Abstract
本发明公开了一种具有减脂和通便功效的营养代餐产品及其制备方法,该代餐产品包括以下原料:分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉、圆苞车前子壳粉、白芸豆提取物、矿物质、复合维生素、乳化剂和中草药提取液;其制备方法为:用高压均质机将上述原料进行均质,即得混合浆液;对所得到的混合浆液进行喷雾干燥得到混合粉末,对混合粉末进行杀菌、包装,即得具有减脂和通便功效的营养代餐产品;对本发明所得到的营养代餐产品进行效果实验,实验结果表明,该营养代餐产品具有很好的减脂和通便的效果。

背景技术
便秘是指粪便量少且干结,慢性便秘患者表现为排便困难,粪便干结,数天甚至1周才排便一次,排便时可有左腹痉挛性痛与下坠感,部分病人诉口苦、食欲减退、腹胀、下腹不适、排气多或有头晕、头痛、疲乏等神经官能症状;急性肠道阻塞引起的便秘常伴有剧烈腹痛、呕吐或便血;肠梗阻患者则常有腹胀、腹痛、肠型及肠蠕动波等症状。便秘可发生于任何年龄人群,孩子易患便秘,很多孩子都存在大便费劲的现象,而且这种情况在逐年上升,中青年发病率约为1%-5%,老年人发病率高达15%-30%,男士和女士患便秘的比例为1:4,由于便秘的反复或持续发作,给患者带来很大的痛苦,影响人们的生活和工作,甚至会诱发或加重老年人的心脑血管疾病,以及引起肠梗阻,危及生命安全。
肥胖是指一定程度的明显超重与脂肪层过厚,是体内脂肪,尤其是甘油三酯积聚过多而导致的一种状态,随着现代人们生活方式的改变和生活水平的提高,肥胖的发病率呈逐年增加的趋势,肥胖不仅影响体形,还与心脑血管病、糖尿病、肿瘤及关节炎等疾病的发生、发展均有密切关系,故肥胖对健康的危害越来越受到人们的关注。
代餐,顾名思义就是取代部分或全部正餐的食物。一般代餐食品具有高纤维、高蛋白、低热量、持续饱腹感的特性,利用代餐可以更严格正确的控制食量和热量,进而达到减肥的目的,膳食纤维能够促进肠道蠕动,进而达到通便的目的,代餐产品通过调整膳食结构中的蛋白质、脂肪、碳水化合物、膳食纤维、维生素和矿物质的摄入,保证在减肥和通便的过程中,不饥饿、不乏力、不腹泻、不反弹、不改变饮食习惯,符合世界卫生组织推荐的健康饮食理念。但是目前市场上的代餐产品主要功能是解决饱腹感的问题,并没有解决减脂和通便的问题。
发明内容
本发明的目的在于提供一种具有减脂和通便功效的营养代餐产品及其制备方法,以解决现有技术中的问题。
为实现上述目的,本发明提供如下技术方案:
一种具有减脂和通便功效的营养代餐产品,该代餐产品包括以下重量份的原料:分离乳清蛋白粉30-50g、燕麦粉20-40g、黑芝麻粉20-40g、大豆蛋白肽30-50g、魔芋精粉20-30g、螺旋藻粉5-15g、绿茶粉5-10g、圆苞车前子壳粉5-10g、白芸豆提取物5-15g、矿物质1-5g、复合维生素1-5g、乳化剂1-5g和中草药提取液10-20g。
分离乳清蛋白被称为蛋白之王,是从牛奶中提取的一种蛋白质,它所含有的生物活性化合物如:α-乳清蛋白、β-乳球蛋白、乳铁蛋白以及免疫球蛋白,可以调节人体的免疫力,同时分离乳清蛋白也含大量支键氨基酸,可有效的为肌肉补充所需的养份。
燕麦粉中富含可溶性性膳食纤维(β-聚葡萄糖),它可以改善消化功能、促进肠胃蠕动。
黑芝麻粉中富含维生素E,具有增强免疫力、润肠、缓解大便干燥、调节内分泌等作用。
大豆蛋白肽能刺激脂肪组织的活性,增加散热量,具有促进脂肪和能量代谢的作用,抑制体内脂肪的贮存,因此长期食用大豆蛋白肽能有效地控制体重的增加,起到很好的预防肥胖和减肥的效果。
