本发明公开一种有助于开胃健脾的部分发酵甘草枸杞汁液,其特征在于,包括以下重量份组分:枸杞40-50、甘草10-12、大枣10-14、党参5-6、白术2-3、酸枣10-14、丹皮3-4、陈皮2-3、纤维素酶0.1-0.14、茶油1.2-1.6、山梨酸0.2-0.4、结冷胶0.1-0.12、酵母菌0.1-0.12。本发明采用软冷冻技术进行软冷冻球磨和软冷冻液的冰水混合物发酵,实现了低温发酵;另外,本发明在发酵后期重新泵如软冷冻原料,控制了低温发酵和部分发酵,降低了酒精度,增加了汁液的营养和风味物质,同时,本发明采用大量枸杞、大枣、酸枣结合各种重要配伍,具有开胃健脾之功效。

本发明属于枸杞深加工领域,具体涉及一种有助于开胃健脾的部分发酵甘草枸杞汁液及其制备方法。
背景技术
枸杞全身是宝,根、叶、花、茎、蒂都有保健价值,正如人们所说的“根茎与花实,收拾无弃物”,枸杞果又叫“仙地果”,性甘、平,归肝肾经,有滋补肝肾、养肝明目的功效,可入药或者泡茶、泡酒、炖汤;枸杞叶又叫“天精草”,性凉,解渴生津,养阴清火,可用于烧菜、熬汤、包饺子、蒸包子、蒸面、拌菜等,也可以制作枸杞茶饮用;花叫“产生草”,富含多种氨基酸;根叫“地骨皮”,可用于治疗虚热、肺热、骨潮热、盗汗等,它们均有滋补强身功效,加强枸杞的综合开发具有重要的意义和价值,对枸杞果涞水,除具有良好的医疗保健作用外,还含有丰富的蛋白质、脂肪、碳水化合物、类胡萝卜素、抗坏血酸、甜菜碱、枸杞多糖以及钙磷铁锌等多种营养成分,是一种不可多得的药食兼用植物资源。由于鲜枸杞成熟后极易腐烂,采下后需要即行处理,现在一般的都是先将其制干,在做它用,这使得枸杞的利用收到一定程度的限制;同时,干枸杞对储存条件的要求较高,适合在干燥、冷凉、通风的环境中保存,条件不合适,极容吸潮、结块、流糖、褐变、虫蛀,使产品质量快速下降。现在市场上通常都加工成汁液便于保存和运输,同时,还可以经过后期在处理做成营养保健品,枸杞直接做成枸杞汁液需要经历过打浆、过滤、浓缩等一系列工艺,在此基础上在结合其他工艺实现枸杞汁液的深度综合开发利用。
发明内容
本发明针对枸杞汁液及其深度综合开发利用发展需求,提出一种有助于开胃健脾的部分发酵甘草枸杞汁液及其制备方法。
本发明采用的技术方案如下:
一种有助于开胃健脾的部分发酵甘草枸杞汁液,其特征在于,包括以下重量份组分:枸杞40-50、甘草10-12、大枣10-14、党参5-6、白术2-3、酸枣10-14、丹皮3-4、陈皮2-3、焦麦芽2-3、焦谷芽2-3、纤维素酶0.1-0.14、茶油1.2-1.6、山梨酸0.2-0.4、结冷胶0.1-0.12、酵母菌0.1-0.12、适量的水和适量的冰水混合物。
一种有助于开胃健脾的部分发酵甘草枸杞汁液制备方法,其特征在于,包括以下步骤:
(1)取枸杞、甘草、大枣、党参、白术、酸枣、丹皮、陈皮、焦麦芽、焦谷芽混合,并加入总重量12-14倍的水放入高压锅中低压0.3~0.4Mpa低温19℃焖煮4-5h,之后冷却过滤得滤液和滤渣,取滤渣放入冷冻室中-7~-6℃条件下软冷冻6.5~7.5h,取出之后放入球磨机中低速球磨3~4h,得物料备用;
(2)取步骤(1)所得物料放入罐体中,之后加入纤维素酶,并加入总重量4-5倍的水分恒温89℃搅拌酶解30-40min,之后以4250-4650r/min离心分离5-6min分离得浆汁和浆渣;
(3)取浆渣再次放入冷冻室中-5~-3℃条件下软冷冻3-4h,放入发酵罐中,接入活化的酵母菌,先加入总重量3-4倍的冰水混合物,在密闭氮气环境下6-10℃条件下发酵13-15d,取步骤(1)所得滤液和步骤(2)所得浆汁放入冷冻室中-3~0℃条件下软冷冻32-40h,之后通过泵泵入发酵罐中,8-10℃条件下发酵7-8d,之后进行1-2次纳孔膜过滤得发酵汁和发酵渣;
(4)取发酵汁和茶油混合,并恒温38℃条件下搅拌均匀45-55min,之后以4150-4500r/min离心分离4-8min,分离上清液得发酵甘草枸杞汁液;
(5)取发酵甘草枸杞汁液,加入山梨酸、结冷胶搅拌均匀,之后放入密闭浓缩罐中浓缩,浓缩温度保持在75℃左右,真空度91-93kPa,测得锅内浓缩汁浓度达到64°Bx时,完成浓缩得浓缩液;
(6)取浓缩液在95℃进行巴氏杀菌3min,灌装即得。
本发明的有益效果体现在:
本发明采用软冷冻技术进行软冷冻球磨和软冷冻液的冰水混合物发酵,实现了低温发酵,保证了原料中营养物质的完整性和活性物质的搞生物活性;另外,本发明在发酵后期重新泵如软冷冻原料,控制了低温发酵和部分发酵,降低了酒精度,增加了汁液的营养和风味物质,同时,本发明采用大量枸杞、大枣、酸枣结合各种中药配伍,具有开胃健脾之功效。
