技术领域
本发明涉及食品饮料领域,特别是涉及一种双耳润肺悬浮饮料及其制备方法。
背景技术
肺的主要生理功能是主气司呼吸,主行水,朝百脉,主治节。肺气以宣发肃降为基本运行形式。肺在五脏六腑中位置最高,覆盖诸脏,故有“华盖”之称。肺叶娇嫩,不耐寒热燥湿诸邪之侵;肺又上通鼻窍,外合皮毛,与自然界息息相通,易受外邪侵袭,故有“娇脏”之称。
肺癌已成为目前人类因癌症死亡的主要原因,有专家称肺癌和爱滋病是本世纪与不良生活习惯有关的危害人类健康最严重的两种疾病。在28个发达国家中,肺癌已成为恶性肿瘤中最常见的死亡原因。有资料表明,中国肺癌发病率将在相当长时期内呈现显著上升趋势。
肺癌的病因,大致分为以下几种:
(1)吸烟已被公认为引起肺癌的最重要的致癌因素。在欧美各国,肺癌的发生归因于吸烟的危险度在90%左右。80年代,上海市区男性肺癌归因于吸烟的危险度在70%-80%;女性肺癌约30%归因于吸烟与被动吸烟。
(2)职业性致肺癌因素:在70年代,中国有些工业城市,在工厂集中的地区,肺癌的发病率和死亡率特高,当时有的城市已居各种恶性肿瘤的首位。目前认为与下列物质接触的职业与肺癌的发生有关:石棉、砷化合物、铬化合物、镍化合物、二氯甲醚、电离辐射、芥子气以及煤烟、焦油和石油中的多环芳烃类。
(3)大气污染等环境污染:工业的废气如果处理不当,可污染厂矿内外的环境和大气。此外城市中每天燃烧的大量煤、柴油、汽油以及柏油马路的铺设和机动车辆的使用,均可导致居民密集区空气的污染。令人不安的是环境污染仍是导致城乡居民疾病与死亡的重要原因之一。一般城市中的肺癌发病有10%以上是由大气污染引起的。厨房内的油烟和煤烟污染,是引起不吸烟妇女患肺癌的原因之一。近年来,室内装修所用石材、油漆、地板胶、塑料饰物、粘合剂等带来了室内污染。
(4)室内氡污染:氡是一种放射性物质,广泛的存在于自然界的土壤、岩石、建筑材料中。它是铀、镭经衰变而成的产物。氡的同位素及其衰变产物被称为氡子体。只要是有氡的地方就会伴存着子体,氡及其子体危害人的健康。氡可通过地基、建筑物的缝隙、建筑材料结合处、管道入室部位松动处进入室内,建筑材料中也可能有氡逸入室内。
现代研究表明,黑木耳味甘、性平,具有很多药用功效。黑木耳中含有丰富的纤维素和一种特殊的植物胶质,能促进肠胃运动,促使肠道脂肪和食物的***,而这种植物胶质,有一定的吸附作用,对体内的杂质、异物有溶解和氧化作用,能有效清肺润肺。此外,黑木耳中含有的多糖成分,具有抗癌作用,可以辅助治疗癌症。
黑木耳的食用方法有很多,但是黑木耳相关食品饮料的开发却是很滞后,目前市场上的黑木耳加工产品较少,无法满足人们对于黑木耳加工食品日益增长的需求。目前市面上的饮料,大多只能在口味上满足人们的需求,但对人们的健康并无显著益处。
本发明针对于上述问题,特制作一种以黑木耳、银耳、枸杞、山楂浓缩汁、蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液为原料,配制出的一种具有润肺功能,且营养丰富、风味独特的复合饮料,制成一种不仅口味独特,还有润肺滋阴、益气清肠、滋肾养胃、益精名目、促进消化、增强食欲等功能的复合饮料,能更好地满足人们的需求,且对于癌症患者具有辅助治疗作用。
发明内容
本发明的目的是提供一种双耳润肺悬浮饮料及其制备方法,以黑木耳、银耳、枸杞、山楂浓缩汁、蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液为原料,配制出的一种具有润肺功能,且营养丰富、风味独特的复合饮料。
本发明的目的通过以下技术方案来实现:
一种双耳润肺悬浮饮料,由原料按以下重量份数制备而成,黑木耳粒0.4-0.6份、银耳粒0.4-0.6份、枸杞粒0.7-0.9份、山楂浓缩汁9-11份、蜜环菌提取液3-5份、牛肝菌提取液9-11份、双孢菇提取液11-13份、榆黄蘑提取液2-4份、黄瓜提取液7-9份、冰糖0.5-1.5份、柠檬酸0.24-0.28份、柠檬酸钠0.1-0.2份、白砂糖6-10份、果葡糖浆3-5份、稳定剂0.45份、纯净水227.47-247.21份。
所述的一种双耳润肺悬浮饮料,原料按优选重量份数:黑木耳粒0.45-0.55份、银耳粒0.45-0.55份、枸杞粒0.75-0.85份、山楂浓缩汁9.5-10.5份、蜜环菌提取液3.5-4.5份、牛肝菌提取液9.5-10.5份、双孢菇提取液11.5-12.5份、榆黄蘑提取液2.5-3.5份、黄瓜提取液7.5-8.5份、冰糖0.8-1.2份、柠檬酸0.25-0.27份、柠檬酸钠0.14-0.16份、白砂糖7-9份、果葡糖浆3.5-4.5份、稳定剂0.45份、纯净水232.47-242.21份。
所述的一种双耳润肺悬浮饮料,原料按最佳重量份数:黑木耳粒0.5份、银耳粒0.5份、枸杞粒0.8份、山楂浓缩汁10份、蜜环菌提取液4份、牛肝菌提取液10份、双孢菇提取液12份、榆黄蘑提取液3份、黄瓜提取液8份、冰糖1份、柠檬酸0.26份、柠檬酸钠0.15份、白砂糖8份、果葡糖浆4份、稳定剂0.45份、纯净水237.49份。
所述稳定剂中原料按重量份数,羧甲基纤维素钠0.21份、黄原胶0.15份、卡拉胶0.09份。
所述的一种双耳润肺悬浮饮料,其制备方法的步骤为:
步骤1、原料预处理:
(1)挑选大小均匀、无腐烂变质的优质黑木耳、银耳,挑选新鲜、饱满、干燥、无霉烂、香气浓郁的枸杞,洗净并除杂,沥干水分,按重量份数称量;取称量后的黑木耳、银耳、枸杞,分别置于粗粉碎机中,打碎,备用;
(2)选取优质的蜜环菌、牛肝菌、双孢菇、榆黄蘑、黄瓜,洗净并除杂,沥干水分;
取蜜环菌,粉碎后采用超声辅助提取的方法进行提取,料液比为1:10,温度为77℃,提取时间为22min,得蜜环菌提取液,备用;
取牛肝菌,粉碎后采用水浴提取法进行提取,料液比为1:30,温度为100℃,提取时间为4h,离心分离,得牛肝菌提取液,备用;
取双孢菇,粉碎后采用水浴提取法进行提取,料液比为1:31,温度为70℃,提取时间为125min,离心分离,得双孢菇提取液,备用;
取榆黄蘑,粉碎后采用水浴提取法进行提取,料液比为1:20,温度为100℃,提取时间为2h,离心分离,得榆黄蘑提取液,备用;
取黄瓜,粉碎后采用微波辅助提取法进行提取,料液比为1:20,功率为600W,提取时间为25min,离心分离,得黄瓜提取液,备用;
步骤2、称量:
(1)取打碎后的黑木耳、银耳、枸杞,挑选大小均匀的原材料,按重量份数称量,备用;
(2)取提取后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,按重量份数称量,备用;
步骤3、调配清汁:按重量份数,称取白糖、山楂浓缩汁、果葡糖浆、冰糖、柠檬酸、柠檬酸钠、羧甲基纤维素钠、卡拉胶、黄原胶,按顺序加入至纯净水中,混合搅拌均匀,制得清汁;
步骤4、初混:取称量后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,依次加入至调配好的清汁中,混合搅拌均匀,得初混溶液,备用;
步骤5、总混:取称量后的黑木耳、银耳、枸杞,加入至调配好的初混溶液中,混合搅拌均匀,得总混溶液,定容至300ml;
步骤6、杀菌:取总混溶液,在95℃的水浴中杀菌2h,杀菌后分段冷却,冷却后灌装成品,制得一种双耳润肺悬浮饮料。