魔芋精粉中含量最大的是葡萄甘露聚糖,葡萄甘露聚糖具有强大的膨胀力,可填充胃肠,消除饥饿感,又因魔芋所含热量微乎其微,故可控制体重,达到减肥健美的目的,此外魔芋中还含有十六种氨基酸、十种矿物质微量元素和丰富的膳食纤维。
螺旋藻是碱性食品,螺旋藻内含有很高的植物性蛋白质以及丰富的叶绿素、β-胡萝卜素等,这些营养物质对胃酸中和及胃肠道粘膜修复、再生和正常分泌功能极为有效,特别适用于肠胃患者。
绿茶粉中含有的芳香族化合物能溶解脂肪、化浊去腻、防止脂肪积滞体内,绿茶粉中还含有维生素B1和维生素C,其能促进胃液分泌,有助消化与消脂,对减肥有促进作用。
圆苞车前子壳中含有丰富的水溶性膳食纤维,水溶性膳食纤维遇水会膨胀,形成数十倍的凝胶团,增加饱足感的同时,却不会提供热量,有利于减肥。
白芸豆提取物的功效成份是芸豆蛋白,芸豆蛋白是一种天然的α-淀粉酶抑制剂,α-淀粉酶抑制剂通过对淀粉酶的抑制作用而发挥减肥效果,并经胃肠道排出体外,它不进入血液循环***,也不作用于大脑中枢,减肥的同时不抑制食欲,使用剂量很高时也无副作用,符合世界卫生组织的减肥原则,是一种绿色减肥原料。
中草药提取液由以下重量份的原料制备而成:火麻仁10-15g、番石榴果3-9g、莱菔子5-12g、决明子9-15g、葛根9-15g、黄精10-15g、当归6-12g、肉苁蓉15-30g和瓜蒌仁6-15g。

作为优化,复合维生素选自维生素A、维生素B、维生素B1、维生素B6、维生素B12、维生素C、维生素D、维生素E、叶酸、烟酸、D-泛酸钙中的一种或多种。维生素是维持身体健康所必需的一类有机化合物,它在体内既不是构成身体组织的原料,也不是能量的来源,而是一类调节物质,在物质代谢中具有重要的作用,如果长期缺乏某种维生素,就会引起生理机能障碍而发生某种疾病,由于它在体内不能合成或合成量不足,所以虽然其需要量很少,但还是需要经常由食物供给。
作为优化,矿物质包括碳酸钙、碳酸镁、葡萄糖酸锌和甘氨酸亚铁。矿物质和维生素一样,是人体必需的七大营养素之一,矿物质在人体内不能自行合成,必须通过膳食进行补充。
作为优化,乳化剂选自脂肪酸单甘油脂、糖酯、大豆磷脂、月桂酸单甘油酯、丙二醇脂肪酸酯中的一种或多种。
一种具有减脂和通便功效的营养代餐产品的制备方法包括以下步骤:
(1)中草药提取液的制备:
a、取配方当中的火麻仁、番石榴果、莱菔子、决明子、葛根、黄精、当归、肉苁蓉和瓜蒌仁用清水洗干净后放入砂锅中,然后往砂锅中加入常温饮用水,水量没过药材表面2-4cm,浸泡40-60min;煎煮前用饮用水浸泡,有利于中草药中有效成分的煎出,这是因为中草药干燥时,水分被蒸发,细胞壁及导管皱缩,细胞液干枯,其中的物质以结晶或无定形沉淀存在于细胞内,煎煮前浸泡,可以使细胞重新胀满,当水分进一步浸入时,细胞可膨胀破裂,使中草药中大量有效成分释放出来;
b、先大火煮沸,然后改小火煎煮25-45min,煎煮过程中不断搅拌,搅拌是为了使中草药充分煎透,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用,滤渣倒回砂锅中,往砂锅中加入常温饮用水,水量没过药材表面2-4cm;
c、先大火煮沸,然后改小火煎煮15-25min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用;煎煮两次是为充分利用中草药,避免浪费,因为煎药时药物中的有效成分先溶解在药材组织的水液中,然后再扩散到药材外部的水液中,当药材内外溶液的浓度达到平衡时,有效成分就不再溶出了,这时,只有将药液滤出,重新加水煎煮,有效成分才能继续溶出;
