step two, placing the raw materials: placing the cut cabbage sides into a square pickling barrel, wherein the direction of the cabbage side at the lowest layer is upward and the direction of the cabbage side at the penultimate layer is downward when the cut cabbage sides are placed, so that the cabbage side is placed to the uppermost layer and then compacted after the cabbage side is placed to the heart and the cabbage side is placed to the last layer;
step three, pickling: pouring the prepared salt water in a certain proportion into a pickling square barrel to enable the salt water to submerge the Chinese cabbages, covering the pickling square barrel with a cover, sealing the pickling square barrel, and pickling for 24-48 hours;

step six, killing and disinfecting: putting the cleaned Chinese cabbage shreds into a pasteurization machine, adjusting the temperature and time of the pasteurization machine, and sterilizing the Chinese cabbage shreds to remove harmful bacteria;
step seven, cooling: directly placing the disinfected Chinese cabbage shreds into a cooler, washing the Chinese cabbage shreds with filtered water to quickly cool the Chinese cabbage shreds,
step eight, canning: placing the cooled shredded cabbage into an automatic canning machine, placing a conveying device below the automatic canning machine, uniformly placing containers on the conveying device, filling the containers quantitatively by the automatic canning machine after the containers pass through the automatic canning machine by the movement of the conveying device, moving the containers on the conveying device to the position below the automatic water injection machine after the containers pass through the automatic canning machine, respectively containing lactobacillus preparation water and brine in the automatic water injection machine, adding the lactobacillus preparation water and the brine into the containers by the automatic water injection machine, moving the containers to the position below the automatic capping machine by the conveying device, sealing the containers,
ninth, fermentation: and fermenting the canned container at the temperature of 35-38 ℃ for thirty days to prepare a finished product.
