Description
技术领域
本公开涉及用作婴儿和儿童代乳品的压缩固体形式的营养组合物。与粉末或液体组合物相比,压缩固体营养组合物提供方便的形式。另外,本公开涉及用于制备压缩固体形式的营养组合物的改进方法。
背景

发明内容

在片剂溶解速率和表面脂肪的存在之间存在相反关系。覆盖在粉末表面与夹带在粉末颗粒内相比,喷雾干燥的乳制品粉末(诸如婴儿代乳品)具有更高比例的总脂肪。在一些实施方案中,35-40%的脂肪可位于粉末表面上。
在一些实施方案中,粉末颗粒的表面含有无定形形式的糖。这些糖可以是但不限于乳糖、麦芽糊精和玉米糖浆固体。当冷水雾与粉末表面接触时,它使这些糖中的一些水合。这些水合糖倾向于形成桥,从而增加粉末颗粒的粘性。

在进一步的实施方案中,将湿粉末营养组合物转移到压片单元用于压缩。片剂的尺寸和形状以及重量可以根据营养制剂的份量(serving size)和目标在于递送该份量的片剂的数量而变化。片剂可具有光滑表面或具有允许水渗透以加快溶解速率的压痕。将粉末置于压片模具中并在1-100psi的压力下快速压缩;在某些实施方案中,将粉末在压片模具中压缩并在1-30psi的压力下压缩,且优选在5-10psi下压缩。在一些实施方案中,压缩持续至少3秒的时间段;在其他实施方案中,压缩可以持续约3秒至约20秒。在进一步其他实施方案中,压缩持续约3秒至约10秒的时间段。较高的压缩速率可能损害片剂溶解并可能迫使游离脂肪流到片剂的表面,因此折损片剂的润湿性。中等压力范围的使用保持一些粉末孔隙率。如果在加工期间使用干冰,该孔隙率也允许二氧化碳的扩散。压缩可以在1-25℃,且优选2-8℃的受控温度范围下进行。然后可将压缩片剂转移到干燥操作。
在一些实施方案中,压缩片剂可以被干燥;在一些实施方案中,片剂被干燥到约0.2%至约5.0%的水分水平。干燥操作可以包括但不限于使用热空气隧道、真空干燥或冷冻干燥。在干燥过程期间,颗粒彼此粘附且根据水合分子的玻璃化转变和分子弹性发生被称为“颗粒起粘丝(particle stringing)”的过程。真空干燥允许使用较低的温度,诸如20℃-60℃以除去夹带在片剂中的水分。在干燥操作期间使用冷冻干燥的实施方案中,首先将片剂的温度降低到约10℃至30℃,且然后将片剂温和加热以诱导水升华而达到目标片剂水分含量。当在压缩之前使用固体二氧化碳时,升华将在干燥操作期间迅速发生,从而为片剂提供额外的孔隙率并减少暴露于制剂脂肪的空气量。

压缩固体形式可以以任何期望的形状提供,诸如立方体、片剂、球体或圆盘,且可以是任何期望的尺寸。在一个实施方案中,压缩固体形式为约5至约20克,或约5至约15克。然而,也可以制备更大的片剂。例如,在一个实施方案中,压缩固体形式以约8至9克的单份量提供。8至9克大小的压缩固体可方便地在约45至约55mL的水中重构,以提供单份液体营养组合物。
压缩固体组合物提供足够的硬度以避免在由最终用户运输时破裂。例如,特别是在婴儿代乳品或成长乳的情况下,携带一种或多种压缩固体组合物以便在旅行中喂养儿科受试者可能是方便的。固体的不需要的破裂或粉碎可能会导致该份量的一部分溢出。因此,在某些实施方案中,本文提供的压缩固体在旅行期间足够硬以避免破裂,同时有利地能够在暴露于水时容易地分散或溶解。例如,单份量的压缩固体能够在轻轻摇动的辅助下在30-80秒内溶解在22℃-40℃的水中。