d、将步骤(b)和(c)所得滤液放入蒸汽锅中,混合均匀后进行浓缩,浓缩至滤液体积的十分之一,即得中草药提取液;
(2)具有减脂和通便功效的营养代餐产品的制备:
a、取分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉和圆苞车前子壳粉分别经过100-120目的网筛过滤,使各原料粒度均匀一致;目是指每英寸筛网上的孔眼数目,目数越高,筛网孔眼越多,能够通过筛网的粒子的粒径越小,100-120目的网筛能通过的粒径大小为120-150μm,各原料用100-120目的网筛进行过滤,可以得到非常细的原料粉;
b、按配比分别称取步骤(a)所得的各原料,依次加入高压均质机中,然后再往高压均质机中加入规定量的白芸豆提取物、矿物质、复合维生素、乳化剂和步骤(1)所得的中草药提取液及300-500ml的纯化水,在压强为50-70MPa下进行均质,即得混合浆液;高压均质机中上述物料的料液在挤压、强冲击和失压膨胀三重作用下更加细化,物料更均匀的相互混合,使整个混合浆液体系更加稳定;
c、将步骤(b)得到的混合浆液进行喷雾干燥,即得混合粉末,喷雾干燥进风温度为160-180℃,出风温度为60-80℃;喷雾干燥是***化技术应用于物料干燥的一种方法,该法能直接使溶液、乳浊液干燥成粉状或颗粒状制品,可省去蒸发、粉碎等工序;
d、用微波瞬时灭菌机对步骤(c)所得混合粉末进行灭菌,灭菌温度为40-60℃,时间为20-30min,自然冷却至室温,得无菌混合粉末;
e、用真空包装设备对步骤(d)所得的无菌混合粉末进行真空包装,即得具有减脂和通便功效的营养代餐产品。
与现有技术相比,本发明的有益效果是:本发明中分离乳清蛋白最接近人体蛋白质,人体能够快速吸收,补充营养,蛋白利用率高;白芸豆提取物作为功能性营养元素,既能帮助减肥,又能改善亚健康;大豆蛋白肽作为小分子肽更容易被人体吸收并达到很好的效果;燕麦粉、黑芝麻粉、魔芋精粉、螺旋藻粉、绿茶粉和圆苞车前子壳粉富含丰富的膳食纤维和维生素,能够促进胃肠道蠕动,改善肠道有益菌群,使人们有饱腹感的同时,更有助消化;中草药提取液当中的原料均具有润肠通便的功效,高蛋白、高纤维、低热量、多种维生素和矿物质,营养全面均衡,本发明未添加香精、色素和防腐剂,是一种绿色健康食品。

下面对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1:
一种具有减脂和通便功效的营养代餐产品,该代餐产品包括以下重量份的原料:分离乳清蛋白粉30g、燕麦粉20g、黑芝麻粉20g、大豆蛋白肽30g、魔芋精粉20g、螺旋藻粉5g、绿茶粉5g、圆苞车前子壳粉5g、白芸豆提取物5g、矿物质1g、复合维生素1g、乳化剂1g和中草药提取液10g。
中草药提取液由以下重量份的原料制备而成:火麻仁10g、番石榴果3g、莱菔子5g、决明子9g、葛根9g、黄精10g、当归6g、肉苁蓉15g和瓜蒌仁6g。
该具有减脂和通便功效的营养代餐产品的制备方法包括以下步骤:
(1)中草药提取液的制备:
a、取火麻仁10g、番石榴果3g、莱菔子5g、决明子9g、葛根9g、黄精10g、当归6g、肉苁蓉15g和瓜蒌仁6g用清水洗干净后放入砂锅中,然后往砂锅中加入常温饮用水,水量没过药材表面2cm,浸泡40min;
