本发明公开了一种解酒护肝益肠魔芋巧克力及其制备方法,按重量份原料配比计,所述解酒护肝益肠魔芋巧克力由以下原料组成:可可脂15-20份、可可粉32-70份、魔芋精粉7-20份、解酒主药1-4份、保肝主药0.05-1份和可接受的辅料。本发明从食品科学、生理科学和***学的研发角度上,开发了一款具有阻吸收、促分解、护肠胃的多通路、易食用的魔芋巧克力解酒产品,通过魔芋精粉与巧克力配合,添加促进酒精分解的解酒主药,辅以护肝主药,具有保护胃肠粘膜、阻碍酒精吸收、促进乙醇分解、抗氧化、抗炎症、改善肠道菌群、减轻酒精对胃、肠、肝的不良影响的作用。

技术领域
本发明涉及食品技术领域,特别涉及一种解酒护肝益肠魔芋巧克力及其制备方法。
背景技术
随着物质生活水平的提高,应酬交际范围的扩大,含酒精饮料的消耗量也在增加,近年来,成人酒精中毒的发生率也相应升高。众所周知,长期饮酒可造成全身多***的损伤,包括肠胃***、肝脏、神经***等,尤其很容易形成酒精性脂肪肝,因此,解酒护肝益肠的功能性产品成为社会所需。目前已有很多解酒护肝类中药和保健品,证明对减少酒精损伤肝原纤维,加快乙醇分解,减少引发酒精肝具有疗效,但作用路径单一,缺乏全身多器官的***防护作用。单一解酒只能减少对肝脏的伤害,有的只是缓解症状,起效慢。
为了解决现有解酒产品功能单一的问题,科研人员对此进行了大量研究,中国专利CN109045273A公开了一种重要解酒组合物及制备方法,其组合物主要包括以下原料:葛根提取物、枳椇子提取物、酸枣仁提取物、可可茶提取物、山楂提取物、白茅根提取物、茯苓提取物、魔芋粉、肌肽、奶粉、麦芽糊精、葡萄糖、乳糖、柠檬酸钠、食用香精、硬脂酸镁。在该配料中,主要以葛根提取物和枳椇子提取物为解酒主药成分,因此其含量占比较大,酸枣仁提取物主治补肝,宁心,敛汗,生津,用于虚烦不眠,惊悸多梦,体虚多汗,津伤口渴,可可茶提取物主含可可豆碱,被人体吸收后具有镇静中枢神经的作用,山楂提取物具有增加心肌收缩力,增加心输出量,减慢心率的作用,白茅根提取物具有凉血止血,清热利尿的作用,茯苓提取物的主要成分是多糖(主要为茯苓糖,含量达到84%)、三萜和脂肪酸类,用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠,具有增强生理活性,刺激人体免疫***的功能恢复的作用,其余魔芋粉、肌肽、麦芽糊精、葡萄糖、乳糖、柠檬酸钠、食用香精和硬脂酸镁均为添加剂和辅料,这些添加剂和辅料与奶片一起,共同组合得到奶片型饮片,该奶片型饮片的作用特点为:从肠胃减缓酒精吸收-保护酒精性肝损伤——减缓中枢异常兴奋——环节肌肉迟缓三个方面,实现解酒,助肌肉运动和安神三管齐下的解酒效果,主要由葛根、枳椇子、酸枣仁、可可茶提取物、山楂、白茅根、茯苓、肌肽组成,以达到预防酒精中毒的目的,加以保肝、减缓中枢异常兴奋、环节肌肉迟缓的功效(该说明书第0019段)。
然而,该中药组合物在解酒时侧重于改善中枢失调和缓解肌肉松弛,忽略了酒精对肠胃***的损伤,虽然该中药组合物中加入了一些益肠胃的组分,例如魔芋粉,但其添加量极少,不足以缓解和治疗酒精对肠胃***的损伤,肠胃***的损坏直接影响人体整个***的运行,肠胃***受损者常出现多种并发疾病,例如胃出血、胃溃疡、胃癌、肠炎等,因此不得不引起重视。
发明内容
本发明的发明目的在于:针对上述存在的问题,提供一种解酒护肝益肠魔芋巧克力及其制备方法,本发明从食品科学、生理科学和***学的研发角度上,开发了一款具有阻吸收、促分解、护肠胃的多通路、易食用的魔芋巧克力解酒产品,通过魔芋精粉与巧克力配合,添加促进酒精分解的解酒主药,辅以护肝主药,发挥联合成分的保护胃肠粘膜、阻碍酒精吸收、促进乙醇分解、抗氧化、抗炎症、改善肠道菌群、减轻酒精对胃、肠、肝的不良影响的作用。