在其他实施方案中,组合物可以任选地包括但不限于一种或多种以下矿物质或其衍生物:硼、钙、乙酸钙、葡萄糖酸钙、氯化钙、乳酸钙、磷酸钙、硫酸钙、氯化物、铬、氯化铬、皮考啉酸铬(chromium picolonate)、铜、硫酸铜、葡萄糖酸铜、硫酸铜、氟化物、铁、羰基铁、三价铁离子、富马酸亚铁、正磷酸铁、铁研碎物(iron trituration)、多糖铁、碘化物、碘、镁、碳酸镁、氢氧化镁、氧化镁、硬脂酸镁、硫酸镁、锰、钼、磷、钾、磷酸钾、碘化钾、氯化钾、乙酸钾、硒、硫、钠、多库酯钠、氯化钠、硒酸钠、钼酸盐、锌、氧化锌、硫酸锌及其混合物。矿物质化合物的非限制性示例性衍生物包括任何矿物质化合物的盐、碱盐、酯和螯合物。然而,在具体的实施方案中,组合物不包含葡萄糖酸锰、碳酸铜或氧化锌。
矿物质可以以盐的形式例如磷酸钙、甘油磷酸钙、柠檬酸钠、氯化钾、磷酸钾、磷酸镁、硫酸亚铁、硫酸锌、硫酸铜、硫酸锰和***钠加入到成长乳或其它儿童营养组合物中。如本领域已知,可以加入额外的维生素和矿物质。
儿童营养组合物中的维生素和矿物质的量可能因国家而异。在一个实施方案中,对于任何给定国家,儿童营养组合物可以每份包含最大饮食推荐的约10%至约50%的维生素A、C和E、锌、铁、碘、硒和胆碱,或对于一组国家,为该平均饮食推荐的约10%至约50%。在另一个实施方案中,对于任何给定国家,儿童营养组合物可以每份供应最大饮食推荐的约10-30%的B-维生素,或对于一组国家,为该平均饮食推荐的约10-30%。在又一个实施方案中,儿童营养产品中的维生素D、钙、镁、磷和钾的水平可以与奶中发现的平均水平相对应。在其他实施方案中,对于任何给定国家,儿童营养组合物中的其他营养素可以每份最大饮食推荐的约20%存在,或对于一组国家,以该平均饮食推荐的约20%存在。
本公开的儿童营养组合物可以任选地包括一种或多种以下调味剂,包括但不限于调味提取物、挥发油、可可或巧克力调味剂、花生酱调味剂、饼干屑、香草或任何市售可得的调味剂。有用的调味剂的实例包括但不限于:纯茴香提取物、仿香蕉提取物、仿樱桃提取物、巧克力提取物、纯柠檬提取物、纯橙提取物、纯薄荷提取物、蜂蜜、仿菠萝提取物、仿朗姆酒提取物、仿草莓提取物或香草提取物;或挥发油诸如香脂油、月桂油、佛手柑油、雪松木油、樱桃油、肉桂油、丁香油或薄荷油;花生酱、巧克力调味剂、香草曲奇饼屑、奶油糖果、太妃糖及其混合物。调味剂的量可以根据所用的调味剂而有很大的变化。如本领域已知的,可以选择调味剂的类型和量。
本公开的营养组合物可以任选地包含可以为了最终产品的稳定性而添加的一种或多种乳化剂。合适的乳化剂的实例包括但不限于卵磷脂(例如来自鸡蛋或大豆),α乳白蛋白和/或甘油单酯和甘油二酯及其混合物。其他乳化剂对于本领域技术人员是显而易见的,且选择一种或多种合适的乳化剂将部分取决于制剂和最终产品。
本公开的营养组合物可以任选地包含一种或多种防腐剂,该防腐剂也可以被加入以延长产品保质期。合适的防腐剂包括但不限于山梨酸钾、山梨酸钠、苯甲酸钾、苯甲酸钠、EDTA钙二钠及其混合物。
本公开的营养组合物可以任选地包含一种或多种稳定剂。用于实施本公开的营养组合物的合适稳定剂包括但不限于***胶、印度树胶(gum ghatti)、刺梧桐树胶、黄蓍胶、琼脂、红藻胶(furceliaran)、瓜尔胶、结冷胶、刺槐豆胶、果胶、低甲氧基果胶、明胶、微晶纤维素、CMC(羧甲基纤维素钠)、甲基纤维素羟丙基甲基纤维素、羟丙基纤维素、DATEM(甘油单酯和甘油二酯的二乙酰基酒石酸酯)、葡聚糖、角叉菜胶及其混合物。
本公开的营养组合物可以提供最小、部分或全部营养支持。该组合物可以是营养补充剂或代餐品。该组合物可以但不必是营养完全的。在一个实施方案中,本公开的营养组合物是营养完全的且含有合适类型和量的脂质、糖、蛋白质、维生素和矿物质。脂质或脂肪的量通常可以在约2至约7g/100kca之间变化。蛋白质的量通常可以从约1至约5g/100kcal变化。糖的量通常可以从约8至约14g/100kcal变化。
在一些实施方案中,本公开的营养组合物是成长乳。成长乳是旨在用于年龄超过1岁(通常为1至6岁)的儿童的强化乳基饮料。它们不是医用食品,且不旨在用作代餐品或补充剂以解决具体的营养缺乏。相反,成长乳设计成旨在用作多元饮食的补充,以提供使儿童获得持续、每日摄入的所有必需维生素和矿物质、常量营养素和其他功能性膳食组分(诸如声称具有促进健康的性质的非必需营养素)的额外保障。
根据本公开的婴儿代乳品或成长乳或其他营养组合物的确切组成可以根据当地法规和感兴趣的人群的饮食摄入信息因国家而异。在一些实施方案中,根据本公开的营养组合物由乳蛋白源(诸如全脂或脱脂乳)加上实现期望的感官性质的添加的糖和甜味剂以及添加的维生素和矿物质组成。脂肪组合物通常衍生自乳原材料。总蛋白质的目标可以是匹配人奶、牛奶的总蛋白质或更低的值。总糖的目标通常为提供尽可能少的添加糖,诸如蔗糖或果糖,以获得可接受的味道。通常,维生素A、钙和维生素D的加入水平取决于区域牛奶的营养贡献。否则,在一些实施方案中,维生素和矿物质可以以每份提供饮食参考摄入量(DRI)的约20%或每日值(DV)的20%的水平加入。此外,不同市场之间的营养值可能会有所不同,取决于目标人群的确定的营养需求、原材料贡献和区域法规。

