技术领域
本发明涉及一种含大麦若叶的固体饮料及其制备方法,得到的固 体饮料具有良好的溶解性和口感,属于食品加工领域。
背景技术
大麦若叶是大麦生长到20-30公分的幼苗,富含天然维生素、叶绿 素、食物纤维、活性酵素、矿物质以及多种活性成分,如超氧化物歧 化酶、过氧化物酶、细胞色素氧化酶、转羟酶等20多种酶,具有降血 脂、降血压、降血糖、抗氧化、改善细胞营养的作用,可全面增强体 质和提高肌体免疫力,达到预防疾病的目的。
大麦若叶粉是纯天然食物,是一种碱性食物,无任何有害的副作 用,能强化我们正常细胞的免疫能力,从而抵制致癌细胞的产生,有 效地阻断致癌细胞转型与恶化。而且,大麦若叶粉还富含膳食纤维, 可以控制餐后血糖升高,减轻胰腺负担,是糖尿病人及高血脂患者的 食用佳品。同时由于大麦若叶粉含有大量的膳食纤维,其对调节肠胃 功能有很好的改善效果。
现有技术中的大麦若叶粉主要是通过大田种植大麦苗,当大麦苗 高20-30cm时采收地上部分,经过清洗、晾干或烘干、粉碎、过筛而 得,或者经过清洗、甩干、湿法粉碎提取、过滤、滤液浓缩、喷雾干 燥而得到大麦若叶青汁粉。
由于大麦若叶粉具有良好的生理功能,市场上出现了较多的大麦 若叶粉或大麦若叶青汁粉固体饮料。
CN 106879902 A提供了一种大麦苗粉固体饮料,除了大麦苗粉 外,还包括海带粉、西兰花粉、香菇粉、柠檬果粉、植物蛋白和动物 蛋白等,此固体饮料食用时口感较差,有苦涩味,为了克服这些不良 口感,不得不加入一些矫味剂,冲调时还要添加果汁或奶制品。