所述黑木耳为沙棘黑木耳。
所述的枸杞为宁夏枸杞。
在原料中:
黑木耳,具有益气强身、滋肾养胃、活血等功能,它能润肺、清血脂、抗血栓、降血脂,软化血管,使血液流动动畅,减少心血管病发生。黑木耳还有较强的吸附作用,经常食用利于使体内产生的垃圾及时排出体外。黑木耳对胆结石、肾结石也有较好的化解功能,黑木耳的作用因为它所含的植物碱具有促进消化道、泌尿道各种腺体分泌的特性,植物碱能协同这些分泌物催化结石,润滑肠道。
银耳,又称白木耳、雪耳、银耳子等,银耳子实体纯白色,胶质,半透明,宽5-10cm,由多数宽而薄的瓣片组成,新鲜时软,干后收缩。担子近球形,纵分隔,(10-13)μm×(9-10)μm。孢子无色,光滑,近球形,(6-8.5)μm×(4-7)μm。银耳寄生朽木上,色白,其形卷曲若耳,故名白木耳、银耳。银耳味甘、淡、性平、无毒,既有补脾开胃的功效,又有益气清肠、滋阴润肺的作用。既能增强人体免疫力,又可增强肿瘤患者对放、化疗的耐受力。银耳富有天然植物性胶质,外加其具有滋阴的作用,是可以长期服用的良好润肤食品。
枸杞,即是传统名贵中药材,又是一种营养滋补品,枸杞性平味甘,具有滋补肝肾,益精名目、润肺的功效,枸杞的果实检测出含有丰富的天然天然胡萝卜素、维生素C、枸杞蛋白多糖、甜菜碱、亚油酸以及铁、磷、钙等营养成分,有补虚安神、明目祛风、滋肾润肺以及护肝抗肿瘤等作用。
山楂浓缩汁含多种有机酸。口服后增强胃液酸度,提高胃蛋白酶活性,促进蛋白质的消化;山楂味酸,刺激胃黏膜促进胃液分泌;山楂中含脂肪酶,能促进脂肪的消化;山楂含有维生素C等成分,口服可增进食欲;山楂对胃肠运动功能具有调节作用,对痉挛状态的胃肠平滑肌有抑制作用,对松弛状态的平滑肌有兴奋作用。

牛肝菌提取液,含有人体必需的8种氨基酸,还含有腺膘呤、胆碱和腐胺等生物碱。它还具有清热解烦、养血和中、追风散寒、舒筋活血、补虚提神等功效。另外,还有抗流感病毒、防治感冒的作用。
双孢菇提取液,含有较多的甘露糖、海藻糖及各种氨基酸类物质,味道鲜美,营养丰富,据测定每100g干菇中含蛋白质36-40g、脂肪3.6g、碳水化合物31.2g、磷718mg、铁188.5mg、钙131mg、灰分14.2mg、粗纤维6g,此外还含有维生素B1、B2、Vc,尼克酸等。
榆黄蘑提取液,营养丰富,含蛋白质、维生素和矿物质等多种营养成分,其中氨基酸含量尤为丰富,且必需氨基酸含量高,属高营养、低热量食品,长期食用,有降低血压、降低胆固醇含量的功能。
黄瓜提取液,富含蛋白质、糖类、维生素B2、维生素C、维生素E、胡萝卜素、尼克酸、钙、磷、铁等营养成分。
本发明的有益效果:本发明的一种双耳润肺悬浮饮料,是以黑木耳、银耳、枸杞、山楂浓缩汁、蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液为原料,配制出的一种具有润肺功能、营养丰富、风味独特的复合饮料,其饮料色泽、风味、口感等指标符合标准,该产品具有一定的润肺保健功能,具有开发前途;另外,本发明除却润肺功能外,还具有益气清肠、滋阴润肺、滋肾养胃、益精名目、促进消化、增强食欲、防癌抗癌、降压降脂、补充维生素等功能,保健价值较高。
本发明在反复试验的基础上,经过多位患有肺病患者的服用与临床验证,不断总结和完善,疗效确切。对支气管肺炎、尘肺病、早期肺癌等主病证在不同程度上起到了清肺止咳、润肺化痰、消炎止痛、防癌抗癌的作用,具有保健、见效快、纯天然、无毒无副作用等优点。