本发明采用的技术方案如下:一种解酒护肝益肠魔芋巧克力,其特征在于,按重量份原料配比计,所述解酒护肝益肠魔芋巧克力由以下原料组成:可可脂15-20份、可可粉32-70份、魔芋精粉7-20份、解酒主药1-4份、保肝主药0.05-1份和可接受的辅料。
在本发明的解酒护肝益肠魔芋巧克力中,魔芋精粉可以阻酒吸收和护肠胃,解酒主药可以是葛根黄酮,也可以是枳椇子提取物,还可以是其他例如肉豆蔻、菊花、苦参等常用的具有解酒作用的成分,保肝主药可以是姜黄,也可以是牡蛎肽,还可以是其他例如党参、黄芪、百合、薏米、田七等常用的具有解酒作用的成分,可接受的辅料包括维生素、淀粉、香精、柠檬酸钠等常用的添加辅料。
在本发明中,所述解酒主药为葛根黄酮提取物或/和枳椇子提取物。
进一步,所述葛根黄酮提取物的含量为0.5-2份,所述枳椇子提取物的含量为0.5-2份。
在本发明中,所述保肝主药为姜黄或/和牡蛎肽。
进一步,所述护肝主药为姜黄和牡蛎肽,所述姜黄含量0.05-1份,所述牡蛎肽含量为0.01-0.1份。
在本发明中,所述辅料包括维生素C或/和维生素B6。
进一步,所述维生素C的含量为0.01-0.5份,所述维生素B6的含量为0.005-0.05份。
进一步,所述辅料中还含有菊粉,所述菊粉的含量为2-6份。
在本发明中,所述解酒护肝益肠魔芋巧克力由以下原料组成:可可脂15-20份、可可粉32-70份、魔芋精粉7-20份、菊粉2-6份、葛根黄酮提取物0.5-2份、枳椇子提取物0.5-2份、姜黄0.05-1份、维生素C为0.01-0.5份、维生素B6为0.005-0.05份、牡蛎肽为0.01-0.1份和适量的调味剂。
进一步,所述调味剂包括白砂糖,所述白砂糖的含量为30-50份。
本发明的解酒护肝益肠魔芋巧克力的制备方法,其特征在于,包括以下步骤:
S1、将魔芋精粉、菊粉、葛根黄酮提取物、枳椇子提取物、姜黄、维生素C和维生素B6案设计的重量份称取,然后混合均匀,得到魔芋巧克力辅料;
S2、将可可粉、可可脂和调味剂按设计的重量份称取,然后混合均匀,经精磨、精炼、调温处理后,得到巧克力浆料;
S3、将巧克力辅料与巧克力浆料在35-60℃保温条件下搅拌混合均匀,然后经调温、浇模、振模、硬化、脱模、挑选、包装后,获得解酒护肝益肠魔芋巧克力产品。
在本发明的配方中,以葛根黄酮、枳椇子为解酒主药,葛根是临床上用以治疗急性酒精性中毒的常用药材,枳椇子具有“解酒毒、清湿热、除烦止渴”的功效,用于“酒精中毒、烦渴呕逆,二便不利”等酒精中毒症状,与葛根配伍,起到相辅相成的作用。为促进解酒效果,辅助维生素C和维生素B6,提供肝脏解酒动力,减少肝脏被酒精伤害。配方中,中药姜黄,性味辛、苦,温,归脾、肝经,姜黄中的姜黄素具有抗氧化作用,同时可促进肝脏中乙醛转化成乙酸,临床大量的资料证实,牡蛎肽对实验性肝损伤具有很好的保护作用,因此以姜黄和牡蛎来作为保护肝脏的主要成分。
在本发明中,本发明最大的创新在于:通过魔芋精粉与巧克力配合,添加促进酒精分解的解酒主药,辅以护肝主药,发挥联合多重作用,具体地说,在配方中,巧克力中的可可脂含有丰富的多酚,具有抗氧化功能,同时可促进姜黄素、葛根黄酮等成分的吸收,巧克力中的可可脂和砂糖可为肝脏中酒精分解代谢提供充足的能量;魔芋精粉中葡甘露聚糖(KGM)具有很强的吸水性,吸收后形成粘稠的水凝胶,覆盖在胃粘膜上可有效阻碍酒精的吸收,KGM到达结肠部位后,在肠道微生物作用下发酵产酸,生成乙酸、丙酸、丁酸等多种短链脂肪酸,同时促进肠道双歧杆菌、乳杆菌等有益菌增殖。本发明中将魔芋精粉与巧克力有机融合,不仅极大改善了魔芋精粉的口感,克服了高含量魔芋精粉口感差的缺陷,还适当降低了魔芋精粉的凝聚性,增加了其水凝胶的流动性,有效加速了魔芋精粉在胃中溶胀和分布;配方中加入菊粉,菊粉含大量菊糖,菊糖是肠道益生菌快速利用的发酵底物,公认的益生元,有助于减少饮酒对肠道菌群的破坏。