b、先大火煮沸,然后改小火煎煮25min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用,滤渣倒回砂锅中,往砂锅中加入常温饮用水,水量没过药材表面2cm;
c、先大火煮沸,然后改小火煎煮15min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用;
d、将步骤(b)和(c)所得滤液放入蒸汽锅中,混合均匀后进行浓缩,浓缩至滤液体积的十分之一,即得中草药提取液;
(2)具有减脂和通便功效的营养代餐产品的制备:
a、取分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉、圆苞车前子壳粉分别经过100目的网筛过滤,使各原料粒度均匀一致;
b、分别称取步骤(a)所得的分离乳清蛋白粉30g、燕麦粉20g、黑芝麻粉20g、大豆蛋白肽30g、魔芋精粉20g、螺旋藻粉5g、绿茶粉5g、圆苞车前子壳粉5g,依次加入高压均质机中,然后再往高压均质机中加入白芸豆提取物5g、矿物质1g、复合维生素1g、乳化剂1g和步骤(1)所得的中草药提取液10g及300的纯化水,在压强为50MPa下进行均质,即得混合浆液;
c、将步骤(b)得到的混合浆液进行喷雾干燥,即得混合粉末,喷雾干燥进风温度为160℃,出风温度为60℃;
d、用微波瞬时灭菌机对步骤(c)所得混合粉末进行灭菌,灭菌温度为40℃,时间为20min,自然冷却至室温,得无菌混合粉末;
e、用真空包装设备对步骤(d)所得的无菌混合粉末进行真空包装,即得具有减脂和通便功效的营养代餐产品。
实施例2:
一种具有减脂和通便功效的营养代餐产品,该代餐产品包括以下重量份的原料:分离乳清蛋白粉40g、燕麦粉30g、黑芝麻粉30g、大豆蛋白肽40g、魔芋精粉25g、螺旋藻粉10g、绿茶粉7.5g、圆苞车前子壳粉7.5g、白芸豆提取物10g、矿物质3g、复合维生素3g、乳化剂3g和中草药提取液15g。
中草药提取液由以下重量份的原料制备而成:火麻仁12.5g、番石榴果6g、莱菔子9g、决明子12g、葛根12g、黄精12g、当归9g、肉苁蓉25g和瓜蒌仁9g。
一种具有减脂和通便功效的营养代餐产品的制备方法包括以下步骤:
(1)中草药提取液的制备:
a、取火麻仁12.5g、番石榴果6g、莱菔子9g、决明子12g、葛根12g、黄精12g、当归9g、肉苁蓉25g和瓜蒌仁9g用清水洗干净后放入砂锅中,然后往砂锅中加入常温饮用水,水量没过药材表面3cm,浸泡50min;
b、先大火煮沸,然后改小火煎煮35min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用,滤渣倒回砂锅中,往砂锅中加入常温饮用水,水量没过药材表面3cm;
c、先大火煮沸,然后改小火煎煮20min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用;
d、将步骤(b)和(c)所得滤液放入蒸汽锅中,混合均匀后进行浓缩,浓缩至滤液体积的十分之一,即得中草药提取液;
(2)具有减脂和通便功效的营养代餐产品的制备:
a、取分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉和圆苞车前子壳粉分别经过110目的网筛过滤,使各原料粒度均匀一致;