CN 101214079 A公开了一种大麦嫩苗固体饮料及其生产工艺,其 中包括大麦嫩苗粉、大麦芽粉、螺旋藻、黄原胶、蔗糖酯、海藻酸钠、 羧甲基纤维素钠、无定形二氧化硅等,为了解决产品的口感细腻、冲 调性问题,配方和工艺非常复杂,使用到较多的食品添加剂,包括乳 化剂和稳定性,效果也不是特别好。
CN 107279743 A描述了一种大麦若叶青汁粉及其制备方法,将大 麦若叶和猕猴桃果肉低温榨汁,加入稳定剂,均质处理,真空干燥, 碾碎,气流粉碎等,最终得到青汁粉,在此过程中要用到高耗能的真 空冷冻干燥过程,而且要将最终青汁粉粉碎至1000-1600目的粉末,能 耗很高,最终产品溶解时容易结团。
总的来说,利用大麦若叶粉(也称“大麦苗粉”,“大麦嫩苗粉”,“大 麦青汁粉”等)作为主要原料的固体饮料较多,但这些固体饮料配方或 工艺普遍存在的问题是:或者口感不佳,存在口感粗糙不细腻、青草 味(草腥味)较浓;或者冲调性不好,冲调时易结块,搅拌均匀后易 迅速沉淀分层等缺陷。消费者体验感较差。而且这些固体饮料的口感 与冲调性往往互为矛盾,为了使固体饮料口感细腻,要求大麦若叶粉 粒径尽量细,往往要求粒径在10微米左右,而细的粒径对固体饮料的 冲调性不利,冲调时易结块、粘结,而且要达到这么小的粒径,对粉 碎的要求和能耗都很高;粗的粒径虽然有利于冲调时分散,但冲调后 的饮料静置时易分层,口感也不好。
先前技术中为了解决大麦若叶固体饮料口感上草腥味的问题,一 般通过添加其它果汁粉或矫味剂的方式,同时通过降低大麦若叶粉的 细度来克服口感粗糙的缺陷,而且往往要求大麦若叶粉的粒径在10微 米(1250目)左右才能消除口腔中粗糙感。但如果大麦若叶粉的粒度细 至10微米,一方面要达到此粒度能耗很高,另一方面其在溶解冲调时 由于表面张力等作用很容易结团,搅拌时也易粘附在搅拌棒和杯壁上, 造成饮用上的不便。
非常有必要开发一种含大麦若叶粉的固体饮料,能同时满足具有良 好口感,特别是没有粗糙感,以及具有良好冲调性能两个条件,从而 使消费者具有良好的消费体验,本发明正是基于这个目的而进行研究 和开发的。
发明内容
本发明提供了一种大麦若叶固体饮料及其制备方法。固体饮料中 除大麦若叶粉外,还含有利于肠道健康的菊粉、魔芋粉等,为了克服 大麦若叶固体饮料冲调后口腔中粗糙感,以及冲调时易结块、粘壁等 缺陷,先将固体饮料配方中部分组分预先混合制粒,再与其它组分混 合成最终产品。本发明得到的固体饮料产品易于冲调,溶解快,不分 层,而且口感细腻润滑,具有良好的消费体验感。
为了克服先前技术的缺陷,本发明提供了一种含大麦若叶的固体 饮料及其工艺,其中添加了一定量的菊粉、魔芋粉,并经造粒步骤, 得到的固体饮料易冲调,不会结团和粘壁,且冲调后不易分层,口感 佳,细腻且无青草腥味。
根据本发明的一方面,本发明提供了含大麦若叶的固体饮料,所述 固体饮料包括如下组分:大麦若叶微粉15-60wt.%,木糖醇颗粒10-50 wt.%,抹茶粉5-20wt.%,菊粉1-10wt.%,魔芋粉0.5-4.0wt.%,二氧 化硅0.2-3.0wt.%,三氯蔗糖0.1-3.0wt.%。
根据本发明的一方面,本发明提供了含大麦若叶的固体饮料的制备 方法,所述制备方法包括如下步骤:a)将大麦若叶微粉、菊粉、魔芋 粉、抹茶粉混合后进行湿法造粒,以得到造粒粉;b)将步骤a)中的所 述造粒粉干燥后通过20目筛,以得到整粒;以及c)将步骤b)中的所 述整粒与木糖醇颗粒、三氯蔗糖、二氧化硅混合均匀,分装后得到固 体饮料。优选地,所述大麦若叶微粉的粒径为15-50微米。
菊粉是植物中储备性多糖,是一种天然的水溶性膳食纤维,几乎不 被胃酸消解和消化,只有在结肠被有益微生物利用,从而改善肠道环 境,所以具有调节肠道微生物菌群,改善肠道健康,防止便秘功效, 另外还有控制血脂、降低血糖、促进矿物质吸收等功能。同时由于菊 粉中果糖含量丰富,口感清凉,与木糖醇复合使用时能显著降低大麦 若叶微粉带来的粗糙感。市场上菊粉粒径一般在70-420微米之间。
魔芋粉也称为“魔芋微粉”、“纯化魔芋粉”、“纯化魔芋微粉”等, 具有降脂、降糖、防癌、通便等功效。魔芋粉中含有的葡甘聚糖,是 一种高分子化合物,具有很强的吸水性,吸水后体积可膨胀80-100倍, 食后不易被消化吸收,并能吸附胆固醇和胆汁酸,对降低血压,减少 心血管病发作有一定效用。魔芋粉(粒径一般小于125微米)易于造 粒,溶解后粘度大,水溶液稳定性好,不易分层,除此之外,还有一 种润滑爽口的感觉,这些对大麦若叶粉的水分散液的稳定性和口感有 很好的改善作用。
抹茶是迄今为止,最新鲜、最营养的一种茶品。因其天然的鲜绿色 泽,增强消费欲望,而且其有着天然的清香,很受消费者喜爱。市场 上抹茶粉的粒径一般在80-250微米之间。
将大麦若叶微粉、菊粉、魔芋粉、抹茶粉混合后运用常规方法进行 湿法造粒,湿法造粒时的润湿剂为乙醇水溶液,粘合剂为魔芋粉、甲 基纤维素、羧甲基纤维素钠、低取代羟丙基纤维素、羟丙基甲基纤维 素、或聚乙烯吡咯烷酮(PVP)等,值得注意的是,为了防止或减少上 述少量的粘合剂的引入影响终产品固体饮料的口感,可以将部分魔芋 粉、甲基纤维素、羧甲基纤维素钠、低取代羟丙基纤维素、羟丙基甲 基纤维素、或聚乙烯吡咯烷酮(PVP)中的一种或者一种以上溶于乙醇 水溶液中用作粘合剂,所述粘合剂的浓度在1-15wt.%之间。
将上述物料湿法造粒后烘干,过20目筛整粒后与颗粒木糖醇、三 氯蔗糖、二氧化硅混合均匀,分装后得固体饮料成品。整个操作在D 级洁净区中进行,防止了微生物污染。
本发明的优点在于:通过菊粉与木糖醇、抹茶粉、魔芋粉以一定的 量配合使用能有效地消除大麦若叶微粉的粗糙感和青草腥味,反而有 一种细腻、润滑、清香的感觉,三氯蔗糖的加入使固体饮料溶液甜度 适中,口感很好。而且将大麦若叶微粒、菊粉、魔芋粉等预先湿法造 粒,后与颗粒木糖醇、三氯蔗糖、二氧化硅混合,能保证终产品固体 饮料有良好的溶解性能,溶解分散很快,而且溶解时不会成团和粘壁。 更进一步地,菊粉和魔芋粉的加入,它们溶解后加大了溶液的粘度, 具有一定的溶液稳定效果,从而使溶解分散后的饮料不容易由于沉降 而分层。因此,通过本发明得到的固体饮料易冲调,不会结团和粘壁, 且冲调后不易分层,口感佳,细腻且无青草腥味。这些优点使得本发 明中的终产品固体饮料具有良好的消费体验。本发明中所有物料为市 场可以采购到的常规物料。
具体实施方式
以下将结合实施例对本发明做进一步说明,本发明的实施例仅用 于说明本发明的技术方案,并非限定本发明。
实施例1
一种含大麦若叶微粒的固体饮料,其中各组分的质量百分比为:

制作工艺:将大麦若叶微粉(粒径15微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、部分魔芋粉(0.07kg, 市售粒径小于125微米)混合均匀,另外将0.05kg魔芋粉溶解于500g 75%乙醇中作为粘结剂溶液,经过湿法制粒,干燥,过20目筛整粒; 再与颗粒木糖醇(市售食品级)、二氧化硅(市售食品级)、三氯蔗糖 (市售食品级)混合均匀,经分装后得固体饮料。整个操作在D级洁 净区操作。
本发明得到的固体饮料冲调性好,不结团,不粘壁,不会迅速分层, 口感非常细腻润滑,无不良后感,有自然清香,体验感较好。此固体 饮料的冲调性能和口感评价见表1。
实施例2
一种含大麦若叶微粒的固体饮料,其中各组分的质量百分比为:

制作工艺:将大麦若叶微粉(粒径50微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、魔芋粉(市售粒径小于 125微米)混合均匀,另外将0.03kg羧甲基纤维素钠溶解于3000g75% 乙醇中作为粘结剂溶液,经过湿法制粒,干燥,过20目筛整粒,再与 颗粒木糖醇(市售食品级)、二氧化硅(市售食品级)、三氯蔗糖(市 售食品级)混合均匀,经分装后得固体饮料。整个操作在D级洁净区 操作。
本发明得到的固体饮料冲调性好,不结团,不粘壁,不会迅速分层, 口感较丰满,无不良后感,有自然清香,体验感好。此固体饮料的冲 调性能和口感评价见表1。
实施例3