通过以上几种生理功效成分的有机组合,在胃、肠、肝中发挥协同作用,帮助饮酒人群减少酒精吸收,减轻肝脏解酒负担,在维生素、可可脂协同作用下加速酒精代谢、促进机体恢复,在黄酮、姜黄素协同抗氧化保护肝脏,减少了酒精对肝的损伤,同时通过魔芋精粉和菊糖来促进肠道益生菌生长,保护肠道微生态,起到显著的阻碍酒精吸收、促进酒精分解、保护肝脏和肠道微生态,从而多***联合降低饮酒伤害、缓解酒后不适的作用。
综上所述,由于采用了上述技术方案,本发明的有益效果是:
1、本发明通过魔芋精粉与巧克力配合,添加促进酒精分解的解酒主药,辅以护肝主药,发挥联合多重作用,而且,魔芋精粉与巧克力有机融合,不仅极大改善了魔芋精粉的口感,克服了高含量魔芋精粉口感差的缺陷,还适当降低了魔芋精粉的凝聚性,增加了其水凝胶的流动性,有效加速了魔芋精粉在胃中溶胀和分布。
2、本发明通过上述几种生理功效成分的有机组合,在维生素、可可脂协同作用下加速酒精代谢、促进机体恢复,在黄酮、姜黄素协同作用下抗氧化保护肝脏,减少了酒精对肝的损伤,同时通过魔芋精粉和菊糖来促进肠道益生菌生长,保护肠道微生态,起到显著的阻碍酒精吸收、促进酒精分解、保护肝脏和肠道微生态,从而多***联合降低饮酒伤害、缓解酒后不适的作用。
具体实施方式
为了使本发明的目的、技术方案及优点更加清楚明白,以下结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅仅用以解释本发明,并不用于限定本发明。
实施例1
一种解酒护肝益肠魔芋巧克力的制备方法,包括以下步骤(重量份):
S1、将8份魔芋精粉、6份菊粉、1份葛根黄酮提取物、0.5份枳椇子提取物、1份姜黄、0.05份牡蛎肽、0.1份维生素C、0.01份维生素B6称量后,混合均匀,制备得到魔芋巧克力辅料;
S2、将45份可可粉、15份可可脂、50份白砂糖混合,然后经精磨、精炼、调温,形成巧克力浆料;
S3、将S1中制得的可可脂巧克力辅料12份与S2制得的巧克力浆料80份在40℃保温条件下搅拌混合均匀,然后调温、浇模、振模、硬化、脱模、挑选、包装,获得魔芋巧克力。
实施例2
一种解酒护肝益肠魔芋巧克力的制备方法,包括以下步骤(重量份):
S1、将10份魔芋精粉、5份菊粉、1.5份葛根黄酮提取物、1.5份枳椇子提取物、0.1份姜黄、0.01份牡蛎肽、0.2份维生素C、0.02份维生素B6等原料称量后,混合均匀,制备得到魔芋巧克力辅料;
S2、将50份可可粉、20份可可脂、30份白砂糖或甜味剂混合,然后经精磨、精炼、调温,形成巧克力浆料;
S3、将S1中制得的可可脂巧克力辅料20份与S2制得的巧克力浆料70份在45℃保温条件下搅拌混合均匀,然后调温、浇模、振模、硬化、脱模、挑选、包装,获得魔芋巧克力。
实施例3
一种解酒护肝益肠魔芋巧克力的制备方法,包括以下步骤(重量份):
S1、将20份魔芋精粉、2份菊粉、2份葛根黄酮提取物、1份枳椇子提取物、1份姜黄、0.1份牡蛎肽、0.5份维生素C、0.04份维生素B6等原料称量后,混合均匀,制备得到魔芋巧克力辅料;
S2、将60份可可粉、20份可可脂、40份白砂糖或甜味剂混合,然后经精磨、精炼、调温,形成巧克力浆料;