本发明经两组患有支气管肺炎或尘肺病或早期肺癌等病证的患者临床验证,其中一组为治疗组饮用本发明,每天饮用本发明一次,7天为一个疗程,另一组对照组服用秋梨润肺膏,每组选择门诊病人100例,其中男70例,女30例,最大年龄65岁,最小年龄20岁,每天使用一次,7天为一个疗程,临床表现为热痰咳嗽、咯血、胸痛气急、喘息气促、发热头晕、心悸浮肿、盗汗体虚,表一为服用一个疗程后的对照数据:

治疗组和对照组有显著差异,从而可以看出本发明在临床上的应用有显著的疗效。
本发明的工艺优点在于:
1、选择原料科学,生产工艺先进,其产品不仅具有浓郁的复合香气,并且味道鲜美、绵甜爽净、余味悠长,方便存放;
2、产品中不添加香料及防腐剂,保持原料本身的风味和营养成份,易被人体吸收;
3、原料来源广泛,加工艺线路短,产品易加工制造;
4、在制作过程中,对原材料处理工艺条件进行了探讨,然后利用4因素5水平正交试验筛选最佳配方,并对其进行了感官检验,确定了某些合理的工艺参数。

下面结合附图对本发明作进一步详细说明。
实施例1
一种双耳润肺悬浮饮料,由原料按以下重量份数制备而成,黑木耳粒0.4-0.6g、银耳粒0.4-0.6g、枸杞粒0.7-0.9g、山楂浓缩汁9-11ml、蜜环菌提取液3-5ml、牛肝菌提取液9-11ml、双孢菇提取液11-13ml、榆黄蘑提取液2-4ml、黄瓜提取液7-9ml、冰糖0.5-1.5g、柠檬酸0.24-0.28g、柠檬酸钠0.1-0.2g、白砂糖6-10g、果葡糖浆3-5ml、稳定剂0.45份、纯净水227.47-247.21份。
所述稳定剂中原料按重量份数,羧甲基纤维素钠0.21份、黄原胶0.15份、卡拉胶0.09份。
所述黑木耳为沙棘黑木耳。
所述的枸杞为宁夏枸杞。
如图1所示,其制备方法的步骤为:
步骤1、原料预处理:
(1)挑选大小均匀、无腐烂变质的优质黑木耳、银耳,挑选新鲜、饱满、干燥、无霉烂、香气浓郁的枸杞,洗净并除杂,沥干水分,按重量份数称量;取称量后的黑木耳、银耳、枸杞,分别置于粗粉碎机中,打碎,备用;
(2)选取优质的蜜环菌、牛肝菌、双孢菇、榆黄蘑、黄瓜,洗净并除杂,沥干水分;
取蜜环菌,粉碎后采用超声辅助提取的方法进行提取,料液比为1:10,温度为77℃,提取时间为22min,得蜜环菌提取液,备用;
取牛肝菌,粉碎后采用水浴提取法进行提取,料液比为1:30,温度为100℃,提取时间为4h,离心分离,得牛肝菌提取液,备用;
取双孢菇,粉碎后采用水浴提取法进行提取,料液比为1:31,温度为70℃,提取时间为125min,离心分离,得双孢菇提取液,备用;
取榆黄蘑,粉碎后采用水浴提取法进行提取,料液比为1:20,温度为100℃,提取时间为2h,离心分离,得榆黄蘑提取液,备用;
取黄瓜,粉碎后采用微波辅助提取法进行提取,料液比为1:20,功率为600W,提取时间为25min,离心分离,得黄瓜提取液,备用;
步骤2、称量:
(1)取打碎后的黑木耳、银耳、枸杞,挑选大小均匀的原材料,按重量份数称量,备用;
(2)取提取后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,按重量份数称量,备用;
步骤3、调配清汁:按重量份数,称取白糖、山楂浓缩汁、果葡糖浆、冰糖、柠檬酸、柠檬酸钠、羧甲基纤维素钠、卡拉胶、黄原胶,按顺序加入至纯净水中,混合搅拌均匀,制得清汁;
步骤4、初混:取称量后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,依次加入至调配好的清汁中,混合搅拌均匀,得初混溶液,备用;
步骤5、总混:取称量后的黑木耳、银耳、枸杞,加入至调配好的初混溶液中,混合搅拌均匀,得总混溶液,定容至300ml;
步骤6、杀菌:取总混溶液,在95℃的水浴中杀菌2h,杀菌后分段冷却,冷却后灌装成品,制得一种双耳润肺悬浮饮料。
