本发明公开了一种茯苓大豆胚芽异黄酮咀嚼片,由下列重量份的原料制成:大豆胚芽35‑40、茯苓2‑3、砂仁1‑2、山药2‑3、乌梅3‑4、南瓜子仁10‑11、苹果汁1‑2、葡萄糖20‑21、蔗糖20‑21、柠檬酸1‑1.2、乳糖20‑21、甘露醇8‑9、硬脂酸镁1‑1.2、乳酸菌0.3‑0.4、海带渣11‑12、小苏打2‑3、红景天多糖0.1‑0.2、淀粉1.5‑2。本发明的咀嚼片外观整齐,表面光滑,色泽均匀,硬度和脆性良好,且本发明添加的乌梅、果汁可改善本发明的口味,添加的茯苓等中药可起到健脾的作用。

技术领域
本发明涉及咀嚼片加工技术领域,尤其涉及一种茯苓大豆胚芽异黄酮咀嚼片及其制备方法。
背景技术
大豆胚芽是大豆制油和大豆蛋白生产中的副产物,具有全面的营养和很高的大豆异黄酮含量,是优良的大豆异黄酮保健食品开发原料。到目前为止,由于其不良风味及加工工艺水平的限制使其开发利用受到很大的限制。大豆胚芽作为大豆制油工业和蛋白工业的重要副产品之一,如果能针对其富含大豆异黄酮的独特优势综合开发和利用,可大大提高其附加值,对整个大豆深加工行业全面均衡发展将起到重要的促进作用。目前,国外及国内市场上开发出的大豆胚芽保健食品基本是直接以大豆胚芽或胚芽粉为原料,未经发酵等生物转化过程而直接加工而成的产品。因此,这类大豆胚芽保健虽具有高大豆异黄酮含量,但其中的大豆异黄酮主要以糖苷形式为主,摄入后其实际的生物利用度并不高。如果利用乳酸菌发酵将大豆胚芽中的大豆异黄酮大量转化为苷元形式,可大大提高其吸收利用率及生理活性,进而改善人体的大豆异黄酮低利用率状态。《大豆胚芽异黄酮的乳酸菌转化及其咀嚼片的研制》一文中以大豆胚芽为原料,经过乳酸菌发酵后与蔗糖、柠檬酸等物料混合制成咀嚼片。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种茯苓大豆胚芽异黄酮咀嚼片及其制备方法。
本发明是通过以下技术方案实现的:
一种茯苓大豆胚芽异黄酮咀嚼片,由下列重量份的原料制成:
大豆胚芽35-40、茯苓2-3、砂仁1-2、山药2-3、乌梅3-4、南瓜子仁10-11、苹果汁1-2、葡萄糖20-21、蔗糖20-21、柠檬酸1-1.2、乳糖20-21、甘露醇8-9、硬脂酸镁1-1.2、乳酸菌0.3-0.4、海带渣11-12、小苏打2-3、红景天多糖0.1-0.2、淀粉1.5-2。
所述的茯苓大豆胚芽异黄酮咀嚼片的制备方法,包括以下步骤:
(1)将大豆胚芽清洗除杂,于45℃下烘至干燥,粉碎,过40目筛,加9倍的水,送入胶体磨研磨匀质,过滤除渣,所得物料于108℃下灭菌20分钟,然后与葡萄糖混合均匀,接入乳酸菌,于30℃下静置培养24小时;
(2)将小苏打加水配制成浓度为6%的溶液,得小苏打水溶液;将海带渣切碎,加小苏打水溶溶液,在温度为75℃、搅拌速度为350r/min的条件下水浴加热2小时,用纱布挤压过滤,收集胶液,所得胶液过150目筛,于108℃下灭菌20分钟;
(3)将步骤(1)、(2)所得物料与红景天多糖混合,冷冻干燥后粉碎,得大豆胚芽粉;