S3、将S1中制得的可可脂巧克力辅料30份与S2制得的巧克力浆料60份在60℃保温条件下搅拌混合均匀,然后调温、浇模、振模、硬化、脱模、挑选、包装,获得魔芋巧克力。
实验案例
为验证本发明的效果,采用雄性昆明种小鼠(SPF级),65只,体重范围25-30g,鼠龄7周龄-12周龄。随机分为对照组1(蒸馏水)、对照组2(纯巧克力)、实施例1组、实施例2组、实施例3组。分3次试验,每次间隔1周。实验前,实验大鼠断食12小时,可自由饮水,试验开始五组大鼠分别灌胃等量的蒸馏水、纯巧克力、实施例1、实施例2和实施例3,20min后,灌胃52%(V/V)江津白酒12ml/kg BW(第一次)。恢复1周后重复此实验,灌胃白酒剂量为16ml/kg BW(第二次);再恢复1周后重复此实验,灌胃白酒剂量为20ml/kg BW(第三次),每次灌胃后,观察醉酒率、醒酒时间、24h内死亡率,60min后尾部采血测乙醇含量。收集灌胃后第三天的粪便,用于检测粪便菌群组成,实验结果见下表1和表2。

由表1可以得到,灌胃本发明的3种实施例配方的魔芋巧克力均能有效降低醉酒率,缩短醒酒时间,降低酒后血液中酒精含量。同时从表2发现,3种实施例均可有效降低酒精对肠道菌群的损害,降低大肠杆菌、肠球菌等有害菌数量,增加双歧杆菌、乳酸菌数量,保护肠道环境健康。

Claims (10)
1.一种解酒护肝益肠魔芋巧克力,其特征在于,按重量份原料配比计,所述解酒护肝益肠魔芋巧克力由以下原料组成:可可脂15-20份、可可粉32-70份、魔芋精粉7-20份、解酒主药1-4份、护肝主药0.05-1份和可接受的辅料。
2.如权利要求1所述的解酒护肝益肠魔芋巧克力,其特征在于,所述解酒主药为葛根黄酮提取物或/和枳椇子提取物。
3.如权利要求2所述的解酒护肝益肠魔芋巧克力,其特征在于,所述解酒主药为葛根黄酮提取物和枳椇子提取物,所述葛根黄酮提取物的含量为0.5-2份,所述枳椇子提取物的含量为0.5-2份。
4.如权利要求1所述的解酒护肝益肠魔芋巧克力,其特征在于,所述护肝主药为姜黄和牡蛎肽,所述姜黄含量0.05-1份,所述牡蛎肽含量为0.01-0.1份。
5.如权利要求1所述的解酒护肝益肠魔芋巧克力,其特征在于,所述辅料包括维生素C或/和维生素B6。
6.如权利要求5所述的解酒护肝益肠魔芋巧克力,其特征在于,所述辅料包括维生素C和维生素B6,所述维生素C的含量为0.01-0.5份,所述维生素B6的含量为0.005-0.05份。
7.如权利要求1所述的解酒护肝益肠魔芋巧克力,其特征在于,所述辅料中还含有益肠成分菊粉,所述菊粉的含量为2-6份。
8.如权利要求1所述的解酒护肝益肠魔芋巧克力,其特征在于,所述解酒护肝益肠魔芋巧克力由以下原料组成:可可脂15-20份、可可粉32-70份、魔芋精粉7-20份、菊粉2-6份、葛根黄酮提取物0.5-2份、枳椇子提取物0.5-2份、姜黄0.05-1份、维生素C为0.01-0.5份、维生素B6为0.005-0.05份、牡蛎肽0.01-0.1份和适量的调味剂。
9.如权利要求8所述的解酒护肝益肠魔芋巧克力,其特征在于,所述调味剂包括白砂糖,所述白砂糖的含量为30-50份。
10.如权利要求9所述的解酒护肝益肠魔芋巧克力的制备方法,其特征在于,包括以下步骤:
S1、将魔芋精粉、菊粉、葛根黄酮提取物、枳椇子提取物、姜黄、维生素C、维生素B6和牡蛎肽按设计的重量份称取,然后混合均匀,得到魔芋巧克力辅料;
S2、将可可粉、可可脂和调味剂按设计的重量份称取,然后混合均匀,经精磨、精炼、调温处理后,得到巧克力浆料;
S3、将巧克力辅料与巧克力浆料在35-60℃保温条件下搅拌混合均匀,然后经调温、浇模、振模、硬化、脱模、挑选、包装后,获得解酒护肝益肠魔芋巧克力产品。
