本发明公开一种适合于肥胖人群的方便食品及其制备方法,由下列重量份的组分制成:黄瓜200~300份、莴笋200~300份、慈姑50~80份、白芸豆10~15份、茯苓3~5份、薏苡仁6~10份、茄子200~300份、洋葱50~80份、生姜30~50份、山药30~50份、黄精6~10份、营养素强化剂0~2份、调味料0~5份。本发明改善了方便食品的色、香、味属性和食用方便性,口感能被大多数消费者所接受,可提高目标人群坚持长期食用的依从性。

本发明涉及一种适合于肥胖人群的方便食品及其制备方法,属于食品、保健食品加工技术领域。
背景技术
肥胖症是一种由遗传、精神、内分泌、环境等多种因素引起的慢性代谢性疾病,其特点是体内脂肪细胞的体积增大和数量增加,导致体脂占体重的百分比异常增高,并在某些局部脂肪过多沉积。主要病因是饮食过多而活动过少,热量摄入多于热量消耗,使脂肪合成增加和沉积,脂肪代谢紊乱,最终导致肥胖。
据统计,因疾病死亡的患者中有15~20%合并患有肥胖症。肥胖症是心血管疾病,特别是冠心病的始发原因。许多高血压的病人同时又是肥胖症患者。肥胖症患者血浆甘油三脂及低密度脂蛋白胆固醇含量增高,高密度脂蛋白胆固醇浓度低下。糖尿病特别是晚发性糖尿病与肥胖症有直接关系,肥胖症患者血液内胰岛素浓度比正常人高。此外,肥胖症者体型美感受到影响,动作迟缓,易出汗疲劳,易瞌睡,并常伴有腰、背、腿疼痛,往往对患者心理产生一定影响。
随着现代社会发展,生活水平不断提高,肥胖症患者有逐年增加的趋势,我国是世界肥胖人数最多的国家,肥胖人数超过9000万人,其中,男性4320万人,女性4640万人。近年来,肥胖和体重控制成为医学研究的热点,从肥胖形成的原因来看,肥胖治疗和体重控制的两个主要环节是减少热量摄入及增加热量消耗。强调以行为、饮食、运动为主的综合治疗,通过宣传教育使患者及其家属对肥胖症及其危害性有正确的认识,从而采取健康的生活方式,改变饮食结构和习惯,增加体育运动和体力劳动。
在饮食方面,大多数超重和肥胖的个体,或需要控制体重增加的个体,都需要调整其膳食以达到减少热量摄入的目的。合理膳食包括改变膳食的结构和食量。具体措施如避免吃油腻食物和吃过多零食,少食油炸食品,少吃盐;尽量减少吃点心和加餐,控制食欲;尽量采用煮、煨、炖、烤和微波加热的烹调方法,用少量油炒菜;适当减少饮用含糖饮料,养成饮用白水和茶水的习惯;进食应有规律,不暴饮暴食,不一餐过饱,也不漏餐。
体重控制的膳食构成基本原则为低能量、低脂肪、适量优质蛋白质、高膳食纤维,应在膳食营养素平衡的基础上减少每日摄入总热量,既要满足人体对营养素的需要,又要使热量的摄入低于机体的能量消耗,让身体中的一部分脂肪氧化以供机体能量消耗所需。注意饮食的能量密度,即选择体积较大而所含的能量相对低一些的食物,如蔬菜和水果的体积大而能量密度较低,又富含人体必需的维生素和矿物质,以蔬菜和水果替代部分其他食物能给人以饱腹感而不致摄入过多能量。
目前,市场上出现很多针对肥胖人群的减肥食品,常见的有代餐粉、代餐棒、代餐奶昔以及代餐汤等便于日常食用或饮用的营养均衡产品,其热量一般低于普通饮食,减肥代餐食品除了能够快速、便捷的为人体提供大量的各种营养物质外,还具有高纤维、高蛋白、低脂肪、低热量等特点,因而食用后可以有效的控制食量和热量,达到减肥的目的。但是,现已上市销售的减肥食品中,大多数为添加食品营养强化剂和膳食纤维的蛋白质类产品,少数产品中添加了水果粉和蔬菜粉,食用后饱腹感不强,很多肥胖和超重人群在坚持一段时间后往往因为难以忍受饥饿而放弃食用。因此,如何进行科学配方,开发既能提供全面均衡营养,又能增加饱腹感,同时具有一定功效的方便食品,以提高肥胖人群的食用依从性,是行业内急需解决的问题。

