Description

Beverage extraction device for extracting juice from baked plant raw materials
Technical Field
The invention relates to the field of beverages, in particular to a beverage extraction device for extracting juice from baked plant raw materials.
Background
A liquid obtained by roasting roasted plant materials such as coffee beans, barley for barley tea, tea leaves for roasted tea, and the like and extracting the roasted plant materials with hot water and the like is enjoyed by many people as a beverage such as coffee, barley tea, roasted tea, and the like. The baking treatment chemically reacts the baked plant material by heat energy to generate unique flavor such as aroma, strong flavor, bitter taste, sour taste, sweet taste, etc. In particular, the aroma having a scorched aroma produced by baking has an extremely high preference.
There are problems that it is difficult to heat the baked plant material uniformly inside, that burnt flavor is generated during baking treatment, or that baking is performed shallowly to suppress scorching, that the center part of the baked plant material is not completely baked, and that the leaching solution has much bitterness and foreign flavor. Even if the heating conditions are intensified and the baking time is shortened, the surface of the baked plant material is baked, and the baked plant material cannot be uniformly baked to the central portion, and becomes a bitter leaching solution without a strong taste.
Thus, a method for reducing burnt flavor and bitter taste has been proposed using an extract liquid for beverages obtained by extracting roasted plant materials with water. The conventional method includes a grain cleaning step of removing a scorched portion of the baked grain, and produces a grain tea beverage having a less bitter taste and a strong sweet taste and a good flavor due to scorched taste. There is also a method of removing bitterness by removing fine particles, particularly fine particles having a particle diameter of 5 μm or more, present in an extract liquid. Also provided is a method for removing bitterness and foreign flavor by using the extraction apparatus. In the prior art, the active carbon can selectively adsorb and remove astringent components in coffee extract, i.e. high molecular dark brown components such as chlorogenic acid polymer. In addition, a coffee extracting apparatus is known which can improve the clarity of an extracting liquid.
Although measures are taken to reduce the bitterness, which is an unpleasant component in the extract liquid, the bitterness is either not removed sufficiently or, in spite of the removal of the bitterness, the unique and abundant flavor, and richness of the roasted plant are removed at the same time, and therefore the flavor of the extract liquid itself of the roasted plant may be reduced.