实施例
制备婴儿代乳品片剂
将具有约11%蛋白质、27%脂肪、57%糖和2%的水分含量的组成的粉末营养制剂在温和搅拌下悬浮在流化床中并冷却到8℃。将悬浮粉末与温度在8-10℃之间通过超声波产生的150nm的水雾接触。将湿粉末组合物转移到压片单元用于压缩。压片模具的形状为圆柱形,直径为2.5cm。压片模具装载有8克湿粉末,并在5℃下以约8psi的压力压缩5秒。然后将压缩片剂转移到具有60℃的循环空气的干燥带式烘箱中,在其中干燥到约3%水分。
因此,本公开提供压缩固体形式的营养组合物及其制备方法,其提供易于溶解在水中的实用的营养固体形式的片剂。此外,所公开的压缩固体形式还可以降低组合物的一些组分例如LCPUFA的氧化速率,因此潜在地为片剂提供更长的保质期。

Claims (16)
1.一种制备压缩固体形式的营养组合物的方法,包括:
提供粉末营养组合物,
将所述粉末营养组合物冷却到低于11℃的温度,
使冷却的粉末营养组合物与水分接触,
在1至100psi的压力下压缩所述粉末营养组合物,和
干燥压缩的粉末营养组合物。
2.权利要求1的方法,其中所述营养组合物包含:
约5至约35重量%的蛋白质,
约5至约50重量%的脂肪,和
约40至约70重量%的糖。
3.权利要求1的方法,其中所述粉末营养组合物通过用细粒雾喷射与水分接触。
4.权利要求3的方法,其中所述细粒雾具有10至1500nm大小的粒径。
5.权利要求1的方法,其中使所述粉末营养组合物与水分接触使其水分水平达到4至17%。
6.权利要求5的方法,其中使所述粉末营养组合物与水分接触使其水分水平达到8至10%。
7.权利要求3的方法,其中所述细粒雾的温度为1℃至15℃。
8.权利要求1的方法,其中所述营养组合物是婴儿代乳品或成长乳。
9.权利要求9的方法,其中在约5至8psi的压力下压缩所述粉末营养组合物。
10.权利要求1的营养组合物,其中所述压缩固体形式以约8至约9克的单份量提供。
11.权利要求9的营养组合物,其中所述压缩固体形式在30至80秒内容易地溶解在22℃至40℃的水中。
12.权利要求1的方法,其中所述营养组合物包含:
约5至约35重量%的蛋白质,
约5至约50重量%的脂肪,和
约40至约70重量%的糖。
13.权利要求12的方法,所述营养组合物还包含约5至约200 mg/100kcal的长链多不饱和脂肪酸来源。
14.权利要求13的方法,其中所述长链多不饱和脂肪酸来源包含比率为约1:3至约1:9的二十二碳六烯酸和花生四烯酸。
15.权利要求12的方法,所述营养组合物包含约1至约10g/100kcal的益生元组合物,其中所述益生元组合物包含聚葡萄糖和低聚半乳糖。
16.权利要求12的方法,所述营养组合物还包含至少一种益生菌。