制作工艺:将大麦若叶微粉(粒径25微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、魔芋粉(市售粒径小于 125微米)混合均匀,另外将0.5kg聚乙烯吡咯烷酮(PVP)溶解于 2800g75%乙醇中作为粘结剂溶液,经过湿法制粒,干燥,过20目筛整粒,再与颗粒木糖醇(市售食品级)、二氧化硅(市售食品级)、三氯 蔗糖(市售食品级)混合均匀,经分装后得固体饮料。整个操作在D 级洁净区操作。

制作工艺:将大麦若叶微粉(粒径35微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、魔芋粉(市售粒径小于 125微米)混合均匀,另外将0.5kg甲基纤维素溶解于3300g70%乙醇 中作为粘结剂溶液,经过湿法制粒,干燥,过20目筛整粒,再与颗粒 木糖醇(市售食品级)、二氧化硅(市售食品级)、三氯蔗糖(市售食 品级)混合均匀,经分装后得固体饮料。整个操作在D级洁净区操作。

制作工艺:将大麦若叶微粉(粒径45微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、魔芋粉(市售粒径小于 125微米)混合均匀,另外将0.03kg羟丙基甲基纤维素溶解于600g50% 乙醇中作为粘结剂溶液,经过湿法制粒,干燥,过20目筛整粒,再与 颗粒木糖醇(市售食品级)、二氧化硅(市售食品级)、三氯蔗糖(市 售食品级)混合均匀,经分装后得固体饮料。整个操作在D级洁净区 操作。

实施例6
一种含大麦若叶微粒的固体饮料,其中各组分的质量百分比为:

制作工艺:将大麦若叶微粉(粒径15微米)、抹茶粉(市售粒径 80-250微米)、菊粉(市售粒径70-420微米)、魔芋粉(市售粒径小于 125微米)混合均匀,另外将0.03kg低取代羟丙基纤维素(产自湖州 展望药业有限公司,型号:LH21)溶解于300g30%乙醇中作为粘结剂 溶液,经过湿法制粒,干燥,过20目筛整粒,再与颗粒木糖醇(市售 食品级)、二氧化硅(市售食品级)、三氯蔗糖(市售食品级)混合均 匀,经分装后得固体饮料。整个操作在D级洁净区操作。
本发明得到的固体饮料冲调性好,不结团,不粘壁,不会迅速分层, 口感较丰满,无不良后感,有自然清香,体验感好。此固体饮料的冲 调性能和口感评价见表1。

各种辅料为市售,工艺为按先前文献,将各主料和辅料直接混合后 包装。得到的产品易分层,青草味较浓,口感不佳。此固体饮料的冲 调性能和口感评价见表1。

一种含大麦若叶微粒的固体饮料,其中各组分的质量百分比为:

各种辅料为市售,工艺为按先前文献,将各主料和辅料直接混合后 包装。得到的产品溶解时很容易结团,不易分散,溶解后放置2小时 分层。此固体饮料的冲调性能和口感评价见表1。

Claims (7)

1.一种含大麦若叶的固体饮料,所述固体饮料包括如下组分:

2.如权利要求1所述的固体饮料,其中,所述大麦若叶微粉的粒度为15-50微米。
3.一种含大麦若叶的固体饮料的制备方法,所述制备方法包括以下步骤:
a)将大麦若叶微粉、菊粉、魔芋粉、抹茶粉混合后进行湿法造粒,以得到造粒粉;
b)将步骤a)中的所述造粒粉干燥后通过20目筛,以得到整粒;以及
c)将步骤b)中的所述整粒与木糖醇颗粒、三氯蔗糖、二氧化硅混合均匀,分装后得到固体饮料。
4.如权利要求3所述的制备方法,其中,在步骤a)的湿法造粒时,添加有粘合剂和润湿剂。
5.如权利要求4所述的制备方法,其中,所述粘合剂为魔芋粉、甲基纤维素、羧甲基纤维素钠、低取代羟丙基纤维素、羟丙基甲基纤维素、聚乙烯吡咯烷酮中的一种或者一种以上。
6.如权利要求4或5所述的制备方法,其中,所述粘合剂在浓度在1-15wt.%之间。
7.如权利要求4所述的制备方法,其中,所述润湿剂为乙醇水溶液。