为克服上述问题,本发明的目的在于提供一种适合于肥胖人群的方便食品及其制备方法,将果蔬食材和药食两用中药材进行组方,并通过特定工艺步骤进行制备,得到的方便食品可作为肥胖人群完全或部分代餐食品,既能提供全面均衡营养,又能增加饱腹感,还能通过促进体内脂肪代谢发挥一定减肥作用。
本发明通过下列技术方案实现:一种适合于肥胖人群的方便食品,由下列重量份的组分制成:黄瓜200~300份、莴笋200~300份、慈姑50~80份、白芸豆10~15份、茯苓3~5份、薏苡仁6~10份、茄子200~300份、洋葱50~80份、生姜30~50份、山药30~50份、黄精6~10份、营养素强化剂0~2份、调味料0~5份。
其中,黄瓜、莴笋、慈姑、茄子、洋葱、生姜、山药等原料为鲜品;白芸豆、茯苓、薏苡仁、黄精等原料为干品;营养素强化剂和调味料为选择性添加成分。
所述营养素强化剂为左旋肉碱、牛磺酸、维生素A、维生素D、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、烟酸、叶酸、泛酸、钙、铁、锌、硒、铬、镁、磷等人体正常代谢必需营养素中的几种或全部,来源可以是其化合物形式,使用符合国家相关标准规定。
所述调味料为食盐、甜味剂、香精香料和其它调整风味的食品配料,使用符合国家相关标准规定。
本发明的另一目的在于提供一种适合于肥胖人群的方便食品的制备方法,包括以下步骤:
(1)按下列重量份的组分备料:黄瓜200~300份、莴笋200~300份、慈姑50~80份、白芸豆10~15份、茯苓3~5份、薏苡仁6~10份、茄子200~300份、洋葱50~80份、生姜30~50份、山药30~50份、黄精6~10份、营养素强化剂0~2份、调味料0~5份。
(2)取黄瓜、莴笋、慈姑、洋葱、生姜,经清洗后榨汁,加热至50~60℃,加入果蔬汁量0.01~0.02%的果胶酶,酶解30~45min,煮沸2~5min,以200目以上滤布过滤或8000rpm以上高速离心去除沉淀,再浓缩至可溶性固形物15%以上,喷雾干燥或真空冷冻干燥,待用;
(3)取白芸豆、薏苡仁,以水充分浸泡,加入3~5倍干料重量的水,磨浆后以100目以上滤布过滤或8000rpm以上高速离心去除沉淀,煮沸2~5min,喷雾干燥或真空冷冻干燥,待用;
(4)取黄精药材,粉碎为10~20目粗粉,加入6~10倍重量的水,煮沸提取20~30min,以200目以上滤布过滤,共提取2~3次,合并滤液,浓缩至可溶性固形物15%以上,喷雾干燥或真空冷冻干燥,待用;
(5)取山药,经清洗后,去皮,切成2~5mm薄片,以蒸汽和热风干燥,粉碎为200目以上细粉,待用;
(6)取茄子,经清洗后,切成2~5mm薄片,以蒸汽和热风干燥,粉碎为200目以上细粉,待用;
(7)取茯苓,粉碎为200目以上细粉,待用;
(8)在步骤(2)~(7)所得物料中加入营养素强化剂和调味料,混合均匀,分装,即得到适合于肥胖人群的方便食品。
本发明提供适合于肥胖人群的方便食品,推荐食用量为每日1~2次、每次30~50g,以400~500mL温开水冲调后食用,并根据个人喜好适当调整冲调体积,食用后注意多饮水。
本发明提供适合于肥胖人群的方便食品,其配方设计和工艺选择的依据:
现代医学和营养学研究证实,遗传、饮食增加、运动减少、性别与职业、年龄、精神、内分泌、代谢紊乱等很多因素均可导致肥胖,其中,不良饮食习惯和生活方式是公认的导致肥胖的最重要原因。所以,改变饮食习惯和生活方式是减肥和控制体重的最基本措施,即通过合理饮食控制总体能量摄入,增加运动以促进能量消耗,从而加速体内脂肪分解代谢为人体活动提供能量。
肥胖人群的合理饮食包括:减少脂肪摄入量,以植物油代替动物油,减少饱和脂肪酸和胆固醇摄入;减少高能量糖类的摄入,适当控制升糖淀粉的摄入量,多吃膳食纤维含量高的蔬菜、水果;保证蛋白质充分摄入,满足人体对必需氨基酸的种类和数量要求;保证人体必须维生素、矿物质的足量摄入;限制食盐的用量,保证每日充足的饮水量。
中医认为,肥胖病的起因主要包括四大方面:①先天禀赋有关,如清代陈修园说:“大抵素禀之盛”,即现代医学所述的遗传因素;②嗜食膏粱厚味,即《黄帝内经》所述“肥贵人,膏粱之疾也”;③嗜卧少动,致使脂肪充于肌肤而致肥胖;④脏腑功能失调,肝郁气滞、脾虚失运、肾虚气化失职,内伤久病,痰浊内生,或外受湿邪,使痰湿蓄积体内而肥胖。中医还对肥胖辨证分型为脾虚湿阻、脾肾两虚、肝郁气滞、阴虚内热、胃热湿阻几种主要类型。根据病因和分型,减肥当以清热利水、健脾益气、化痰祛湿、疏肝行气、活血化瘀、补益肾气、润肠通便为主,辅以行气消食、降脂消痰、疏理三焦等法,从而调解整个机体功能,加速体内多余的脂肪分解,达到减肥消胖之目的。
本发明根据现代医学、营养学研究成果和传统中医理论进行配方和工艺设计:
黄瓜为葫芦科植物黄瓜Cucumis sativus L.的新鲜果实,性凉,味甘,归肺、脾、胃经,具有清热、利水、解毒之功效,主治烦渴、咽喉肿痛、火眼、火烫伤等。现代研究证实,黄瓜富含蛋白质、糖类、维生素B2、维生素C、维生素E、胡萝卜素、尼克酸、钙、磷、铁等营养成分,具有明显的减肥作用。
莴笋为菊科植物莴苣Lactuca sativa L.var. angustanaIrish.的新鲜茎叶,性甘、凉,味苦,归胃、小肠经,具有利尿、通乳、清热解毒之功效,主治小便不利、尿血、乳汁不通、虫蛇咬伤、肿毒等,具有明显的减肥功能。莴笋含有丰富的营养成分,特别在叶中更高,因此,虽然传统食用部分为去皮的笋茎,但本发明使用新鲜茎叶榨汁,既可保留植物成分和提高营养价值,又可充分利用资源。
慈姑为泽泻科植物慈姑Sagittaria sagittifolia L.的新鲜球茎,性微寒,味甘、微苦、微辛,归肝、肺、脾、膀胱经,具有活血凉血、止咳通淋、散结解毒之功效,主治产后血闷、咳嗽痰血、淋浊、疮肿、目赤肿痛。慈姑富含淀粉、蛋白质和多种维生素,和钾、磷、锌等微量元素,对人体机能有调节促进作用;慈姑中含有多蛋白酶抑制剂,对胰蛋白酶、胰凝乳蛋白酶及舒缓激肽释放酶均有较明显的抑制作用,可以减缓蛋白质的分解吸收,延长餐后饱腹感。
白芸豆为豆科植物白芸豆Phaseolus vulgaris Linn.的干燥种子,性微温,味甘,归脾、胃经,具有健脾化湿、和中消暑之功效,主治虚寒呃逆、胃寒呕吐、跌打损伤、喘息咳嗽、腰痛、神经痛。每100g白芸豆含蛋白质23.1g、脂肪1.3g、碳水化合物56.9g、胡萝卜素0.24mg、钙160mg、磷410mg、铁7.3mg及丰富的B族维生素,可以提供人体每日必需蛋白质和碳水化合物。此外,白芸豆中含有较高活性的α-淀粉酶抑制剂,能阻断淀粉分解,减少葡萄糖吸收,从而降低餐后血糖升高,减少胰岛素分泌,降低脂肪合成,可以有效配合糖尿病和减肥人群的饮食治疗。