(4)将南瓜子仁、苹果汁混合入锅,小火炒干后出料,粉碎,得南瓜子仁粉;将茯苓、砂仁、山药、乌梅加4-5倍的水文火煎煮30分钟,过滤除渣,所得滤液经过喷雾干燥制成粉末,与南瓜子仁粉混合;
(5)将淀粉加水配制成浓度为5%的淀粉浆,与步骤(3)、(4)所得物料及蔗糖、柠檬酸、乳糖、甘露醇混合均匀,捏成团,用14目筛制粒,于45℃下干燥90分钟,再与剩余物料混合压片,即得。
本发明的优点是:本发明的咀嚼片外观整齐,表面光滑,色泽均匀,硬度和脆性良好,添加的大豆胚芽经过乳酸菌发酵,苷元含量提高,更容易被人体吸收利用,且本发明添加的海带渣经过小苏打水溶液浸泡、压滤得到褐藻胶,褐藻胶具有粘性,可粘附在乳酸菌***,调节周围渗透压,在冷冻过程中减少冰晶的产生,配合红景天多糖对乳酸菌起到冷冻保护的作用,从而提高了乳酸菌的存活率,同时褐藻胶还可作为粘结剂增加物料的粘性,此外,本发明添加的乌梅、果汁可改善本发明的口味,添加的茯苓等中药可起到健脾的作用。
具体实施方式
一种茯苓大豆胚芽异黄酮咀嚼片,由下列重量份(千克)的原料制成:
大豆胚芽35、茯苓2、砂仁1、山药2、乌梅3、南瓜子仁10、苹果汁1、葡萄糖20、蔗糖20、柠檬酸1、乳糖20、甘露醇8、硬脂酸镁1、乳酸菌0.3、海带渣11、小苏打2、红景天多糖0.1、淀粉1.5。
所述的茯苓大豆胚芽异黄酮咀嚼片的制备方法,包括以下步骤:
(1)将大豆胚芽清洗除杂,于45℃下烘至干燥,粉碎,过40目筛,加9倍的水,送入胶体磨研磨匀质,过滤除渣,所得物料于108℃下灭菌20分钟,然后与葡萄糖混合均匀,接入乳酸菌,于30℃下静置培养24小时;
(2)将小苏打加水配制成浓度为6%的溶液,得小苏打水溶液;将海带渣切碎,加小苏打水溶溶液,在温度为75℃、搅拌速度为350r/min的条件下水浴加热2小时,用纱布挤压过滤,收集胶液,所得胶液过150目筛,于108℃下灭菌20分钟;
(3)将步骤(1)、(2)所得物料与红景天多糖混合,冷冻干燥后粉碎,得大豆胚芽粉;
(4)将南瓜子仁、苹果汁混合入锅,小火炒干后出料,粉碎,得南瓜子仁粉;将茯苓、砂仁、山药、乌梅加4倍的水文火煎煮30分钟,过滤除渣,所得滤液经过喷雾干燥制成粉末,与南瓜子仁粉混合;
(5)将淀粉加水配制成浓度为5%的淀粉浆,与步骤(3)、(4)所得物料及蔗糖、柠檬酸、乳糖、甘露醇混合均匀,捏成团,用14目筛制粒,于45℃下干燥90分钟,再与剩余物料混合压片,即得。

1.一种茯苓大豆胚芽异黄酮咀嚼片,其特征在于由下列重量份的原料制成:
大豆胚芽35-40、茯苓2-3、砂仁1-2、山药2-3、乌梅3-4、南瓜子仁10-11、苹果汁1-2、葡萄糖20-21、蔗糖20-21、柠檬酸1-1.2、乳糖20-21、甘露醇8-9、硬脂酸镁1-1.2、乳酸菌0.3-0.4、海带渣11-12、小苏打2-3、红景天多糖0.1-0.2、淀粉1.5-2。
2.根据权利要求1所述的茯苓大豆胚芽异黄酮咀嚼片的制备方法,其特征在于包括以下步骤:
(1)将大豆胚芽清洗除杂,于45℃下烘至干燥,粉碎,过40目筛,加9倍的水,送入胶体磨研磨匀质,过滤除渣,所得物料于108℃下灭菌20分钟,然后与葡萄糖混合均匀,接入乳酸菌,于30℃下静置培养24小时;
