本发明涉及一种核桃油的提取方法,特别是涉及一种超临界二氧化碳提取核桃油的工艺流程,属于食品加工领域。
背景技术
我国拥有极其丰富的核桃资源,而核桃仁作为保健干果产品很早就被国内外所认识,核桃仁性味甘平、温润,具有补肾养血、润肺定喘、润肠通便的作用。同时核桃仁还是一味乌发养颜、润肤防衰的美容佳品。核桃仁具有强肾养血的作用,所以,久服核桃可以令头发乌黑亮泽,对头发早白、发枯不荣具有良好的疗效。古代医学家对于核桃仁的药用价值早有认识,他们认为常服核桃仁令人能食,骨肉细腻光滑,须发黑泽,血脉通润。《神农本草经》将核桃列为久服轻身益气、延年益寿的上品。唐代孟诜著《食疗本草》中记述,吃核桃仁可以开胃,通润血脉,使骨肉细腻。宋代刘翰等著《开宝本草》中记述,核桃仁“食之令肥健,润肌,黑须发,多食利小水,去五痔。”明代李时珍著《本草纲目》记述,核桃仁有“补气养血,润燥化痰,益命门,处三焦,温肺润肠,治虚寒喘咳,腰脚重疼,心腹疝痛,血痢肠风”等功效。
核桃仁含油率为55%~70%,核桃油富含不饱和脂肪酸,如亚油酸、亚麻酸,约占90%以上,核桃油是核桃之精华,具有健脑益智,补脑、增加记忆力、促进大脑及神经***发育、促进视网膜发育、促进钙吸收帮助骨骼发育、保护肠胃、润肠通便、滋润肺腑、促进头发生长、预防及缓解皮肤湿疹、促进生长发育、平衡新陈代谢等功效,所以核桃仁及油是珍贵的药品和保健品。
在《中国食物结构改革与发展规划纲要》中,核桃油被列为大力提倡推广的食用油,现在制备核桃油的方法主要有压榨法生产工艺和有机溶剂浸出法生产工艺,压榨法生产工艺生产的毛油杂质较多,需经高温及化学方法处理,高温时间过长,产品形成方式酸油脂,不利于人体健康;水蒸气蒸馏油脂容易水解使不饱和脂肪酸有聚合物的生成,易造成油中维生素E、胡萝卜素、植物甾醇及微量元素等营养有益物质的损失和破坏,使蛋白质变性,其水溶性蛋白质含量明显下降,降低了核桃油本身的营养价值和功能特性;有机溶剂浸出法生产工艺生产的毛油有有机溶剂残留,对人体健康不利。
发明内容
本发明的目的在于针对背景技术的不足,提供一种超临界二氧化碳提取核桃油的工艺。
本发明是通过如下技术方案实现的:
一种超临界二氧化碳提取核桃油的工艺,它由以下步骤制得:
1)、核桃经破壳机破壳,壳仁分离后,挑选核桃仁,将核桃仁放入温度86℃的热水中,浸泡8分钟后将热水排出,用冷水冷却冲洗核桃仁,同时去除附皮;
2)将去皮的核桃仁在50~60℃的温度下烘烤3~5小时,或者放入炒锅内,炒制25~30分钟,温度为95~105℃;
3)将步骤2制得的核桃仁放入粉碎机粉碎30~50目细度;
4)将粉碎后的核桃仁投入萃取釜中,将萃取介质二氧化碳经流量计计量后进入萃取釜,控制超临界萃取温度为40~45℃,超临界萃取压力为36~40Mpa,二氧化碳流量为300~550升/小时,萃取时间2~3小时,然后开始卸压,卸压过程中使压力逐渐降低至常压,生成脱脂核桃仁、液态二氧化碳和核桃油的混合物;
5)将步骤4萃取制得的脱脂核桃仁、液态二氧化碳和核桃油的混合物放入油液分离器中,控制分离压力15~20Mpa、分离温度50~70℃,核桃油从油液分离器中分离出来;
6)将步骤5制得的核桃油进入脱色油罐,脱色油罐的真空度保持在550~600mm汞柱,油温保持在85~95℃,加入核桃油重量0.6%的活性碳,在搅拌下脱色30分钟后过滤去除杂质,即得成品;
进一步的,所述步骤6中,搅拌速度保持在55~65r/min,过滤温度保持在60~65℃。
进一步的,所述步骤6中,可用高速离心机处理去除杂质。
本发明的优点在于:
1、工艺及设备流程简单,采用超临界萃取,节能、安全、无污染,较之传统工艺可确保在压榨过程中各种营养成分不被破坏,从而使油质气味天然清香,原汁原味,绿色健康,营养全面。
2、有效避免了传统提取条件下溶剂毒性的残留,同时也防止了提取过程当中对人体的毒害和对环境的污染问题,同时萃取温度低,能较好地保留产品的生物活性成分,萃取核桃油后的核桃仁干燥后即为蛋白粉。
具体实施方式
下面将对本发明实施例中的技术方案进行清楚、完整地描述。
一种超临界二氧化碳提取核桃油的工艺,它由以下步骤制得:
1)、核桃经破壳机破壳,壳仁分离后,挑选核桃仁,将核桃仁放入温度86℃的热水中,浸泡8分钟后将热水排出,用冷水冷却冲洗核桃仁,同时去除附皮;
2)将去皮的核桃仁在50~60℃的温度下烘烤3~5小时,或者放入炒锅内,炒制25~30分钟,温度为95~105℃;

进一步的,所述步骤6中,搅拌速度保持在55~65r/min,过滤温度保持在60~65℃。

4)将粉碎后的核桃仁投入萃取釜中,将萃取介质二氧化碳经流量计计量后进入萃取釜,控制超临界萃取温度为40~45℃,超临界萃取压力为36~40Mpa,二氧化碳流量为300~550升/小时,萃取时间2~3小时,然后开始卸压,卸压过程中使压力逐渐降低至常压,生成脱脂核桃仁、液态二氧化碳和核桃油的混合物;
5)将步骤4萃取制得的脱脂核桃仁、液态二氧化碳和核桃油的混合物放入油液分离器中,控制分离压力15~20Mpa、分离温度50~70℃,核桃油从油液分离器中分离出来;
6)将步骤5制得的核桃油进入脱色油罐,脱色油罐的真空度保持在550~600mm汞柱,油温保持在85~95℃,加入核桃油重量0.6%的活性碳,在搅拌下脱色30分钟后过滤去除杂质,即得成品。
2.根据权利要求1所述的一种超临界二氧化碳提取核桃油的工艺,其特征在于:所述步骤6中,搅拌速度保持在55~65r/min,过滤温度保持在60~65℃。
3.根据权利要求1所述的一种超临界二氧化碳提取核桃油的工艺,其特征在于:所述步骤6中,可用高速离心机处理去除杂质。