薏苡仁为禾本科植物薏苡Coix lacryma-jobi L. var. ma-yuen(Roman.)Stapf.的干燥成熟种仁,性凉,味甘、淡,归脾、胃、肺经,具有健脾渗湿、除痹止泻、清热排浓之功效,用于水肿、脚气、小便不利、湿痹拘挛、脾虚泄泻。薏苡仁脂肪含量较低,但含有丰富的碳水化合物和蛋白质,可提供人体每日必需蛋白质和碳水化合物。
茯苓为多孔菌科真菌茯苓Poria cocos(Schw.)Wolf.的干燥菌核,性平,味甘、淡,归心、肺、脾、肾经,具有利水渗湿、健脾宁心之功效,用于水肿尿少、痰饮眩悸、脾虚食少、便溏泄泻。茯苓与薏苡仁合用,共同发挥利水渗湿、健脾止泻作用,增强黄瓜、莴笋的清热效果的同时,还可健脾止泻。
茄子为茄科植物茄Solanum melongena L.的成熟新鲜果实,性凉,味甘,归脾、胃、大肠经,具有清热、活血、消肿功效,主治肠风下血,热毒疮痈,皮肤溃疡。茄子含有胡芦巴碱、水苏碱、胆碱、龙葵碱等多种生物碱,以及丰富的花青素和辅酶Q10,具有明显的降血脂和改善血液循环作用。此外,茄子中粗纤维含量较高,所含纤维具有较强吸水膨胀性和油脂吸收能力,食用后可明显增强饱腹感,并减缓外源性油脂吸收和代谢,帮助肥胖人群减少高能量食物的摄入,促进体内脂肪分解代谢,对肥胖起到一定的预防和治疗作用。 因茄子中含有生物碱,生吃具有一定安全性风险,本发明采用切片烘干,加热过程中茄子即可变熟,既可以提高干燥效率,还可保证食用安全性。
洋葱为百合科葱属植物洋葱Allium cepa.的新鲜鳞茎,洋葱脂肪含量较低,但其它营养成分丰富,不仅富含钾、维生素C、叶酸、锌、硒、可溶性膳食纤维等营养素,更有槲皮素和***素A两种特殊的活性成分,能降低外周血管阻力,降低血黏度,可用于降低血压和血脂。此外,洋葱还能清除体内氧自由基,增强新陈代谢能力,抗衰老,预防骨质疏松。
生姜为姜科植物姜Zingiber officinale Rosc.的新鲜根茎,性微温,味辛,归肺、脾、胃经,具有解表散寒、温中止呕、化痰止咳功效,用于风寒感冒、胃寒呕吐、寒痰咳嗽。生姜中含有黄酮类和辛辣、芳香成分,不仅能开胃健脾,还能通过扩张血管促进血液循环。在本发明中,姜的主要作用为改善血液循环,以及通过健脾暖胃,中和配方的寒凉药性。
山药为薯蓣科植物薯蓣Dioscorea opposita Thunb.的新鲜根茎,性平,味甘,归脾、肺、肾经,具有补脾养胃、生津益肺、补肾涩精功效,用于脾虚食少、久泻不止、肺虚喘咳、肾虚遗精、带下、尿频、虚热消渴。山药皮中所含的皂角素或黏液里含的生物碱,少数人会引起过敏,因此,加工中应该对山药去皮处理,切片后烘干,加热熟化,以保证食用安全性。
黄精为百合科植物滇黄精Polygonatum kingianum Coll.et Hemsl.、黄精Polygonatum sibiricum Red.或多花黄精Polygonatum cyrtonema Hua 的干燥根茎,性平,味甘,归脾、肺、肾经,具有补气养阴、健脾、润肺、益肾功效,用于脾胃虚弱、体倦乏力、口干食少、肺虚燥咳、精血不足、内热消渴。在本发明中,山药和黄精合用,共同发挥补气养阴、健脾益肾的作用。
通过上述设计原理,本发明提供的方便食品,以果蔬、药食两用中药材为主要原料,应用传统中医理论和现代营养学研究成果进行配方设计,具有以下优点:
(1)本发明按照低脂肪、低糖、高蛋白、高纤维、全营养素的健康饮食理念,为肥胖人群提供促进体重控制的方便食品,采用的主要原料为日常食用的蔬菜和药食两用中药材,均为脂肪含量较低的食品配料,从而能控制肥胖人群的脂肪总摄入量,并能通过调节脂肪代谢,促进体内脂肪的分解代谢为人体活动提供能量,肥胖人群长期食用后可达到减肥的效果。
(2)茄子中含有大量纤维素,所含纤维素具有较强吸水膨胀性和吸油性,食用后大量饮水,可明显增强饱腹感,从而抑制人体食欲,减少其它高能量食物的摄入;因纤维素具有较强油脂吸收能力,在体内可减缓食物来源的油脂吸收和代谢,调动体内脂肪分解代谢途径,对肥胖起到一定的预防和治疗作用。
(3)配方中主要原料不仅能提供全面均衡营养,而且具有一定的保健功效,食用后可帮助肥胖人群控制体重。其中,慈姑、白芸豆、薏苡仁均含有丰富的蛋白质和糖类淀粉,可保证食物中足量的蛋白质和淀粉摄入;黄瓜、莴笋、洋葱、姜中含有丰富的可溶性膳食纤维,茄子中含有大量不溶性纤维素,可提供足量的膳食纤维;山药、茯苓、黄精中含有的活性植物多糖,以及各组分中含有的活性成分,有利于增强人体免疫力和调节正常的糖脂代谢;加工过程中,主要原料中所含部分维生素可能被氧化分解,为了保证人体必须营养素的足量摄入,可选择性添加维生素、矿物质及其它营养素。
(4)根据中医理论,黄瓜、莴笋清热除烦、利水通淋,化湿热而清痰浊,共为君药。慈姑活血凉血、散结通淋,白芸豆健脾化湿、和中消暑,茯苓、薏苡仁利水渗湿、健脾止泻,四者共为臣药,助君药清热利水之功。茄子活血化瘀,洋葱降脂消痰;姜解表散寒、温中止呕,中和寒凉药性;山药、黄精补气养阴、健脾益肾;五者共为佐药。全方共奏清热利水、健脾止泻、化痰降浊、活血化瘀、补气益肾之功。按照中医理论进行组方设计,使得本发明提供的方便食品,在提供全面均衡营养、增加饱腹感的同时,具有一定的保健功效。
(5)本发明采用的原料,大多数为性味平淡的蔬菜和药食两用中药材,没有苦涩味特别浓烈和带刺激气味的成分,经特定工艺处理后,消除了食用安全隐患,安全性进一步提高,食用口感也可以被大多数消费者所接受。在工艺选择方面,为了充分发挥功效,茄子采用直接切片干燥方式保留纤维成分,山药、茯苓干燥后直接粉碎以保留植物活性多糖;黄瓜、莴笋、慈姑、洋葱、生姜采用鲜榨汁,白芸豆、薏苡仁采用磨浆提取,黄精采用煎煮提取,提取后经过滤或离心,避免大量不同来源的粗纤维带入成品中,影响产品冲调后的外观。因此,本发明改善了食品的色、香、味属性和食用方便性,可提高目标人群坚持长期食用的依从性。

一种适合于肥胖人群的方便食品,通过下列步骤制备:
(1)取黄瓜2000g、莴笋2000g、慈姑500g、洋葱500g、生姜300g,经清洗后,切成碎片,榨汁机中榨汁,加热至60℃,加入果胶酶0.6mL,保温酶解45min,煮沸2min,以200目滤布过滤,60~65℃减压浓缩至可溶性固形物20%,真空冷冻干燥,待用;
(2)取白芸豆100g、薏苡仁60g,以水充分浸泡,沥干浸泡水,然后加水500mL,榨汁机中充分磨浆,以100目滤布过滤,煮沸2min,真空冷冻干燥,待用;
(3)取黄精干片60g,粉碎过20目筛,加水480mL,煮沸30min,以200目滤布过滤;滤渣加水360mL,煮沸20min,共重复2次;合并滤液,60~65℃减压浓缩至可溶性固形物20%,真空冷冻干燥,待用;
(4)取山药300g,经清洗后,手工去皮,切成5mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(5)取茄子2000g,经清洗后,切成5mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(6)取茯苓块30g,粉碎过200目筛,待用;