b、分别称取步骤(a)所得的分离乳清蛋白粉40g、燕麦粉30g、黑芝麻粉30g、大豆蛋白肽40g、魔芋精粉25g、螺旋藻粉10g、绿茶粉7.5g、圆苞车前子壳粉7.5g,依次加入高压均质机中,然后再往高压均质机中加入白芸豆提取物10g、矿物质3g、复合维生素3g、乳化剂3g和步骤(1)所得的中草药提取液15g及400ml的纯化水,在压强为60MPa下进行均质,即得混合浆液;
c、将步骤(b)得到的混合浆液进行喷雾干燥,即得混合粉末,喷雾干燥进风温度为170℃,出风温度为70℃;
d、用微波瞬时灭菌机对步骤(c)所得混合粉末进行灭菌,灭菌温度为50℃,时间为25min,自然冷却至室温,得无菌混合粉末;
e、用真空包装设备对步骤(d)所得的无菌混合粉末进行真空包装,即得具有减脂和通便功效的营养代餐产品。
实施例3:
一种具有减脂和通便功效的营养代餐产品,该代餐产品包括以下重量份的原料:分离乳清蛋白粉50g、燕麦粉40g、黑芝麻粉40g、大豆蛋白肽50g、魔芋精粉30g、螺旋藻粉15g、绿茶粉10g、圆苞车前子壳粉10g、白芸豆提取物15g、矿物质5g、复合维生素5g、乳化剂5g和中草药提取液20g。
中草药提取液由以下重量份的原料制备而成:火麻仁15g、番石榴果9g、莱菔子12g、决明子15g、葛根15g、黄精15g、当归12g、肉苁蓉30g和瓜蒌仁15g。
一种具有减脂和通便功效的营养代餐产品的制备方法包括以下步骤:
(1)中草药提取液的制备:

b、先大火煮沸,然后改小火煎煮45min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用,滤渣倒回砂锅中,往砂锅中加入常温饮用水,水量没过药材表面4cm;
c、先大火煮沸,然后改小火煎煮25min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用;
d、将步骤(b)和(c)所得滤液放入蒸汽锅中,混合均匀后进行浓缩,浓缩至滤液体积的十分之一,即得中草药提取液;
(2)具有减脂和通便功效的营养代餐产品的制备:
a、取分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉和圆苞车前子壳粉分别经过120目的网筛过滤,使各原料粒度均匀一致;
b、分别称取步骤(a)所得的分离乳清蛋白粉50g、燕麦粉40g、黑芝麻粉40g、大豆蛋白肽50g、魔芋精粉30g、螺旋藻粉15g、绿茶粉10g、圆苞车前子壳粉10g,依次加入高压均质机中,然后再往高压均质机中加入白芸豆提取物15g、矿物质5g、复合维生素5g、乳化剂5g和步骤(1)所得的中草药提取液20g。及500ml的纯化水,在压强为70MPa下进行均质,即得混合浆液;
c、将步骤(b)得到的混合浆液进行喷雾干燥,即得混合粉末,喷雾干燥进风温度为180℃,出风温度为80℃;
d、用微波瞬时灭菌机对步骤(c)所得混合粉末进行灭菌,灭菌温度为60℃,时间为30min,自然冷却至室温,得无菌混合粉末;
e、用真空包装设备对步骤(d)所得的无菌混合粉末进行真空包装,即得具有减脂和通便功效的营养代餐产品。
实验例:
实验样品1-3:实施例1-3制备的具有减脂和通便功效的营养代餐产品。
(1)实验对象:
以60名女性志愿者为研究对象,她们的年龄在35-38岁之间,分为3组,分别食用本发明实施例1-3制备的具有减脂和通便功效的营养代餐产品,所有受试者身体正常健康。
(2)实验方法:
