本发明公开了一种高品质茶籽食用油及其生产方法,涉及食用油制备技术领域;为了解决营养少,浓香不足的问题;该茶籽食用油,包括以下重量组成分:山茶果85份、维生素E提取物0.68份、罗汉果提取物0.4份和柠檬酸溶液0.52份、吸附剂0.8份;茶籽食用油的生产方法,包括如下步骤:采摘成熟山茶果,自然晾晒至干裂后取籽,挑捡剔除霉变干瘪的油茶籽;将油茶籽置于烘干机内,在‑5~10℃环境下600t/d的烘干规模中低温烘干5~8h,使其水分低于8%;将烘干后的油茶籽进行剥壳分离、去石、磁选脱铁,使油茶籽仁的含壳率低于0.3%。本发明整个茶籽油精制过程的工序,脱去各种杂质,色泽淡黄、晶亮、香味纯正。
Description
技术领域
本发明涉及食用油制备技术领域,尤其涉及一种高品质茶籽食用油及其生产方法。
背景技术
油茶籽油是理想的高营养、低热量、高档保健食用油。近年来国际粮农组织已将油茶籽油列为重点推广的健康型食用油。中国的油茶籽油品质经美国白宫卫生研究院和中国疾病控制中心检验确认,均优于世界公认的橄榄油,被誉为“东方橄榄油”,我国传统的油料油脂加工生产主要采用有机溶剂浸出或高温压榨,然后加热、加酸碱、加助剂等方式进行脱色、脱酸、脱水、脱蜡、脱胶,工艺及装备极其落后。一方面,油脂中天然活性成分会在复杂的制备工艺过程中大量损失,且油脂加工企业整体仍处在一个高能源消耗的局面。另一方面,油脂生产过程中,不可避免地会产生一定量的废液、废气和废渣。
经检索,中国专利申请号为CN201910964252.9的专利,公开了一种高品质油茶籽油制备方法,包括以下步骤:对油茶籽粕进行破碎,进行振动过滤;以石油醚为提取溶剂,采用超声波辅助溶剂提取法进行茶籽粕中的多种功能因子的提取,以多酚提取率、黄酮提取率、角鲨烯提取率和DPPH自由基清除率为综合指标,采用响应面试验优化所得最佳参数;确保提取物中各物质含量;制备油茶籽粕功能提取物的反相微乳液;对反相微乳液含量进行检测;添加2%的油茶籽粕功能性提取物反相微乳液在油茶籽油中进行均匀混合;进行充氮打包。上述专利中的高品质油茶籽油制备方法存在以下不足:通过精炼加工,油脂中对人体有益的生物活性物质保留得很少,不够浓香。
发明内容
本发明的目的是为了解决现有技术中存在的缺点,而提出的一种高品质茶籽食用油及其生产方法。
为了实现上述目的,本发明采用了如下技术方案:
一种高品质茶籽食用油,包括以下重量组成分:山茶果85份、维生素E提取物0.68份、罗汉果提取物0.4份和柠檬酸溶液0.52份、吸附剂0.8份;
所述维生素E提取物的制备方法,包括如下步骤:
S51:称取500g粉碎后的胭脂树树叶,加入25ml纯度为95%的乙醇,35℃条件下,提取两次,合并两次过滤液;
S52:上200ml离子交换树脂后,用200ml纯度为95%乙醇洗杂;
S53:用350ml用硼酸调pH3.6的无水乙醇溶解,回收乙醇;
S54:加入0.6ml氯化锌和8ml四氢吡喃搅拌混合,过滤析出物;
S55:加入浓度3%草酸溶液在45~55℃反应后过滤甾醇;
S56:蒸干母液乙醇,得到提取物。
优选地:所述罗汉果提取物的制备方法为将成熟无损坏的干燥罗汉果粉碎呈末,粉末置于超临界萃取釜中以95%乙醇为夹带剂进行超临界二氧化碳萃取70min,得到。
优选地:所述吸附剂为质量比2:1.2的硅藻土和活性炭。
优选地:将原料成分替换为以下成重量组成分:山茶果75份、维生素E提取物0.48份、罗汉果提取物0.35份和柠檬酸溶液0.49份、吸附剂0.75份。
一种高品质茶籽食用油的生产方法,包括如下步骤:
S1:采摘成熟山茶果,自然晾晒至干裂后取籽,挑捡剔除霉变干瘪的油茶籽;
S2:将油茶籽置于烘干机内,在-5~10℃环境下600t/d的烘干规模中低温烘干5~8h,使其水分低于8%;
S3:将烘干后的油茶籽进行剥壳分离、去石、磁选脱铁,使油茶籽仁的含壳率低于0.3%,得到油茶果仁;
S4:将油茶果仁放入冷榨机压榨,初榨温度为70~80℃,得到的毛油;
S5:将压榨后的毛油在榨取的5min内,通过油渣分离刮板在<0.3Mpa的60~70℃条件下对毛油进行初次过滤,然后将滤油置入卧螺分离机中二次过滤,毛油含渣量为3%;
S6:将维生素E提取物、罗汉果提取物加入毛油中于50℃下搅拌混合均匀;
S7:加入柠檬酸溶液反应120min,脱去毛油中磷脂、蛋白质胶状物的混合物及其它杂质;
S8:加入10%氢氧化钠溶液至毛油中中和;
S9:将除酸后的毛油升温至80~85℃,加入活性炭脱色剂在110℃下持续搅拌60min脱色;
S10:蒸馏脱色油30min除臭;
S11:将除臭后的毛油用吸附剂吸附,再次过滤得到茶籽油;
S12:将茶籽油置入冷却器中于-5℃中冷却24h,经冷却过滤器过滤,得到高品质油茶籽油。
优选地:所述毛油与氢氧化钠的重量比为1:0.2~0.45。
优选地:所述毛油与柠檬酸溶液的重量比为1:0.03~0.05。
本发明的有益效果为:
1.本发明对脱色油进行蒸馏,不仅可以除去引起油脂臭味的低级醛、酮、游离脂肪酸等的臭味物质,还能提高油脂烟点,冷冻处理使得油脂固、液分离,再通过冷却过滤器得到高品质油茶籽油,整个茶籽油精制过程的工序,脱去各种杂质,色泽淡黄、晶亮、香味纯正。
2.本发明添加罗汉果提取物和维生素E提取物有效提高茶籽油的抗氧化值,明显延长茶籽油的保质期,有效地保留、提高了油茶籽的营养成分。
3.本发明压榨后对毛油快速出渣,避免油炸保留时间长导致酸值高,颜色深,过滤前通过油渣分离刮板,降低毛油中大部分含渣量。