(7)取步骤(1)~(6)所得物料,共620g,混合均匀,用铝箔袋分装为50g/袋,即可。
实施例2
一种适合于肥胖人群的方便食品,通过下列步骤制备:
(1)取黄瓜3000g、莴笋3000g、慈姑800g、洋葱800g、生姜500g,经清洗后,切成碎片,榨汁机中榨汁,加热至55℃,加入果胶酶1.5mL,酶解30min,煮沸5min,以200目滤布过滤除渣,70~75℃减压浓缩至可溶性固形物25%,真空冷冻干燥,待用;
(2)取白芸豆150g、薏苡仁100g,以水充分浸泡,沥干浸泡水,然后加水750mL,榨汁机中充分磨浆,以200目滤布过滤,煮沸2min,真空冷冻干燥,待用;
(3)取黄精干片100g,粉碎过10目筛,加水600mL,煮沸30min,以200目滤布过滤;滤渣加水600mL,煮沸20min,共重复2次;合并滤液,减压浓缩至可溶性固形物25%,真空冷冻干燥,待用;
(4)取山药500g,经清洗后,手工去皮,切成5mm薄片,以90~95℃热风烘干,粉碎过200目筛,待用;
(5)取茄子3000g,经清洗后,切成3mm薄片,以90~95℃热风烘干,粉碎过200目筛,待用;
(6)取茯苓块50g,粉碎过200目筛,待用;
(7)取步骤(1)~(6)所得物料,共890g,加入低聚异麦芽糖90g、L-***糖20g、食盐5g,混合均匀,用铝箔袋分装为50g/袋,即可。
实施例3
一种适合于肥胖人群的方便食品,通过下列步骤制备:
(1)取黄瓜3000g、莴笋2000g、慈姑600g、洋葱600g、生姜300g,经清洗后,切成碎片,榨汁机中榨汁,加热至50℃,加入果胶酶1mL,酶解45min,煮沸5min,以200目滤布过滤,70~75℃减压浓缩至可溶性固形物15%,真空冷冻干燥,待用;
(2)取白芸豆120g、薏苡仁80g,以水充分浸泡,沥干浸泡水,然后加水800mL,榨汁机中充分磨浆,以200目滤布过滤,煮沸2min,真空冷冻干燥,待用;
(3)取黄精干片60g,粉碎过10目筛,加水600mL,煮沸30min,以200目滤布过滤;滤渣加水600mL,煮沸20min,过滤;合并滤液,70~75℃减压浓缩至可溶性固形物20%,真空冷冻干燥,待用;
(4)取山药500g,经清洗后,手工去皮,切成3mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(5)取茄子2500g,经清洗后,切成3mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(6)取茯苓块40g,粉碎过200目筛,待用;
(7)取步骤(1)~(6)所得物料,共780g,加入L-***糖15g、食盐8g、乳矿物盐8g、甜橙果粉8g、左旋肉碱1g、乳铁蛋白0.5g、富硒酵母0.1g、富锌酵母0.1g、富铬酵母0.1g、三氯蔗糖0.06g,混合均匀,用铝箔袋分装为50g/袋,即可。
实施例4
一种适合于肥胖人群的方便食品,通过下列步骤制备:
(1)取黄瓜250kg、莴笋250kg、慈姑50kg、洋葱50kg、生姜50kg,经清洗后,粉碎机中榨汁,加热至55℃,加入果胶酶100mL,酶解30min,煮沸5min,以8000rpm离心去除沉淀,70~75℃减压浓缩至可溶性固形物20%,喷雾干燥,待用;
