Abstract

本发明公开了一种杜若叶醋的酿造工艺,所述的杜若叶醋是以杜若叶为主要原料,经过杜若叶预处理、蒸料、接种、发酵、后熟、压榨过滤、陈酿等步骤酿造而成。本发明采用将杜若叶杀青后进行复合酶处理,杀青能够去除杜若叶中携带的涩味,改善成品醋的口感与风味,复合酶处理能够提高杜若叶的利用效率,更加丰富了成品醋的营养物质,使成品粗具有理气止痛等保健作用。

技术领域
本发明涉及一种醋的酿造工艺,尤其是涉及一种杜若叶醋的酿造工艺。
背景技术
杜若,别名地藕,竹叶莲,山竹壳菜,鸭跖草科、杜若属多年生直立或上升草本,杜若常用于治疗用于腰痛,跌打损伤。全草:理气止痛,疏风消肿。用于气滞作痛, 肌肤肿痛,胃痛,淋证;外用于蛇虫咬伤,痈疔疖,脱肛。《中国民族药志要》指出该全草亦用于治风眼,头晕晕眩,腰腿痛。
萝芙木嫩叶大部分用于制作药物,被加工成饼干、饮料、酒等产品,而以萝芙木嫩叶为主要原料酿造的杜若叶醋,尚未见到相关产品上市。
发明内容
本发明针对提供一种杜若叶醋的酿造工艺,充分利用了原料内的营养成分,提高了杜若叶的经济价值与营养价值。
本发明解决其技术问题所采取的技术方案是:
一种杜若叶醋的酿造工艺,其特征在于,所述的酿造工艺采用以下步骤:
A、原料预处理:挑选成熟的杜若叶、葛根、腊梅根、芦根、鱼腥草,清洗干净后分别剪成1cm的碎段,制成杜若叶、葛根段、腊梅根段、芦根段、鱼腥草段,取8kg杜若叶、6kg葛根段、1kg腊梅根段、1kg芦根段、1kg鱼腥草段混合均匀,制得原料段,备用;
B、浸泡:将10kg的原料段放入20kg的总酸度为25%的白醋中进行浸泡,浸泡时间为15天,经过滤得到浸泡醋及原料渣,将原料渣滤干备用;
C、粉碎:将滤干后的原料渣经过超细破壁粉碎机粉碎,制得原料粉,备用;
D、马铃薯预处理:将鲜马铃薯、无花果经清洗后,分别切成马铃薯粒、无花果粒,粒度为10克/粒,取8kg马铃薯粒、5kg无花果粒混合均匀后放置蒸煮锅中蒸熟至熟而不糊,摊放冷却,制得马铃薯料;
E、原料混合:向10kg的马铃薯料中加入7kg的原料粉、2kg的山药粉、1kg的百合粉、1kg的葛仙米粉,搅拌均匀,制得混合料;
F、酒精发酵:向10kg的混合料中加入0.2kg的酒酵母,搅拌均匀后,加入13kg的饮用水、3kg的枸杞汁、2kg的柠檬汁,温度控制为55℃,发酵50h,制得酒精发酵物料;
G、醋酸发酵:酒精发酵结束后,向10kg酒精发酵物料中加入0.25kg的醋酸酵母菌、2kg的桑葚汁、2kg的茅莓汁,搅拌均匀,50℃环境下发酵50小时,制得醋酸发酵物料;
H、压榨过滤:将醋酸发酵物料经过压滤机过滤,得醋酸发酵液,向10kg醋酸发酵液中加入0.04kg的单宁、0.02kg的琼脂,搅拌均匀,静置10天,得杜若叶、葛根发酵醋;
I、混合:取步骤B中的浸泡醋2.5kg、步骤H中的发酵酒7.5kg,充分搅拌均匀,制得杜若叶醋。
有益效果:本发明采用将杜若叶杀青后进行复合酶处理,杀青能够去除杜若叶中携带的涩味,改善成品醋的口感与风味,复合酶处理能够提高杜若叶的利用效率,丰富了成品醋的营养物质,使成品粗具有理气止痛等保健作用。
具体实施方式
实施例1:
一种杜若叶醋的酿造工艺,其特征在于,所述的酿造工艺采用以下步骤:
A.杜若叶预处理:取新鲜杜若叶,去除杂质,用流水清洗干净,采用120℃的蒸汽对杜若叶进行杀青10s,蒸汽杀青后将杜若叶用磨浆机磨碎,再入胶体磨,磨成杜若叶糜,向10kg杜若叶糜中加入0.006kg的纤维素酶、0.002kg的果胶酶、0.001kg的抗坏血酸钠,在42℃条件中联合水解40min,制成杜若叶泥;
B、葛根预处理:取新鲜、无腐烂的葛根,冲洗干净,切块后置入蒸煮设备中蒸熟,冷却后用磨浆机磨碎,制成葛根泥;
C、混合:取萝芙木泥4kg、葛根泥3kg、谷壳2.5kg、豌豆粉2kg、麸皮1.5kg,充分搅拌均匀,制成混合物;
D、蒸料、接种:混合物入蒸煮设备中,通入蒸汽,蒸20min,至熟透;后摊晾至室温,制成原料醅;
E、酒精发酵:向10kg原料醅中加入0.2kg的酒酵母,搅拌均匀后,加入12kg的饮用水,温度控制为52℃,发酵4天,制得醋醅;
F、醋酸发酵:向10kg醋醅中加入0.2kg的醋酸酵母菌,搅拌均匀, 42℃环境下发酵8天后,不再控温,醋醅自然降温至36℃,发酵至醋醅酸度达8g/100ml时,停止醋酸发酵;
G、后熟:向10kg发酵后的醋醅中加入0.4kg的食盐,搅拌至均匀,静置5天;
H、压榨过滤:将后熟后的醋醅经过压滤机过滤,得醋酸发酵液,向10kg醋酸发酵液中加入0.02kg的皂土,搅拌均匀,静置11h,制得发酵醋液;
I、陈酿:将发酵醋液置入密闭容器中静置20 天,制得杜若叶醋;
J、杀菌、灌装:将萝芙木葛根醋在84℃环境下杀菌6min,杀菌后在真空无菌环境下灌装,通风干燥环境中贮藏。
实施例2:
A.杜若叶预处理:取新鲜杜若叶、葡萄叶、牛膝菊叶、金银花叶,去除杂质,取10kg杜若叶、3kg葡萄叶、3kg牛膝菊叶、2kg金银花叶混合均匀,制得原料叶,将原料叶用流水清洗干净,采用128℃的蒸汽对原料叶进行杀青12s,蒸汽杀青后将原料叶用磨浆机磨碎,再入胶体磨,磨成杜若叶糜,向10kg杜若叶糜中加入0.015kg的纤维素酶、0.005kg的果胶酶、0.04kg的枸橼酸,在48℃条件中联合水解60min,制成杜若叶泥;
B、葛根预处理:取新鲜、无腐烂的葛根、紫甘薯、菱角,冲洗干净,切成葛根块、紫甘薯块、菱角块,取7kg葛根块、4kg紫甘薯块、3kg菱角块混合均匀后置入蒸煮设备中蒸熟,冷却后用磨浆机磨碎,制成葛根泥;
C、混合:取萝芙木泥6kg、葛根泥4kg、谷壳3kg、豌豆粉3kg、麸皮2kg、荞麦粉1kg、党参粉1kg、白果粉1kg、葛仙米粉1kg,充分搅拌均匀,制成混合物;
D、蒸料、接种:混合物入蒸煮设备中,通入蒸汽,蒸35min,至熟透;后摊晾至室温,制成原料醅;
E、酒精发酵:向10kg原料醅中加入0.22kg的酒酵母,搅拌均匀后,加入18kg的饮用水,温度控制为50℃,发酵6天,制得醋醅;
F、醋酸发酵:向10kg醋醅中加入0.3kg的醋酸酵母菌,搅拌均匀,44℃环境下发酵11天后,不再控温,醋醅自然降温至35℃,发酵至醋醅酸度达8.2g/100ml时,停止醋酸发酵;
G、后熟:向10kg发酵后的醋醅中加入0.8kg的食盐,搅拌至均匀,静置4天;
H、压榨过滤:将后熟后的醋醅经过压滤机过滤,得醋酸发酵液,向10kg醋酸发酵液中加入0.03kg的壳聚糖、0.02kg的硅藻土,搅拌均匀,静置8h,制得发酵醋液;
I、陈酿:醋液置入密闭容器中静置12 天,制得杜若叶醋;
J、杀菌、灌装:将萝芙木葛根醋在88℃环境下杀菌5min,杀菌后在真空无菌环境下灌装,通风干燥环境中贮藏。