实施例2
一种双耳润肺悬浮饮料,原料按优选重量份数:黑木耳粒0.45-0.55g、银耳粒0.45-0.55g、枸杞粒0.75-0.85g、山楂浓缩汁9.5-10.5ml、蜜环菌提取液3.5-4.5ml、牛肝菌提取液9.5-10.5ml、双孢菇提取液11.5-12.5ml、榆黄蘑提取液2.5-3.5ml、黄瓜提取液7.5-8.5ml、冰糖0.8-1.2g、柠檬酸0.25-0.27g、柠檬酸钠0.14-0.16g、白砂糖7-9g、果葡糖浆3.5-4.5ml、稳定剂0.45份、纯净水232.47-242.21份。
所述稳定剂中原料按重量份数,羧甲基纤维素钠0.21份、黄原胶0.15份、卡拉胶0.09份。
所述黑木耳为沙棘黑木耳。
所述的枸杞为宁夏枸杞。

实施例3
一种双耳润肺悬浮饮料,原料按最佳重量份数:黑木耳粒0.5g、银耳粒0.5g、枸杞粒0.8g、山楂浓缩汁10ml、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、冰糖1g、柠檬酸0.26g、柠檬酸钠0.15g、白砂糖8g、果葡糖浆4ml、稳定剂0.45份、纯净水237.49份。
所述稳定剂中原料按重量份数,羧甲基纤维素钠0.21份、黄原胶0.15份、卡拉胶0.09份。
所述黑木耳为沙棘黑木耳。
所述的枸杞为宁夏枸杞。
其制备方法的具体步骤同实施例1相同。
实施例4
一种双耳润肺悬浮饮料的制备方法,如图1所示;
1.材料
黑木耳粒、银耳粒、枸杞粒、山楂浓缩汁、蜜环菌、牛肝菌、双孢菇、榆黄蘑、黄瓜、冰糖、柠檬酸、柠檬酸钠、白砂糖、果葡糖浆、稳定剂。
2.设备
电子天平、量筒、烧杯、提取锅、立式灭菌锅、离心机、剪刀。
3.实验方法
3.1原料预处理
挑选大小均匀、无腐烂变质的优质黑木耳、银耳,枸杞选用新鲜、饱满、干燥、无霉烂、香气浓郁的宁夏枸杞,将三种原材料用粗粉碎机打碎后,取蜜环菌、牛肝菌、双孢菇、榆黄蘑、黄瓜进行提取,得蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,加入至调配好的清汁中,再加入大小均匀的黑木耳、银耳、枸杞,放入饮料瓶中,混合均匀。
2.2清汁的调配
将白糖、山楂浓缩汁、果葡糖浆、冰糖、柠檬酸、柠檬酸钠、羧甲基纤维素钠、卡拉胶、黄原胶按照一定的顺序及比例,添加到适量的纯净水中,制成清汁。
2.3杀菌
双耳润肺饮料的杀菌工艺为:在95℃的水浴中杀菌2h,杀菌后分段冷却。
4感官评定
采用描述分析性试验方法,选10位同行进行评定。按随机顺序将米糊提供给评定员,对各个指标打分并作出相应的感官描述。评分标准见表1。

5.单因素实验
确定黑木耳添加量(干重)为0.5g、银耳添加量(干重)为0.5g、枸杞添加量(干重)为0.8g、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、柠檬酸钠添加量为0.15g、冰糖添加量为1g、果葡糖浆添加量为4ml。
5.1白砂糖单因素实验
黑木耳添加量(干重)为0.5g、银耳添加量(干重)为0.5g、枸杞添加量(干重)为0.8g、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、柠檬酸钠添加量为0.15g、冰糖添加量为1g、果葡糖浆添加量为4ml时,柠檬酸添加量为0.26g,山楂浓缩汁添加量为10ml,稳定剂按照羧甲基纤维素钠0.21g、黄原胶0.15g、卡拉胶0.09g添加,添加总量为0.45g,白砂糖的添加量分别为6g、7g、8g、9g、10g。