实施例1:
一种高品质茶籽食用油,如图1所示,包括以下重量组成分:山茶果85份、维生素E提取物0.68份、罗汉果提取物0.4份和柠檬酸溶液0.52份、吸附剂0.8份。
所述维生素E提取物的制备方法,包括如下步骤:

本实施例在使用时,压榨后对毛油快速出渣,避免油炸保留时间长导致酸值高,颜色深,过滤前通过油渣分离刮板,降低毛油中大部分含渣量,对脱色油进行蒸馏,不仅可以除去引起油脂臭味的低级醛、酮、游离脂肪酸等的臭味物质,还能提高油脂烟点,冷冻处理使得油脂固、液分离,再通过冷却过滤器得到高品质油茶籽油,整个茶籽油精制过程的工序,脱去各种杂质,色泽淡黄、晶亮、香味纯正,口感好,风味独特,从而能够制造出高品质的油茶籽。
实施例3:
一种高品质茶籽食用油,如图1所示,包括以下重量组成分:山茶果75份、维生素E提取物0.48份、罗汉果提取物0.35份和柠檬酸溶液0.49份、吸附剂0.75份。
所述维生素E提取物的制备方法,包括如下步骤:
S51:称取500g粉碎后的胭脂树树叶,加入25ml纯度为95%的乙醇,35℃条件下,提取两次,合并两次过滤液;
S52:上200ml离子交换树脂后,用200ml纯度为95%乙醇洗杂;
S53:用350ml用硼酸调pH3.6的无水乙醇溶解,回收乙醇;
S54:加入0.6ml氯化锌和8ml四氢吡喃搅拌混合,过滤析出物;

所述毛油与氢氧化钠的重量比为1:0.5。
所述毛油与柠檬酸溶液的重量比为1:0.025。
