本专利公开了一种豆干的切割装置,包括机架,机架上设有加工机构,加工机构包括刀具和烟熏材料,刀具内设有空腔,且刀具包括重叠连接的上刀具和下刀具,且上刀具的底表面宽度大于下刀具的上表面宽度,上刀具与下刀具未重叠部分为缓冲面;上刀具的顶部设有若干透风孔,上刀具的两侧均设有若干通孔,且每个通孔与空腔相通,下刀具内的空腔为倒三角形,下刀具靠近上刀具的一端设有过滤网,烟熏材料设置于下刀具的空腔内,下刀具上设有引燃孔,引燃孔上连接有引线;机架上设有用于放置刀具的凹槽,凹槽的底部设有弹性层,且弹性层与缓冲面相对设置。本方案主要解决了豆干成型后的加工流程较长的问题。

豆干的切割装置
技术领域
本发明属于食品加工领域。
背景技术
豆干是豆腐干的简称,汉族传统豆制品之一,是豆腐的再加工制品。咸香爽口,硬中带韧,久放不坏,是中国各大菜系中都有一道美食。豆腐干营养丰富,含有大量蛋白质、脂肪、碳水化合物,还含有钙、磷、铁等多种人体所需的矿物质。豆腐干在制作过程中会添加食盐、茴香、花椒、大料、干姜等调料,既香又鲜,久吃不厌,被誉为“素火腿”。
我国传统豆干种类繁多,一般多以散装形式销售。近几年,将其制成开袋即食的休闲豆干,风味独特、携带方便,深受消费者喜爱,市场需求旺盛。但休闲豆干仍大多采用传统工艺加工,传统工艺加工流程为:清洗泡豆,磨浆,姜渣分离,煮浆,点浆,压榨成型,分割,卤制,烘烤等,压榨成型后的豆干需要至少经过分割、卤制和烘烤三个步骤才能进行包装,其工艺的加工流程较长。
发明内容
本发明意在提供一种豆干的切割装置,以解决豆干成型后的加工流程较长的问题。
为了达到上述目的,本发明的基础方案如下:豆干的切割装置,包括机架,所述机架上设有加工机构,所述加工机构包括刀具和烟熏材料,所述刀具内设有空腔,且刀具包括重叠连接的上刀具和下刀具,所述上刀具的横截面为倒梯形,所述下刀具的横截面为倒三角形,且上刀具的底表面宽度大于下刀具的上表面宽度,所述上刀具的底表面与下刀具的上表面未重叠部分为缓冲面;所述上刀具的顶部设有若干透风孔,所述上刀具的两侧均设有若干通孔,且每个通孔与空腔相通,所述下刀具内的空腔为倒三角形,所述下刀具靠近上刀具的一端设有过滤网,所述烟熏材料设置于下刀具的空腔内,且烟熏材料位于过滤网下方,所述下刀具上设有引燃孔,所述引燃孔上连接有引线;所述机架上设有与刀具相匹配的凹槽,所述凹槽的底部设有弹性层,且弹性层与缓冲面相对设置。
基础方案的原理:操作时,将需要加工的豆干放置于机架上,点燃引线,引线燃烧穿过引燃孔点燃位于下刀具空腔内的烟熏材料;驱使刀具向豆干的方向移动,刀具移动至凹槽内,完成豆干的切割工作,并使刀具在凹槽内静置2min。刀具对豆干切割的同时,烟熏材料燃烧产生的青烟穿过过滤网从空腔经通孔与豆干的切面接触,完成了对豆干的熏制和烘干;由于下刀具内存放有烟熏材料,通孔设置于上刀具上,刀具切割豆干时,松枝燃烧产生的青烟经通孔与豆干的切面接触,但被熏制的豆干切面只为上刀具对应的豆干切面,与下刀具对应的豆干切面没有被青烟熏制,刀具移至凹槽内后,青烟经通孔排出即可对没有熏制的豆干切面进行熏制处理,以此完成对豆干切面的全部熏制;刀具移动至凹槽内,凹槽底部的弹性层对上刀具的缓冲面起到缓冲作用,以此实现对刀具的缓冲,减小刀具对凹槽的磨损。
