本发明具体涉及一种水产品保鲜剂,由以下重量份数原料组成:海藻酸钠2‑4份、壳聚糖5‑10份、木质素2‑8份、天冬氨酸1‑3份、茶多酚10‑20份、溶菌酶1‑2份、冰醋酸0.5‑2份、甘油2‑10份、食味5‑10份、维生素C1‑3.5份、乙醇1‑3份等组成。本发明延长水产品的保鲜期,还可以使水产品在解冻或烹调时其含水量不易析出,最大限度保持水产品的风味,同时可抑制微生物的生长,保鲜效果优于普通的低温保藏方法。

技术领域
本发明涉及一种保鲜剂领域,具体涉及一种水产品保鲜剂。
背景技术
水产品具有低脂肪、高蛋白的特点,是合理膳食结构中不可缺少的重要成分,已成为人们摄取动物性蛋白质的重要来源。其中如鱼、虾、蟹等,因其富含蛋白质和水分,深受广大消费者的青睐,但是此类产品极易引起细菌繁殖而腐败变质,为防止水产品腐败,传统做法是将其冰冻,使细菌在低温下难以繁殖,这虽然避免了水产品的腐败,但冰冻过程中,水产品营养物质流失,水产品肉质变干、发硬或糜,其鲜味大打折扣。为此,人们一直致力于研究水产品的非冰冻保鲜方法。目前,对水产品保鲜大多采用保鲜剂浸泡方法,而保鲜剂基本上都是复合磷酸盐、亚硫酸盐或醋酸钠等化学物质,其保鲜效果较好,但是化学保鲜剂对人体有副作用,食用过多必定危害人体健康。
发明内容
本发明所要解决的技术问题在于提供一种水产品保鲜剂,本发明延长水产品的保鲜期,还可以使水产品在解冻或烹调时其含水量不易析出,最大限度保持水产品的风味,同时可抑制微生物的生长,保鲜效果优于普通的低温保藏方法。
本发明所要解决的技术问题采用以下技术方案来实现:
一种水产品保鲜剂,由以下重量份数原料组成:海藻酸钠2-4份、壳聚糖5-10份、木质素2-8份、天冬氨酸1-3份、茶多酚10-20份、溶菌酶1-2份、冰醋酸0.5-2份、甘油2-10份、食味5-10份、维生素C1-3.5份、乙醇1-3份。
本发明的有益效果是:本发明延长水产品的保鲜期,还可以使水产品在解冻或烹调时其含水量不易析出,最大限度保持水产品的风味,同时可抑制微生物的生长,保鲜效果优于普通的低温保藏方法。

一种水产品保鲜剂,由以下重量份数原料组成:海藻酸钠3份、壳聚糖8份、木质素6份、天冬氨酸2份、茶多酚15份、溶菌酶1份、冰醋酸1.2份、甘油5.5份、食味6.3份、维生素C2.5份、乙醇2份。
实施例2:
一种水产品保鲜剂,由以下重量份数原料组成:海藻酸钠4份、壳聚糖6份、木质素4份、天冬氨酸1份、茶多酚12份、溶菌酶2份、冰醋酸0.8份、甘油3.8份、食味5份、维生素C1.8份、乙醇1.2份。
实施例3:
一种水产品保鲜剂,由以下重量份数原料组成:海藻酸钠2.6份、壳聚糖3份、木质素4份、天冬氨酸2.2份、茶多酚18份、溶菌酶1.8份、冰醋酸1.6份、甘油8份、食味7份、维生素C3.2份、乙醇2.5份。