Claims (1)

1.一种杜若叶醋的酿造工艺,其特征在于,所述的酿造工艺采用以下步骤:
A、原料预处理:挑选成熟的杜若叶、葛根、腊梅根、芦根、鱼腥草,清洗干净后分别剪成1cm的碎段,制成杜若叶、葛根段、腊梅根段、芦根段、鱼腥草段,取8kg杜若叶、6kg葛根段、1kg腊梅根段、1kg芦根段、1kg鱼腥草段混合均匀,制得原料段,备用;
B、浸泡:将10kg的原料段放入20kg的总酸度为25%的白醋中进行浸泡,浸泡时间为15天,经过滤得到浸泡醋及原料渣,将原料渣滤干备用;
C、粉碎:将滤干后的原料渣经过超细破壁粉碎机粉碎,制得原料粉,备用;
D、马铃薯预处理:将鲜马铃薯、无花果经清洗后,分别切成马铃薯粒、无花果粒,粒度为10克/粒,取8kg马铃薯粒、5kg无花果粒混合均匀后放置蒸煮锅中蒸熟至熟而不糊,摊放冷却,制得马铃薯料;
E、原料混合:向10kg的马铃薯料中加入7kg的原料粉、2kg的山药粉、1kg的百合粉、1kg的葛仙米粉,搅拌均匀,制得混合料;
F、酒精发酵:向10kg的混合料中加入0.2kg的酒酵母,搅拌均匀后,加入13kg的饮用水、3kg的枸杞汁、2kg的柠檬汁,温度控制为55℃,发酵50h,制得酒精发酵物料;
G、醋酸发酵:酒精发酵结束后,向10kg酒精发酵物料中加入0.25kg的醋酸酵母菌、2kg的桑葚汁、2kg的茅莓汁,搅拌均匀,50℃环境下发酵50小时,制得醋酸发酵物料;
H、压榨过滤:将醋酸发酵物料经过压滤机过滤,得醋酸发酵液,向10kg醋酸发酵液中加入0.04kg的单宁、0.02kg的琼脂,搅拌均匀,静置10天,得杜若叶、葛根发酵醋;
I、混合:取步骤B中的浸泡醋2.5kg、步骤H中的发酵酒7.5kg,充分搅拌均匀,制得杜若叶醋。