(2)取白芸豆15kg、薏苡仁10kg,以水充分浸泡,沥干浸泡水,然后加水100kg,粉碎机中充分磨浆,以8000rpm离心去除沉淀,煮沸5min,喷雾干燥,待用;
(3)取黄精干片8kg,粉碎过10目筛,加水80kg,煮沸30min,以300目滤布过滤;滤渣加水50kg,煮沸20min,共重复2次;合并滤液,70~75℃减压浓缩至可溶性固形物20%,喷雾干燥,待用;
(4)取山药30kg,经清洗后,蒸汽加热去皮,切片机上切成5mm薄片,以蒸汽和85~90℃热风烘干,粉碎过200目筛,待用;
(5)取茄子300kg,经清洗后,切片机上切成3mm薄片,以蒸汽和85~90℃热风烘干,粉碎过200目筛,待用;
(6)取茯苓块5kg,粉碎过200目筛,待用;
(7)取步骤(1)~(6)所得物料,共72.84kg,加入碱化可可粉1.5kg、食盐800g、三氯蔗糖6g,按照成品中用量β-胡萝卜素3mg/kg、维生素D 10ug/kg、维生素E 80mg/kg、维生素B1 12mg/kg、维生素B2 12mg/kg、维生素B6 12mg/kg、维生素B12 12ug/kg、维生素C1500mg/kg、烟酸200mg/kg、叶酸1000ug/kg、泛酸40mg/kg、钙4000mg/kg、铁150mg/kg、锌100mg/kg、镁1500mg/kg、磷2000mg/kg、牛磺酸1200mg/kg、左旋肉碱10000mg/kg,添加复配食品营养强化剂3.6kg,混合均匀,分别用铝箔袋和马口铁罐分装为50g/袋、500g/罐,即可。
实施例5
一种适合于肥胖人群的方便食品,通过下列步骤制备:
(1)取黄瓜20kg、莴笋20kg、慈姑8kg、洋葱6kg、生姜4kg,经清洗后,粉碎机中榨汁,加热至50℃,加入果胶酶10mL,酶解45min,煮沸5min,以300目滤布过滤,60~65℃减压浓缩至可溶性固形物15%,真空冷冻干燥,待用;
(2)取白芸豆1kg、薏苡仁0.6kg,以水充分浸泡,沥干浸泡水,然后加水8kg,粉碎机中充分磨浆,以100目滤布过滤,煮沸2min,真空冷冻干燥,待用;
(3)取黄精干片1kg,粉碎过10目筛,加水8kg,煮沸30min,以200目滤布过滤;滤渣加水6kg,煮沸20min,过滤;合并滤液,60~65℃减压浓缩至可溶性固形物15%,真空冷冻干燥,待用;
(4)取山药3kg,经清洗后,手工去皮,切片机上切成5mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(5)取茄子20kg,经清洗后,切片机上切成2mm薄片,以80~85℃热风烘干,粉碎过200目筛,待用;
(6)取茯苓块0.4kg,粉碎过200目筛,待用;
(7)取步骤(1)~(6)所得物料,共6.87kg,加入木糖醇200g、香兰素100g、食盐50g、甜菊糖苷1.2g,混合均匀,用铝箔袋分装为50g/袋,即可。
应用实例1
为了验证本发明提供适合于肥胖人群的方便食品的口感可接受度,取实施例4、5制备的样品,随机选取年龄20~50岁、BMI≥25并愿意接受饮食治疗的超重和肥胖人群50人,参与品尝试验,其中,BMI 25~28的男性15人,BMI≥28的男性19人;BMI 25~28的女性10人,BMI≥28的女性6人。
样品分发后,每次50g,以400~500mL温开水冲调后代餐食用,并根据个人喜好适当调整冲调体积,食用前后8h内不再进食主食,食用后多饮水,根据冲调后外观、气味、滋味、饱腹感维持时间等综合评分,及时记录品尝感受,根据反馈情况进行统计分析。其中,评分等级标准为:很好4分、好3分、一般2分、不好1分、无法接受0分。