5.2山楂浓缩汁添加量单因素实验
黑木耳添加量(干重)为0.5g、银耳添加量(干重)为0.5g、枸杞添加量(干重)为0.8g、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、柠檬酸钠添加量为0.15g,冰糖添加量为1g,果葡糖浆添加量为4ml时,柠檬酸添加量为0.26g、白砂糖添加量为8g,稳定剂按照羧甲基纤维素钠0.21g、黄原胶0.15g、卡拉胶0.09g添加,添加总量为0.45g,山楂浓缩汁的添加量分别为8ml、9ml、10ml、11ml、12ml。
5.3稳定剂的添加量单因素实验
黑木耳添加量(干重)为0.5g、银耳添加量(干重)为0.5g、枸杞添加量(干重)为0.8g、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、柠檬酸钠添加量为0.15g,冰糖添加量为1g,果葡糖浆添加量为4ml时,柠檬酸添加量为0.26g、山楂浓缩汁的添加量为10ml,白砂糖添加量为8g,稳定剂按照羧甲基纤维素钠、黄原胶、卡拉胶7:5:3添加总量分别为0.2g、0.25g、0.3g、0.35g、0.45g。
5.4柠檬酸的添加量的单因素实验
黑木耳添加量(干重)为0.5g、银耳添加量(干重)为0.5g、枸杞添加量(干重)为0.8g、蜜环菌提取液4ml、牛肝菌提取液10ml、双孢菇提取液12ml、榆黄蘑提取液3ml、黄瓜提取液8ml、柠檬酸钠添加量为0.15g,冰糖添加量为1g,果葡糖浆添加量为4ml时,山楂浓缩汁的添加量为10ml,白砂糖添加量为8g,稳定剂按照羧甲基纤维素钠0.21g、黄原胶0.15g、卡拉胶0.09g添加,添加总量为0.45g,柠檬酸的添加量为0.24g、0.25g、0.26g、0.27g、0.28g。
6.正交试验设计
然后利用4因素5水平正交试验筛选最佳配方,以黑木耳、银耳、枸杞、添加量为定量,添加量为变量因素,进行L(16)45的正交实验,以感官评分为指标,确定最优饮料配方,因素水平表见表2。

6实验结果与讨论
6.1单因素实验结果
6.1.1白砂糖添加量单因素实验结果
感官评定表
由上表可知白砂糖时感官评分最高,在此添加量下8g,感官评分最高,得到风味较好的饮料。
6.1.2山楂浓缩汁添加量的单因素实验结果
由上表可知山楂浓缩汁添加量为10ml时感官评分最高,在此添加量下,感官评分最高,得到风味较好的饮料。
6.1.3稳定剂添加量的单因素实验结果
由上表可知冰糖添加量为0.8%时感官评分最高,在此添加量下,感官评分最高,得到风味较好的饮料。
6.1.4柠檬酸的单因素实验
由上表可知复合酸味剂的添加量为0.1%时感官评分最高,在此添加量下,感官评分最高,得到风味较好的饮料。
6.2正交试验结果与讨论
以黑木耳、银耳、枸杞为定量,白糖、山楂浓缩汁添加量为变量。
7、结果与讨论
本实验为不同添加量的白砂糖、山楂浓缩汁、柠檬酸、复合稳定剂对黑木耳润肺饮料感官评定的影响。由实验结果R值可知对感官评定分数影响顺序为白糖>山楂浓缩汁>柠檬酸>复合稳定剂。可知对饮料感官评定的影响白砂糖的添加量为8g、山楂浓缩汁10ml、柠檬酸0.26g、复合稳定剂0.45g,最佳配比为A2B1C2D2。
实施例5
本发明中,所述黑木耳为沙棘黑木耳,是由用富含大量沙棘黄酮的沙棘籽粕作为黑木耳培养基培养出的沙棘黑木耳。利用黑木耳子实体富集活性成分的强效吸收特性,充分利用沙棘和黑木耳的营养成分,使二者的功效成分最大限度的有机整合。从而大大增强了木耳的黄铜含量,丰富了木耳的营养成分,提高了黑木耳的功能价值。沙棘黑木耳不仅具有普通木耳本身对人体的医疗保健作用,而且增强了对高血压、高血脂、高血糖及免疫力功能低下、心脑血管等疾病的预防和调节作用。