在受试人员尚未食用代餐产品之前,对她们的体重和体脂比进行测量并记录,实验持续两个周期,每一个周期是30天,受试人员食用代餐产品第一周期和第二周期之后,分别对她们的体重和体脂比进行测定并记录,实验期间受试人员早晚餐食用代餐产品,午餐保持正常的饮食,试验品用量均为50g,用300ml温水冲服,实验结果见表1。

(3)实验结果:
从表1中可以看出,食用二个周期后,受试人员平均体重显著降低,体脂比降低,达到了减肥的目的,在试验期间每天监测受试人员的血压和血糖,发现受试人员的血压和血糖未出现大的波动,实验结果表明食用本发明代餐产品可以降低体脂比,而且未对身体产生副作用。

Claims (6)
1.一种具有减脂和通便功效的营养代餐产品,其特征在于,该代餐产品包括以下重量份的原料:分离乳清蛋白粉30-50g、燕麦粉20-40g、黑芝麻粉20-40g、大豆蛋白肽30-50g、魔芋精粉20-30g、螺旋藻粉5-15g、绿茶粉5-10g、圆苞车前子壳粉5-10g、白芸豆提取物5-15g、矿物质1-5g、复合维生素1-5g、乳化剂1-5g和中草药提取液10-20g。
2.根据权利要求1所述的一种具有减脂和通便功效的营养代餐产品,其特征在于,所述中草药提取液由以下重量份的原料制备而成:火麻仁10-15g、番石榴果3-9g、莱菔子5-12g、决明子9-15g、葛根9-15g、黄精10-15g、当归6-12g、肉苁蓉15-30g和瓜蒌仁6-15g。
3.根据权利要求2所述的一种具有减脂和通便功效的营养代餐产品,其特征在于:所述复合维生素选自维生素A、维生素B、维生素B1、维生素B6、维生素B12、维生素C、维生素D、维生素E、叶酸、烟酸、D-泛酸钙中的一种或多种。
4.根据权利要求3所述的一种具有减脂和通便功效的营养代餐产品,其特征在于:所述矿物质包括碳酸钙、碳酸镁、葡萄糖酸锌和甘氨酸亚铁。
5.根据权利要求4所述的一种具有减脂和通便功效的营养代餐产品,其特征在于:所述乳化剂选自脂肪酸单甘油脂、糖酯、大豆磷脂、月桂酸单甘油酯、丙二醇脂肪酸酯中的一种或多种。
6.一种根据权利要求1至5中任一项所述的具有减脂和通便功效的营养代餐产品的制备方法,其特征在于,该制备方法包括以下步骤:
(1)中草药提取液的制备:
a、取配方当中的火麻仁、番石榴果、莱菔子、决明子、葛根、黄精、当归、肉苁蓉和瓜蒌仁用清水洗干净后放入砂锅中,然后往砂锅中加入常温饮用水,水量没过药材表面2-4cm,浸泡40-60min;
b、先大火煮沸,然后改小火煎煮25-45min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用,滤渣倒回砂锅中,往砂锅中加入常温饮用水,水量没过药材表面2-4cm;
c、先大火煮沸,然后改小火煎煮15-25min,煎煮过程中不断搅拌,煎煮完毕后自然冷却至室温,用滤纸进行过滤,滤液备用;
d、将步骤(b)和(c)所得滤液放入蒸汽锅中,混合均匀后进行浓缩,浓缩至滤液体积的十分之一,即得中草药提取液;
(2)具有减脂和通便功效的营养代餐产品的制备:
a、取分离乳清蛋白粉、燕麦粉、黑芝麻粉、大豆蛋白肽、魔芋精粉、螺旋藻粉、绿茶粉和圆苞车前子壳粉分别经过100-120目的网筛过滤,使各原料粒度均匀一致;
b、按配比分别称取步骤(a)所得的各原料,依次加入高压均质机中,然后再往高压均质机中加入规定量的白芸豆提取物、矿物质、复合维生素、乳化剂和步骤(1)所得的中草药提取液及300-500ml的纯化水,在压强为50-70MPa下进行均质,即得混合浆液;