基础方案的优点:本方案主要利用刀具和通孔,配合空腔内燃烧的烟熏材料,在对豆干完成切割的同时,还完成了对豆干的熏制和烘干,相较于传统的豆干加工工艺,有效的缩短了豆干成型后的加工流程。
另外:1、利用的烟熏的方法不仅能延长豆干的食用时间,还能赋予豆干烟熏的味道,同时高温还对豆干起到一定的消毒作用。2、缓冲面配合弹性层可对刀具起到一定的缓冲作用,还能带动刀具做上下往复运动,加强刀具对豆干的切割效果,还能减少依附在刀具上的豆干残渣。3、将下刀具的空腔设置为倒三角形,相较于竖直面,倾斜面更利于烟熏材料的收集。4、凹槽既能容纳刀具,下刀具位于凹槽内后,青烟穿过通孔还能熏制下刀具对应的豆干切面。5、透风孔可使得刀具内部的空腔与外部连通,保证烟熏材料燃烧所需的氧气。6、过滤网既能保证烟熏材料燃烧产生青烟能够上升至空腔内,还能减少烟熏材料燃烧的残渣倒飞入空腔内。
优选方案一:作为基础方案的优选方案,所述凹槽的底部还设有与下刀具的底部相匹配的V型槽,且V型槽的两侧壁上分别设有电磁铁,通过上述设置,利用V型槽可进一步对刀具起到限位的作用;对V型槽侧壁上的电磁铁通电,利用通电后的电磁铁可对下刀具起到吸附作用,可进一步对刀具起到定位的效果。
优选方案二:作为优选方案一的优选方案,所述上刀具的底部与下刀具的顶部可拆卸连接,通过上述设置,上刀具和下刀具分离后,既便于更换下刀具空腔内的烟熏材料,又便于清洗上刀具和下刀具,增强了整个装置的实用性。
优选方案三:作为优选方案二的优选方案,所述弹性层包括橡胶套和弹簧,所述弹簧固接于橡胶套内部,通过上述设置,由于橡胶层具为柔性材质,相较于刀具直接与弹簧接触,橡胶层可有效的避免刀具被弹簧磨损,延长刀具的使用寿命;橡胶套配合弹簧可对刀具起到一定的缓冲作用,减小了刀具的冲击力。

具体实施方式
下面通过具体实施方式对本发明作进一步详细的说明:
说明书附图中的附图标记包括:机架1、上刀具2、下刀具3、松枝4、空腔5、缓冲面6、通孔7、凹槽8、橡胶套9、弹簧10、V型槽11、电磁铁12、透风孔13、过滤网14、引线15。
实施例基本如附图1所示:豆干的切割装置,包括机架1,机架1上设置有加工机构,加工机构包括刀具和烟熏材料(可为木屑、木柴、柏枝或松枝4,本实施例中选用松枝4),刀具内设置有空腔5,且刀具包括上刀具2和下刀具3,且上刀具2的底部与下刀具3顶部螺纹连接,既便于更换下刀具3空腔5内的松枝4,又便于清洗上刀具2和下刀具3,增强了整个装置的实用性。
上刀具2的横截面为倒梯形,下刀具3的横截面为倒三角形,且上刀具2的底表面宽度大于下刀具3的上表面宽度,上刀具2的底表面与下刀具3的上表面未重叠部分为缓冲面6;上刀具的顶部开设有若干透风孔13,上刀具2的两侧均开设有若干通孔7,且每个通孔7与空腔5相通,下刀具3内的空腔5为倒三角形,下刀具的上端设置有过滤网14,松枝4设置于下刀具3的空腔5内,且松枝4位于过滤网14下方,下刀具上开设有引燃孔,且引燃孔上连接有引线15。