根据品尝试验结果,总体评分中没有反映无法接受的情况,说明本发明实施例4、5提供的方便食品可接受度较高,其中,外观方面主要反映情况为长时间放置出现分层现象,可能是由于未添加增稠剂的原因;实施例4制备的样品口感不如实施例5,但饱腹感维持时间稍长,可能是由于添加维生素、矿物质等营养素的原因。

为了验证本发明提供适合于肥胖人群的方便食品的食用依从性和效果,取实施例4、5制备的样品,从应用实例1中选取超重和肥胖人群30人,参与试食试验,其中,BMI 25~28的男性8人,BMI≥28的男性4人;BMI 25~28的女性13人,BMI≥28的女性5人。
参与试食的志愿者,早餐和中餐不改变原有饮食习惯,以本发明实施例4、5制备的样品代替晚餐,每次50g,以400~500mL温开水冲调后食用,食用后多饮水,每天增加中度体育锻炼或体力活动30min,共30天。
试验结束后,问卷调查志愿者的试食感受,总体情况较好,并反映愿意继续参与试验。参与试验的30人,各有15人食用实施例4、5制备的样品,维持30天后,体重均有一定下降。其中,食用实施例4的志愿者中减重最多的达到6kg,最少2kg,平均减重3.17kg;食用实施例5的志愿者中减重最多的达到5kg,最少2kg,平均减重2.89kg。参与试验的30人中,有1人在刚开始食用时曾出现轻度腹泻,数天后均恢复正常,未发现与配方相关的其它不良反应。
Claims (1)
1.一种适合于肥胖人群的方便食品,其特征在于通过以下步骤制备:
(1)按下列重量份的组分备料:黄瓜200~300份、莴笋200~300份、慈姑50~80份、白芸豆10~15份、茯苓3~5份、薏苡仁6~10份、茄子200~300份、洋葱50~80份、生姜30~50份、山药30~50份、黄精6~10份、营养素强化剂0~2份、调味料0~5份;
(2)取黄瓜、莴笋、慈姑、洋葱、生姜鲜品,经清洗后榨汁,加热至50~60℃,加入果蔬汁量0.01~0.02%的果胶酶,酶解30~45min,煮沸2~5min,以200目以上滤布过滤或8000rpm以上高速离心去除沉淀,再浓缩至可溶性固形物15%以上,喷雾干燥或真空冷冻干燥,待用;
(3)取白芸豆、薏苡仁干品,以水充分浸泡,加入3~5倍干料重量的水,磨浆后以100目以上滤布过滤或8000rpm以上高速离心去除沉淀,煮沸2~5min,喷雾干燥或真空冷冻干燥,待用;
(4)取黄精药材,粉碎为10~20目粗粉,加入6~10倍重量的水,煮沸提取20~30min,以200目以上滤布过滤,共提取2~3次,合并滤液,浓缩至可溶性固形物15%以上,喷雾干燥或真空冷冻干燥,待用;
(5)取山药,经清洗后,去皮,切成2~5mm薄片,以蒸汽和热风干燥,粉碎为200目以上细粉,待用;
(6)取茄子,经清洗后,切成2~5mm薄片,以蒸汽和热风干燥,粉碎为200目以上细粉,待用;
(7)取茯苓,粉碎为200目以上细粉,待用;
(8)在步骤(2)~(7)所得物料中加入营养素强化剂和调味料,混合均匀,分装,即得到适合于肥胖人群的方便食品;
所述营养素强化剂为左旋肉碱、牛磺酸、维生素A、维生素D、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、烟酸、叶酸、泛酸、钙、铁、锌、硒、铬、镁、磷中的几种或全部;所述调味料为食盐、甜味剂、香精香料和其它调整风味的食品配料。