Claims (7)
1.一种双耳润肺悬浮饮料,其特征在于:由原料按以下重量份数制备而成,黑木耳粒0.4-0.6份、银耳粒0.4-0.6份、枸杞粒0.7-0.9份、山楂浓缩汁9-11份、蜜环菌提取液3-5份、牛肝菌提取液9-11份、双孢菇提取液11-13份、榆黄蘑提取液2-4份、黄瓜提取液7-9份、冰糖0.5-1.5份、柠檬酸0.24-0.28份、柠檬酸钠0.1-0.2份、白砂糖6-10份、果葡糖浆3-5份、稳定剂0.45份、纯净水227.47-247.21份。
2.根据权利要求1所述的一种双耳润肺悬浮饮料,其特征在于:原料按优选重量份数:黑木耳粒0.45-0.55份、银耳粒0.45-0.55份、枸杞粒0.75-0.85份、山楂浓缩汁9.5-10.5份、蜜环菌提取液3.5-4.5份、牛肝菌提取液9.5-10.5份、双孢菇提取液11.5-12.5份、榆黄蘑提取液2.5-3.5份、黄瓜提取液7.5-8.5份、冰糖0.8-1.2份、柠檬酸0.25-0.27份、柠檬酸钠0.14-0.16份、白砂糖7-9份、果葡糖浆3.5-4.5份、稳定剂0.45份、纯净水232.47-242.21份。

5.根据权利要求1-4任意一项所述的一种双耳润肺悬浮饮料,其特征在于:其制备方法的步骤为:
步骤1、原料预处理:
(1)挑选大小均匀、无腐烂变质的优质黑木耳、银耳,挑选新鲜、饱满、干燥、无霉烂、香气浓郁的枸杞,洗净并除杂,沥干水分,按重量份数称量;取称量后的黑木耳、银耳、枸杞,分别置于粗粉碎机中,打碎,备用;
(2)选取优质的蜜环菌、牛肝菌、双孢菇、榆黄蘑、黄瓜,洗净并除杂,沥干水分;
取蜜环菌,粉碎后采用超声辅助提取的方法进行提取,料液比为1:10,温度为77℃,提取时间为22min,得蜜环菌提取液,备用;
取牛肝菌,粉碎后采用水浴提取法进行提取,料液比为1:30,温度为100℃,提取时间为4h,离心分离,得牛肝菌提取液,备用;
取双孢菇,粉碎后采用水浴提取法进行提取,料液比为1:31,温度为70℃,提取时间为125min,离心分离,得双孢菇提取液,备用;
取榆黄蘑,粉碎后采用水浴提取法进行提取,料液比为1:20,温度为100℃,提取时间为2h,离心分离,得榆黄蘑提取液;备用;
取黄瓜,粉碎后采用微波辅助提取法进行提取,料液比为1:20,功率为600W,提取时间为25min,离心分离,得黄瓜提取液;备用;
步骤2、称量:
(1)取打碎后的黑木耳、银耳、枸杞,挑选大小均匀的原材料,按重量份数称量,备用;
(2)取提取后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,按重量份数称量,备用;
步骤3、调配清汁:按重量份数,称取白糖、山楂浓缩汁、果葡糖浆、冰糖、柠檬酸、柠檬酸钠、羧甲基纤维素钠、卡拉胶、黄原胶,按顺序加入至纯净水中,混合搅拌均匀,制得清汁;
步骤4、初混:取称量后的蜜环菌提取液、牛肝菌提取液、双孢菇提取液、榆黄蘑提取液、黄瓜提取液,依次加入至调配好的清汁中,混合搅拌均匀,得初混溶液,备用;
步骤5、总混:取称量后的黑木耳、银耳、枸杞,加入至调配好的初混溶液中,混合搅拌均匀,得总混溶液;
步骤6、杀菌:取总混溶液,在95℃的水浴中杀菌2h,杀菌后分段冷却,冷却后灌装成品,制得一种双耳润肺悬浮饮料。
6.根据权利要求1或2或3或5任意一项所述的一种双耳润肺悬浮饮料,其特征在于:所述黑木耳为沙棘黑木耳。
7.根据权利要求1或2或3或5任意一项所述的一种双耳润肺悬浮饮料,其特征在于:所述的枸杞为宁夏枸杞。