机架1上设置有与刀具相匹配的凹槽8,凹槽8的底部中央设置有与下刀具3的底部相匹配的V型槽11,且V型槽11的两侧壁上分别安装有电磁铁12,利用V型槽11可进一步对刀具起到限位的作用;对V型槽11侧壁上的电磁铁12通电,利用通电后的电磁铁12可对下刀具3起到吸附作用,可进一步对刀具起到定位的效果。凹槽8的底部位于V型槽11的两侧还分别设置有弹性层,且弹性层与缓冲面6相对设置,弹性层包括橡胶套9和弹簧10,弹簧10固接于橡胶套9内部,由于橡胶层具为柔性材质,相较于刀具直接与弹簧10接触,橡胶层可有效的避免刀具被弹簧10磨损,延长刀具的使用寿命;橡胶套9配合弹簧10可对刀具起到一定的缓冲作用,减小了刀具的冲击力。
本实施例中,操作时,将需要加工的豆干放置于机架1上,点燃引线15,引线15燃烧穿过引燃孔点燃位于下刀具3空腔5内的松枝4,透风孔13可保证刀具内部的空腔5与外部连通;驱使刀具向豆干的方向移动,刀具移动至凹槽8内,完成豆干的切割工作,并使刀具在凹槽内静置2min。刀具对豆干切割的同时,松枝4燃烧产生的青烟穿过过滤网14从空腔5经通孔7与豆干的切面接触,完成了对豆干的熏制和烘干;由于下刀具3内存放有松枝4,通孔7设置于上刀具2上,刀具切割豆干时,松枝燃烧产生的青烟经通孔7与豆干的切面接触,但被熏制的豆干切面只为上刀具2对应的豆干切面,与下刀具3对应的豆干切面没有被青烟熏制,刀具移至凹槽8内后,青烟经通孔7排出即可对没有熏制的豆干切面进行熏制处理,以此完成对豆干切面的全部熏制;刀具移动至凹槽8内,凹槽8底部的橡胶套9配合弹簧10可对上刀具2的缓冲面6起到缓冲作用,以此实现对刀具的缓冲,减小刀具对凹槽8的磨损,相较于传统的豆干加工工艺,将传统的分割、卤制和烘烤三个步骤集成一个步骤完成,有效的缩短了豆干成型后的加工流程。

1.豆干的切割装置,其特征在于:包括机架,所述机架上设有加工机构,所述加工机构包括刀具和烟熏材料,所述刀具内设有空腔,且刀具包括重叠连接的上刀具和下刀具,所述上刀具的横截面为倒梯形,所述下刀具的横截面为倒三角形,且上刀具的底表面宽度大于下刀具的上表面宽度,所述上刀具的底表面与下刀具的上表面未重叠部分为缓冲面;所述上刀具的顶部设有若干透风孔,所述上刀具的两侧均设有若干通孔,且每个通孔与空腔相通,所述下刀具内的空腔为倒三角形,所述下刀具靠近上刀具的一端设有过滤网,所述烟熏材料设置于下刀具的空腔内,且烟熏材料位于过滤网下方,所述下刀具上设有引燃孔,所述引燃孔上连接有引线;所述机架上设有与刀具相匹配的凹槽,所述凹槽的底部设有弹性层,且弹性层与缓冲面相对设置。
2.根据权利要求1所述的豆干的切割装置,其特征在于:所述凹槽的底部还设有与下刀具的底部相匹配的V型槽,且V型槽的两侧壁上分别设有电磁铁。
3.根据权利要求2所述的豆干的切割装置,其特征在于:所述上刀具的底部与下刀具的顶部可拆卸连接。
4.根据权利要求3所述的豆干的切割装置,其特征在于:所述弹性层包括橡胶套和弹簧,所述弹簧固接于橡胶套内部。
