffing;
(3) making of the earthen bowl chicken taste dumpling stuffing: d. the preparation method of the chicken meat pieces is the same as the step a; e. the preparation method of the twisted chicken breast is the same as the step b; f. cleaning walleye pollack, air drying, and cutting into 4-6mm fish blocks; g. uniformly stirring and mixing the chicken meat pieces, the minced chicken breast, the diced walleye pollack meat and the seasoning, pouring the mixture of the wire-drawing protein pieces and the water, which are mixed in advance according to the mass ratio, continuously stirring and mixing, then adding the bamboo shoot shreds, the cucumber, the vegetarian maokou, the mushroom, the broccoli and the potato which are all cut into 4-6mm in size, stirring, and uniformly mixing to obtain the pot-chicken taste dumpling stuffing;
(4) and (3) respectively wrapping the prepared dumpling wrappers with the prepared lemon mint chicken and bowl chicken dumpling fillings to obtain dumpling finished products, and then cooking the dumpling finished products, cooling and quickly freezing to obtain the quick-frozen cold-eaten dumplings disclosed by the invention.
8. The method for making quick-frozen cold-eaten dumplings as claimed in claim 7, wherein the soaking time of the frozen lemon juice and the ground stringy albumen in step (2) is 30-60 min.
9. The making method of the quick-frozen cold-eaten dumplings as claimed in claim 7, wherein the first stirring time in the step (2) is 5-8 min; the second stirring time is 1-2 min; the third stirring time is 5-15 min.
